QUICK AND SIMPLE STIR-FRIED KALE AND BACON
This is a super quick, one-pan recipe that makes for a delicious side dish!

Steps:
- Wash your kale. Rip off the leaves from the stem and chop 'em. Assemble the rest of your ingredients.
- Sauté the bacon bits in a large cast iron skillet over medium heat. Once they're crisped up, add in the kale leaves with a dash of salt and pepper.
- Stir the kale and bacon for a couple of minutes, just until the kale leaves wilt. Then splash on some vinegar. That's it!

BACON FRIED KALE (PALEO)
This has become my families favorite fast food. We buy sugar free bacon ends in 1 pound packages from US Wellness meats online, and then we only use a 1/2 pound at a meal for frugality. But it is plenty for this recipe :)

Steps:
- Chop bacon into very small bite-size pieces (1/2 inch diameter) Cook over medium heat in a large skillet.
- Chop onions, garlic, ginger and add to the bacon when it is about half-way cooked.
- Add chopped carrot, celery, and shredded sweet potato one at a time stirring after each addition.
- Continue to cook and stir, scraping the bottom of the pan to keep the sweet potato from sticking- until the carrot begins to soften. If there is not enough bacon grease you may need to add some coconut or grapeseed oil.
- Add chopped kale, let it steam on top of the mixtures while you add your spices, and nuts, seeds, and fruit, a few minutes, then begin to stir it into the mixture in the pan. Work slowly so that the kale doesn't flip out of the pan as you stir. The kale will wilt more and more as it becomes covered with the oils.
- When the kale is all wilted and everything is mixed well its done. Serve hot.

- In a large saucepan, bring 1 in. of water to a boil. Add kale; cook for 10-15 minutes or until tender. Meanwhile, in a large nonstick skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 teaspoon drippings. In the drippings, saute onions and garlic until onion is tender. , Drain the kale; stir into onion mixture. Add the salt, pepper and reserved bacon; heat through.

- Preheat your oven to 450 degrees, peel and dice your carrots. In a large bowl, toss carrots with cooking fat, salt, pepper and paprika and spread out in a single layer on a large parchment lined baking sheet.
- Roast in the preheated oven for 15-20 mins until soft and browning, meanwhile cook your bacon and kale.
- While the carrots roast, cut the bacon into bite size pieces and preheat a large deep skillet over medium high heat. Add the bacon and cook, stirring to evenly brown.
- Once the bacon is 3/4 of the way done, drain all but one tbsp of the bacon fat (you can save for another use if you want) and add the chopped kale to the skillet, stirring to coat, add a sprinkle of sea salt to taste.

- Heat a large skillet over medium high heat. Cut the bacon into bite size pieces and add to the skillet. Cook until crisp, stirring for even browning. Once crisp, remove with a slotted spoon to drain on paper towel. Lower the heat to medium.
- Reserve 2 Tbsp of bacon fat and discard the rest. Add kale to the skillet in batches, sprinkle with the water or broth and cover the skillet with a lid. Cook 2 minutes or until kale has wilted.
- Once wilted, remove lid and cook, stirring, for another minute. Push kale to the side and add the almonds to the skillet to toast.
- Sprinkle the almonds and kale with sea salt and pepper to taste, then stir together. Add the bacon back and continue to cook another 30 seconds until almonds are toasty brown.
