There's nothing quite like the classic iced oatmeal cookie, but when you add in toffee bits and apples, things get even better. To top these treats, drizzle each with a sweet cinnamon sugar glaze. Now that's what I call oatmeal cookie heaven. -Colleen Delawder, Herndon, Virginia

1 cup unsalted butter, softened
2/3 cup sugar
2/3 cup packed light brown sugar
2 large eggs, room temperature
3 teaspoons vanilla extract
2 cups all-purpose flour
2 cups quick-cooking oats
2-1/2 teaspoons ground cinnamon
1 teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon baking powder
2 medium apples, finely chopped
1 cup brickle toffee bits
ICING:
2 cups confectioners' sugar
3 tablespoons heavy whipping cream
2 tablespoons water
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, oats, cinnamon, kosher salt, baking soda and baking powder; gradually beat into creamed mixture. Fold in apples and toffee bits., Drop dough by tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake until golden brown, 10-12 minutes. Cool on pans 2 minutes before removing to wire racks to cool completely. Combine icing ingredients; drizzle over cooled cookies. Let stand until set.

1 1/2 cups all-purpose flour
1 1/2 cups old fashioned oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup dried apple, finely chopped
1/2 cup apple cider
3/4 cup sugar
3/4 cup packed brown sugar
6 tablespoons butter, softened
2 teaspoons vanilla
1 egg
3/4 cup toffee brickle bits or 3/4 cup caramel, bits

Steps:

  • Preheat oven to 350 degrees.
  • Place dried apples in a small bowl with the cider. Stir and let sit to rehydrate for 10-15 minutes.
  • Measure flour, oats, baking powder, baking soda and salt into a bowl. Whisk to combine.
  • Cream butter and sugar until light and fluffy. Add apples, cider, vanilla and egg and beat until combined.
  • Gradually add flour mixture and beat on low until combined. Fold in toffee bits.
  • Place 2 inches apart on parchment paper lined cookie sheets. Bake for 10 to 12 minutes. They will appear somewhat undercooked when ready. Slide paper onto cooling racks. Let cool completely before removing from paper.

Whole wheat flour is an often overlooked baking ingredient in many kitchens. However, it is a great substitute for traditional flour in many recipes, like this one for oatmeal cookies. 1 1/4 cups whole wheat flour
3/4 teaspoon baking powder
3/4 teaspoon salt
2 teaspoons cinnamon
1 1/2 cups old fashioned oats
3/4 cup butter (softened, or substitute butter-flavored Crisco, for all, or part of the butter)
1 cup light brown sugar
1 large egg
1 1/2 teaspoons vanilla extract
1/2 cup chocolate-covered toffee pieces (Skor bits, Heath bits, or crushed Skor or Heath candy bars!)
3/4 cup almonds (toasted and chopped)

Steps:

  • Preheat oven to 350°F Line baking sheets with parchment paper or silicone liners.
  • In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. Stir in oats. Set aside.
  • In a large bowl, beat butter and brown sugar until fluffy. Add egg and vanilla, and mix well. Gradually add flour mixture, beating just until combined. Stir in toffee chips and almonds.
  • Drop dough by tablespoons onto prepared baking sheets. Bake 12-15 minutes or until lightly browned. Cool on baking sheets for 2-3 minutes. Then, remove cookies to wire racks to cool completely.

Oatmeal Butterscotch Toffee-Crisp Cookies image

These cookies are to die for!! I promise and so do all my friends, family and co-workers. I was looking for a thin crispy oatmeal cookie. I found a number of nice recipes and took ideas from many of them. On the third attempt, this is the recipe I came up with. Special notes, you MUST use parchment paper to bake the cookies on. If you don't they will stick to the pan and break (even if you grease the pan). The batter gets thicker as you add ingredients. I add the rice cereal last, so that they are crushed as little as possible. I have tried using more and less flour. Less flour and the cookies don't form. More flour and they don't get crispy. A special thanks to PanNan, who's Crispy Coconut-Oatmeal Cookies gave me the recipe's basic foundation.

1 cup unsalted butter, room temperature
1 cup sugar
1 cup firmly packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 teaspoon nutmeg, fresh grated
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups rolled oats, uncooked
2/3 cup chocolate-covered english toffee bar, crushed into small pieces (3 Skor Bars)
1 1/2 cups butterscotch chips
1 1/2 cups crisp rice cereal (Rice Krispies)

Steps:

  • Beat butter and sugars at medium speed with an electric mixer until blended; add eggs, vanilla and almond extract, beating well.
  • In a separate bowl, combine flour, baking soda, salt and nutmeg; add to butter mixture, mixing well.
  • Stir in oats.
  • Stir in toffee bar pieces (don't use the "toffee dust" that comes from crushing the bars, just the small pieces).
  • Mix in butterscotch chips. The batter will be very thick at this point.
  • Gently but thouroughly mix in rice cereal.
  • Shape into 1-inch balls and place on a cookie sheet covered in parchment paper. (You do not need to flatten the cookies, they spread on their own). I only place 6 cookies on each cookie sheet.
  • Bake at 350° for 12 minutes.
  • Gently slide the cookies off of the parchment paper onto wire racks to cool.

½ cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups rolled oats
1 cup all-purpose flour

2 cups toffee baking bits

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line cookie sheets with parchment paper.
  • In a medium bowl, cream together the butter and brown sugar. Stir in the egg and vanilla until smooth. Sift together the flour, salt and baking soda, stir into the creamed mixture. Then stir in the rolled oats. Finally, stir in the pecans chopped candy bar pieces.
  • Drop dough by rounded tablespoons onto the prepared cookie sheets, and flatten slightly. Bake for 10 to 18 minutes in the preheated oven. Cookies will have a dry appearance when finished baking.

3/4 cup butter or margarine, softened
1 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon vanilla
2 eggs
1 3/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda

1/2 teaspoon salt
2 cups old-fashioned or quick-cooking oats
1 medium apple, peeled and shredded (about 1 cup shredded)
1 cup powdered sugar
2 to 3 tablespoons apple juice or milk

Steps:

  • Heat oven to 375°F. Spray cookie sheet with cooking spray. In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed until creamy. Beat in vanilla and eggs, scraping sides occasionally, until blended.
  • In medium bowl, mix flour, baking soda, cinnamon and salt. Gradually beat flour mixture into sugar mixture. Stir in oats and apple. Onto cookie sheet, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake about 10 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.
  • In medium bowl, beat powdered sugar and apple juice until smooth, using wire whisk or fork. Drizzle over cooled cookies on cooling rack. Let stand about 1 hour or until glaze is set.
