2 medium apples (peeled and sliced)
¾ cup brown sugar
4 tablespoons butter
½ teaspoon vanilla (divided )
1 teaspoon cinnamon (divided)
6-8 slices white bread
2 eggs (lightly beaten)
½ cup milk
1/3 cup (flour)
optional: powdered sugar

Steps:

  • Add apple slices, brown sugar, and butter in a medium sauce pan. Cook over medium high heat until brown sugar has dissolved and butter has melted. Add 1/4 teaspoon vanilla and 1/2 teaspoon cinnamon and reduce heat to simmer. Cook 6-8 minutes longer. Remove from heat and allow to cool slightly and thicken while you prepare toast.
  • In a large, wide bowl whisk together eggs, vanilla, milk, and cinnamon. Stir in flour and whisk until smooth. Completely submerge one slice of bread in the mixture, careful to coat both sides. Lift the bread out of the liquid and allow to drip off excess.
  • Cook toast in a large pan over medium heat 1-2 minutes until lightly browned, then flip and cook other side 1-2 minutes. Repeat with remaining bread slices. Generously top toasts with apple-cinnamon mixture. Sprinkle with powdered sugar if desired.

12 oz french bread, a day old
2 granny smith apples, peeled
1 cup brown sugar
2 teaspoons cornstarch
6 eggs
2 cups milk
1 teaspoon vanilla
1 teaspoon cinnamon
¼ cup maple syrup
powdered sugar, to taste
whipped cream, to taste

Steps:

  • Cut the bread into 1-inch (2 ½ cm) cubes.
  • Dice peeled apples into small bite-size pieces.
  • Preheat the oven to 350˚F (180˚C).
  • In a medium bowl, mix together the bread, apples, sugar, and cornstarch.
  • In a separate bowl, whisk together the eggs, milk, vanilla, and cinnamon.
  • Pour egg mixture into the bread bowl.
  • Give the ingredients a good stir, then pour into a 9x13-inch (33 cm X 23 cm) greased baking tray.
  • Drizzle with maple syrup.
  • Bake for 45 minutes or until golden brown.

1 dash cinnamon
¼ teaspoon nutmeg
1 ¼ cups unsweetened apple juice
1 apple - peeled, cored and thinly sliced
2 slices whole wheat bread

2 teaspoons light brown sugar

Steps:

  • In a small saucepan, combine cornstarch, cinnamon, nutmeg, and apple juice; whisk until well blended. Bring to a boil, reduce to a simmer. Cook and stir for 5 minutes, or until slightly thickened. Store in an air tight container in the refrigerator until ready to use.
  • Preheat oven to 500 degrees F (260 degrees C).

5 1/2-6 cups all-purpose flour
1 (1/4 ounce) package active dry yeast
1 cup milk
3 tablespoons granulated sugar
3 tablespoons butter
3/4 teaspoon salt
2 eggs
1 cup shredded apple
1 1/2 cups finely chopped peeled apples
1/2 cup finely chopped walnuts or 1/2 cup pecans, toasted
1/2 cup packed brown sugar
2 teaspoons ground cinnamon
2 tablespoons butter, softened
1 slightly beaten egg white
1 tablespoon water
coarse sugar

Steps:

  • In a large mixing bowl combine 2 cups of the flour and the yeast; set aside.
  • In a saucepan heat and stir milk, granulated sugar, the 3 tablespoons butter, and the salt until warm (120° to 130°) and until butter almost melts.
  • Add milk mixture to dry mixture along with eggs.
  • Beat with an electric mixer on low to medium speed for 30 seconds, scraping side of bowl constantly.
  • Then beat on high speed 3 minutes.
  • Stir in shredded apple.
  • Using a wooden spoon, stir in as much remaining flour as you can.
  • Turn dough out onto a lightly floured surface.
  • Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).
  • Shape into a ball. Place in lightly greased bowl, turning once to grease surface.
  • Cover; let rise in a warm place until double (about 1 hour. Punch dough down.
  • Turn dough out onto a lightly floured surface. Divide in half Cover; let rest 10 minutes.
  • Lightly grease two 8x4x2- or 9x5x3-inch loaf pans.
  • Meanwhile, for filling, in a medium mixing bowl combine chopped apple, nuts, brown sugar, and cinnamon; set aside.
  • Roll half of the dough to a 14x9-inch rectangle. Spread with 1 tablespoon of the softened butter; sprinkle with half of the filling.
  • Beginning at both short ends, roll each end up, jelly-roll style, to center.
  • Place loaf, rolled side up, in a prepared loaf pan. For second loaf, repeat with remaining dough, remaining butter, and remaining filling.
  • Cover, let rise until almost double in size (about 30 minutes).
  • Stir together egg white and water. Brush egg white mixture over tops of loaves; sprinkle with coarse sugar.
  • Bake in a 375° oven for 30 to 40 minutes or until bread sounds hollow when you tap tops (if necessary, loosely cover with foil for the last 15 minutes of baking to prevent overbrowning).
  • Immediately remove from pans. Cool on wire racks.

