Steps:

  • Directions step 1 ingredients instructions Preheat oven to 350 degrees F. step 2 ingredients instructions Butter a 9-inch spring form pan on the bottom and sides. Line the pan with a 3×30 inch strip of parchment. Place the springform pan in the center of a large piece of aluminum foil and wrap the bottom of the pan to prevent leakage. step 3 ingredients 6 tablespoons Butter 40 Vanilla Wafer Cookies instructions Melt butter and set aside. Place the vanilla wafers in a food processor and pulse until smooth. Add the melted butter and pulse until incorporated. Press the crumb mixture into the bottom of the prepared spring form pan. Use a dry cup measure to help to evenly press the crumbs. step 4 ingredients instructions Place the pan into the oven and bake for 8 minutes. Remove and allow to cool completely. step 5 ingredients 24 ounces Cream Cheese (room temperature) 3/4 cup Granulated Sugar 3 large Eggs (room temperature) 2/3 cup ripe Bananas (mashed; about 2 medium bananas) 1/4 cup Milk (room temperature) 2 teaspoons Vanilla Extract instructions Using an electric mixer, beat the cream cheese and sugar together for 3 minutes. Add one egg at a time making sure the egg is fully incorporated before adding the next. Add the banana, milk and vanilla and beat just until incorporated. Do not over mix. step 6 ingredients instructions Transfer the mixture to the spring form pan and wiggle gently to release any excess air. step 7 ingredients instructions Place the pan inside a roasting pan and fill the roasting pan with water until it reaches 1/2 way up the sides of the spring form. I found this recipe in Robbie's Recipe Collection (recipes.robbiehaf.com) and it is as close to the Cheesecake Factory's recipe as I have tasted.

20 vanilla cream-filled sandwich style cookies
1/4 cup margarine, melted
24 ounces cream cheese, softened
2/3 cup granulated sugar
2 tablespoons cornstarch
3 eggs
3/4 cup mashed banana
1/2 cup whipping cream
2 teaspoons vanilla extract
shredded coconut, for topping (optional)

Steps:

  • Use a blender to finely chop the cookies.
  • Add margarine and blend until they are well combines.
  • Press mixture into the bottom of a 10" springform pan and smooth it out.
  • Refrigerate the crust while you make the filling.
  • Beat cream cheese with electric mixer until creamy.
  • Beat in sugar and cornstarch followed by the eggs (one at a time).
  • Beat in bananas, whipping cream, and vanilla.
  • Pour mixture into crust.
  • Place pan on a cookie sheet and bake in a 350 degree oven for 15 minutes.
  • Reduce oven temperature to 200 degrees and bake an additional 75 minutes, or until center is almost set, adding coconut for last 20 minutes.
  • Allow to cool completely before removing rim of pan -- Before removing the pan, run warm water over a knife and slide a knife around the edge of the cake to separate the cake from the pan cleanly.
  • Refrigerate cheesecake, uncovered, at least 6 hours.

If soul food had a signature dessert, this would be it. Layers of buttery cookies, banana slices in custardy pudding, and a fluffy vanilla topper meld into a big ol' hug of a dessert. Everyone who tastes my banana pudding says, "You've taken me back!" One woman looked me right in the eye with tears in hers and told me, "It's heaven." That is why I make this. Instead of just folding banana slices into my pudding, I blend the fruit into the mix too. That double dose! Instead of the usual whipped cream topping, I make a meringue and torch the top for a campfire marshmallow effect. Yes, I did. My favorite twist? Keeping some cookies on the side so you get a buttery crunch with each bite. You can assemble the whole thing in a big ol' pan like they do for church suppers and family reunions. Sometimes, I prefer giving each person her own cup. That way, there are no kids clashing spoons to see who can scoop more, no hot mess left in the pan. There are just lots of happy folks, tasting a bit of heaven.

