4 boneless pork chops, 1" thick
½ cup parmesan cheese, grated
¼ cup Italian seasoned dry bread crumbs
½ tsp dried parsley
½ tsp black pepper
½ tsp garlic powder
olive oil

Steps:

  • * If brining the pork chops: place the 4 tablespoons of salt into a shallow dish big enough to fit the chops in a single layer. Add boiling water. Stir to dissolve salt. Add cold water. Stir. Add pork chops. Cover and refrigerate for 30 minutes to 4 hours.
  • Preheat oven to 400 degrees.
  • Combine bread crumbs, seasoning and parmesan cheese on a plate.
  • Pat dry each chop with paper towels and rub each with olive oil and dredge in the coating.
  • Press the mixture over the pork chops to make sure they are well covered in it.
  • Heat a large (oven safe) skillet over high heat.
  • Pour olive oil to coat. Add pork chops to the pan and cook for 3- 4 minutes, until golden brown on one side.
  • Flip the pork chops, and immediately place the skillet in the oven. Cook for 15-20 minutes.
  • Chops will get browned, but You can also finish them off under the broiler for a minute or two to get them extra browned on top.
  • Serve immediately with a veggie like these delicious fresh broccoli that I steamed.

Lemon wedges, for serving

Steps:

  • Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate. Place the cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. Coat the chops completely with the cheese, patting to adhere. Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere.
  • Heat 3 tablespoons of oil in a very large skillet over medium heat. Add pork chops, in batches if necessary, and cook until golden brown and the center reaches 150 degrees, about 6 minutes per side. Transfer the chops to plates and serve with lemon wedges.

4 pork chops (bone-in or boneless 1/2-inch thick Center-cut loin )
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried rubbed sage
1/2 teaspoon dried thyme
3/4 cup parmesan cheese, freshly grated
2 eggs
1 tablespoon vegetable oil
1 cup seasoned bread crumbs
olive oil
4 garlic cloves, chopped

Steps:

  • Spread Parmesan cheese in a shallow dish. Beat eggs with 1 tablespoon vegetable oil in another shallow dish. Spread bread crumbs in a third shallow dish.
  • Pat the pork chops dry with paper towels. Combine salt, pepper, sage, and thyme, and sprinkle generously over both sides of chops, pressing seasonings into meat with your fingers.
  • Bread pork chops one at a time. Dredge seasoned chops in Parmesan cheese, coating both sides completely, patting to adhere. Then, using tongs, carefully dip both sides of chops in egg mixture, letting excess drip back into dish to ensure thin coating. Finally, dip both sides of chops in bread crumbs, pressing crumbs with fingers to form an even, cohesive coating.
  • Place breaded chops on wire rack set over baking sheet, allow coating to dry for about 5 minutes. (The recipe can be done ahead to this point; cover chops loosely with wax paper and refrigerate for up to one hour.).
  • Heat a large heavy-bottomed skillet over medium-low heat with enough olive oil to come halfway up the sides of the chops, about 1/4 cup. To flavor oil; stir in garlic, and cook until lightly browned. Remove garlic from skillet and discard or reserve for other uses. Increase heat to medium. When oil shimmers, add chops and fry 4 to 5 minutes on each side, until golden brown and crispy, or to an internal temperature between 150 and 160 degrees F.
  • Drain on rack set over baking sheet, then transfer to a warm serving platter.

1 pound frozen Tater Tots
2 tablespoons grated parmesan cheese
Kosher salt and freshly ground pepper
12 ounces green beans, trimmed and halved
4 tablespoons unsalted butter
Finely grated zest and juice of 1 lemon
2 tablespoons extra-virgin olive oil
4 3/4-inch-thick boneless center-cut pork chops (1 1/2 pounds)
3 cloves garlic, finely chopped
1/2 cup low-sodium chicken broth

Steps:

  • Bake the Tater Tots as the label directs. Transfer to a bowl; add the parmesan, season with salt and pepper and toss. Set aside.
  • Meanwhile, bring a medium pot of salted water to a boil. Add the green beans and cook until tender, about 5 minutes. Drain and transfer to a medium bowl; toss with 1 tablespoon butter, the lemon zest, and salt and pepper to taste. Cover to keep warm.
  • Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper; add to the skillet and cook until browned, about 4 minutes per side. Transfer to a plate and let rest.
  • Add the garlic to the skillet and cook until lightly browned, about 30 seconds. Add the lemon juice and chicken broth; cook until reduced by half, about 3 minutes. Swirl in the remaining 3 tablespoons butter. Spoon the pan sauce over the pork chops and serve with the Tater Tots and green beans.

4 pork chops (1/2 inch thick, either bone in or boneless)
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon dried rubbed sage

Steps:

  • Beat eggs with the 1 tbls of olive oil in a separate shallow dish.
  • Spread bread crumbs in third shallow dish, pat pork chops dry with paper towel and set aside.
  • Combine salt, pepper, sage, thyme, and sprinkle generously over both sides of the chops. Press seasoning into meat with your fingers.
  • Dredge seasoned chops in parmesan cheese, coating both sides. Then using tongs dip chops in egg mixture and let excess drip off. Finally dip coated chops in bread crumbs. Press with fingers to ensure even coating.
  • Place breaded chops on wire rack set over a baking sheet to allow coating to dry for about 5 minutes.
  • Heat large skillet over medium-low heat with enough oil to come halfway up sides of chops. Stir in garlic and cook until lightly browned to season oil. Remove garlic and discard.
  • Increase heat to medium. Once oil is hot add chops and fry about 4-6 minutes on each side or until golden brown and crispy.
  • To keep crust in tact, drain any excess oil by placing chops on wire rack again.

1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup milk
2 tablespoons Dijon mustard

1 1/2 teaspoons jarred minced garlic
3/4 cup whipping cream
1/3 cup white wine or 1/3 cup chicken broth