3/4 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon

1 cup sugar, divided
1 teaspoon sugar, divided
1/2 cup vegetable oil
2 eggs, beaten
1 teaspoon vanilla
2 cups apples, peeled and coarsely chopped
1/2 cup walnuts, chopped (optional)

Steps:

  • Mix together first 5 ingredients. Set aside.
  • Mix 1 cup sugar with oil in large bowl. Stir in eggs and vanilla, then apples and nuts, if using. Stir in dry flour ingredients.
  • Pour into greased loaf pan.
  • Bake at 325 F for 50 to 60 minutes.
  • After bread has baked for 20 minutes, remove from oven and sprinkle with 1 teaspoon sugar. Return to oven and finish baking.
  • Do not undercook. Requires frequent toothpick testing at the end. Many variables seem to affect final doneness.
  • Let cool in pan.
  • Note: I made 2 mini loaves and baked them for 45 minutes.

10 slices day-old French bread (3/4 inch thick)
6 large eggs, lightly beaten
2-3/4 cups whole milk
2/3 cup sugar, divided
1 tablespoon vanilla extract
4 medium apples, peeled and thinly sliced
2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1 tablespoon butter or margarine

Steps:

  • Place bread in a 13-in. x 9-in. baking dish. Combine eggs, milk, 1/3 cup sugar and vanilla; pour half over bread. Top with half of the apples. Combine cinnamon, nutmeg and remaining sugar; sprinkle half over apples. Top with the remaining apples. Pour remaining egg mixture over apples and sprinkle with remaining sugar mixture. We made this for Christmas morning this year (2009). My mother found the recipe in her local paper -- The Daily Breeze in Redondo Beach, CA. When I made it, I added in not just the apples, but all the liquid -- as a result the dish was more like bread pudding than french toast ... it was still great, and I'd make it that way again. But if you'd like a drier texture, don't add the apple liquid. I also swapped out the cinnamon and nutmeg for two teaspoons of Recipe #45672 .

1/2 cup light brown sugar, packed
1 1/2 teaspoons cinnamon, ground
1/2 teaspoon nutmeg, ground
8 slices white bread (use Texas toast, that REALLY thick white bread)
8 eggs
1/2 cup granulated sugar
3 1/2 cups milk (original recipe calls for whole milk, I used 2%)
1 tablespoon vanilla (use the very best! Use Penzey's!)
6 apples (used a variety ( Jonagold, McIntosh, your favorites)
2 tablespoons unsalted butter (plus more to grease pan)

Steps:

  • Peel, core and cut apples into 1/4" thick slices. Heat butter in a saute pan until foamy; add apples and cook until tender (about 10 minutes).
  • Turn off heat and stir in brown sugar, cinnamon and nutmeg. Set aside.
  • Toast bread. Cut slices in half on the diagonal, making triangles.
  • Butter a 13x9 baking dish and arrange bread triangles in 2 rows, overlapping. (There was no photo for this, and I couldn't figure out the best way to do it -- I ended up with an arrangement that looked like two Flying Geese quilt borders, going opposite directions.).
  • Beat eggs in a medium bowl; add sugar, milk and vanilla and beat well. Pour custard mixture over bread. Spoon apples over top. Cover and refrigerate over night.
  • The next morning, heat oven to 350. Uncover baking dish and bake 60 minutes, until custard is set and doesn't shimmy when you tap it.
  • Let dish rest for 10 minutes when you take it out of oven. The original recipe says to serve in squares -- hah! Serve by spoonful; there wasn't any chance that I was going to get this out of the pan in nice, neat squares. Serve with honey butter, maple syrup, or nothing -- it's quite sweet, and the apples create a lovely topping.

  • Remove from oven and let stand 10 min, then cut into squares.
  • Invert pan onto serving tray so apple filling is on top.
  • Serve hot.