3/4 cup sugar
1/4 cup cornstarch
1/2 teaspoon fine salt
6 large egg yolks
1 1/2 cups whole milk
1/2 cup mashed ripe banana, plus 2 whole ripe bananas
1/2 cup half-and-half
1 vanilla bean (halved lengthwise and seeds scraped with a knife) or 2 teaspoons pure vanilla extract
1 tablespoon unsalted butter
1 cup heavy cream
6 large egg whites, at room temperature
1 cup plus 2 tablespoons sugar
1/4 teaspoon fine salt
1 tablespoon pure vanilla extract
1 tablespoon white vinegar
1/2 teaspoon banana extract
24 shortbread cookies, such as Vanilla Shortbread, recipe follows
1 ripe banana
3 cups all-purpose flour
3/4 teaspoon salt
1 1/2 cups (12 ounces) unsalted butter, at room temperature
3/4 cup sugar
1 tablespoon pure vanilla extract

Steps:

  • Make the pastry cream: Sift together the sugar, cornstarch and salt in a medium bowl. Whisk in the egg yolks until the sugar dissolves and the yolks turn pale yellow. Set aside.
  • In a blender, combine the milk, half-and-half, and mashed banana. Blend until smooth. Pour into a medium heavy-bottomed saucepan and add the vanilla bean, if using. Cook over medium heat until bubbles begin to form around the edges.
  • Set a fine-mesh sieve over the bowl of egg yolks. Ladle in the hot milk a little at a time, through the sieve, and whisk together. When the bottom of the bowl feels warm, whisk in the remaining milk.
  • Pour the mixture back into the saucepan and bring to a full boil, whisking constantly (scraping the bottom and sides of the saucepan), until the pastry cream thickens and no longer tastes chalky.
  • Strain the pastry cream through a fine-mesh sieve into a large heatproof bowl, pushing it through with a rubber spatula. Add the vanilla extract, if using, and the butter; stir until smooth. Cover with plastic wrap and press it directly onto the surface. Refrigerate until cold, about 2 hours.
  • Meanwhile, make the meringue: Put the egg whites, sugar and salt in the bowl of a stand mixer or other large heatproof bowl. Place over a large saucepan of simmering water (do not let the bowl touch the water) and whisk constantly until the sugar dissolves and an instant-read or candy thermometer registers 165 degrees F. Beat the egg whites with an electric mixer on medium-high speed until shiny, stiff peaks form, about 5 minutes. Add the vinegar, vanilla and banana extracts and whisk until the bowl no longer feels warm, scraping down the sides of the bowl as needed.
  • Finish the pastry cream: Beat the heavy cream with an electric mixer on medium-high speed until soft peaks form, about 30 seconds. Whisk one-third of the whipped cream into the chilled pastry cream to loosen it, then gently fold in the remaining whipped cream until incorporated. Cut the 2 bananas into 1/2-inch-wide chunks and gently fold into the pastry cream.
  • Break 4 of the shortbread cookies into bite-size pieces and spread in the bottom of a trifle bowl. Top with half of the banana pastry cream. Break another 4 cookies and scatter over the pastry cream. Top with the remaining pastry cream. Break another 4 cookies and scatter over the pastry cream. Top with as much of the meringue as desired and swirl decoratively into peaks. Torch the meringue, if desired. Cut the banana on the bias into 1/2-inch-thick slices. Garnish the top of the meringue, alternating the banana slices with the remaining shortbread cookies. Alternatively, break 1 shortbread cookie into the bottom of each of 8 ramekins. Divide the pastry cream among the ramekins, then top with the meringue. Garnish with cookies and banana slices. Enjoy!
  • Whisk the flour and salt in a medium bowl. Beat the butter and sugar in a stand mixer fitted with the paddle attachment on medium speed until creamy. Beat in the vanilla until incorporated.
  • Reduce the speed to low and gradually add flour mixture. Beat, scraping the bowl occasionally, until the dough comes together in large clumps.
  • Transfer the dough to a gallon-size resealable plastic freezer bag and press into a 1-inch thick, 9 by 5-inch rectangle. The bag is 9 inches wide, so you're pressing the dough to the edges. Refrigerate until firm, at least 2 hours and up to 2 days.
  • When ready to bake, preheat the oven to 350 degrees F. Line baking sheets with parchment paper.
  • Cut the dough into thirds to form rectangular logs that are 3 inches wide. Cut each log into 1/4-inch-thick slices. Place the slices on the prepared baking sheets, spacing them 1/2 inch apart.
  • Bake one sheet at a time until the edges are browned and the tops are golden, 14 to 18 minutes. Let cool completely on the sheets on wire racks. The shortbread keeps at room temperature in an airtight container for up to 2 weeks.

