SPICED HONEY-GLAZED NUTS

Steps:
- Position a rack in the center of the oven and preheat the oven to 350.
- Spread the nuts on a large rimmed baking sheet. Bake just until the nuts are warm to the touch, about 3 minutes. Remove baking sheet from oven. Drizzle nuts with honey and corn syrup, and mix well. Continue baking, stirring often with oiled spatula (I used Pam) until the liquid has evaporated into a glaze, about 10-12 minutes.
- Mix the sugar, salt, cumin, chili powder and cayenne pepper in a large bowl. Add the nuts and mix well to coat them with the spiced sugar. Transfer to a clean baking sheet to cool, breaking up the nuts that may have stuck together. They will crisp as they cool.
- Store in airtight container at room temp for up to one week.
HONEY GLAZED NUTS
Steps:
- Preheat oven to 375 degrees.
- Toss all the ingredients together. Transfer almonds to a greased baking sheet. Bake for 25 to 30 minutes until lightly toasted, stirring occasionally. Cool. Store in an airtight container.

CANDIED WALNUTS
Super easy to make and incredibly delicious, these Candied Walnuts are glazed with honey and have a touch of butteriness.

- Prepare a sheet of parchement paper or lightly spray a silcone baking mat. Set aside.
- Preheat a large frying pan over med/high heat. Add butter, walnuts, salt and honey. Stirring consistently, cook until nuts have toasted and honey has caramelized, about 3 minutes.
- Transfer hot nuts onto parchment or baking mat. Spread evenly to let cool. When nuts have cooled to room temperature and are slightly tacky seperate nuts to avoid sticking together. Store in an airtight container once nuts have fully cooled and are no longer tacky.

ORANGE HONEY GLAZED HAZELNUTS
Steps:
- Heat the oven to 375 degrees F. Grease a cookie sheet or line it with waxed paper or a nonstick baking mat. Toss all of the ingredients together in a bowl and turn out onto the prepared pan, spreading out the hazelnuts so they do not touch. Bake until lightly toasted, stirring occasionally to prevent sticking. Check at 15 minutes then let bake for another 5 to 10 minutes. Loosen the hazelnuts from the bottom of the pan with a spatula and cool in the pan at room temperature; store in airtight container.
GLAZED NUTS
These are so fast and easy to make and look so pretty in a nice candy dish. This recipe only makes 1/2 pound (the program will not allow me a 1/2 so I put 1 pound...please ignore) so prepare to make a couple batches. They will go very fast.

- Cook over med heat, stirring constantly until sugar is melted and golden in color and nuts are toasted (about 7 minutes).

We served these at a wedding reception that we had for a couple of staff members who never had a ceremony, they only went to the courthouse. This happened about 5 years ago but I forgot about these little tidbits! Used these with my Cranberry-Chutney Brie Appetizers and they turned out great!

- To toast nuts, heat and stir over medium heat till toasted.
- Or carefully heat in the microwave for a few minutes.
- Nuts tend to burn easily so toast with caution and stir and turn frequently.
- Then stir nuts with remainder of ingredients and mix well.