1/4 cup sugar
1/2 cup butter or 1/2 cup margarine, melted
1 (8 ounce) package cream cheese, softened
1/2 cup sugar
2 1/4 cups frozen whipped topping, thawed, divided
3 -4 medium bananas, sliced
1 3/4 cups cold milk
1 (3 1/2 ounce) package banana cream instant pudding

Steps:

  • In a small bowl, combine cracker crumbs and sugar; stir in butter. Set aside 1/2 cup for topping.
  • Press remaining crumb mixture onto the bottom and up the sides of a greased 9-inch springform pan or 9-inch square baking pan.
  • Bake at 350F for 5-7 minutes. Cool on wire rack.
  • In a mixing bowl, beat cream cheese and sugar until smooth. Fold in 2 cups of whipped topping.
  • Arrange half of the banana slices in crust; top with half of the cream cheese mixture. Repeat layers.
  • In a bowl, beat milk and pudding mix until smooth; fold in remaining 1/4 cup of whipped topping.
  • Pour over cream cheese layer.
  • Sprinkle with reserved crumb mixture.
  • Refrigerate for 1-2 hours or overnight.

1 (18 1/4 ounce) package white cake mix, divided
4 eggs, divided
3 tablespoons oil
2/3 cup brown sugar, packed, divided
2 bananas, sliced
2 (8 ounce) packages cream cheese, Philadelphia, Softened
2 tablespoons lemon juice
1 1/2 cups milk
1 1/2 cups whipped topping, Cool Whip, thawed

Steps:

  • Preheat oven to 300 degrees. Reserve 1 cup of the dry cake mix. Mix remaining cake mix with 1 egg, oil and 1/3 cup sugar with mixer (mixture will be crumbly). Press onto bottom and 1 inch up sides of a greased 13 x 9-inch baking pan; top with bananas.
  • Beat cream cheese and remaining sugar with mixer. Add reserved cake mix, remaining eggs and lemon juice; beat 1 minute. Blend in milk (batter will be thin). Pour into crust.
  • Bake 45 to 50 minutes or until center is almost set. Cool. Refrigerate 4 hours. Top with whipped topping, Refrigerate leftovers (if there are any).

4 eggs
3 tablespoons oil
1/3 cup packed brown sugar, plus

1 medium banana, sliced
2 (8 ounce) packages cream cheese, softened
1 1/2 cups milk
2 tablespoons lemon juice
1 envelope Dream Whip, prepared

Steps:

  • Preheat oven to 300.
  • Reserve 1 cup dry cake mix, set aside.
  • Combine remaining mix, 1 egg, oil and 1/3 cup brown sugar, until crumbly.
  • Press evenly into 13x9 greased pan on bottom and 3/4 way up the sides.
  • Arrange banana slices on crust.
  • In large mixer bowl, blend cream cheese, with 1/2 cup brown sugar.
  • Add 3 eggs and reserved cake mix.
  • Beat 1 minute at med speed.
  • At low speed, slowly add milk and lemon juice, mixing until smooth.
  • Pour into crust.
  • Bake at 300 for 45-50 minutes, til center is firm.
  • Cool.
  • Spread topping over cheesecake and chill.
  • Store refrigerated or freeze covered with foil.
