TOASTED-COCONUT GRANOLA

Steps:
- Preheat oven to 300 degrees.
- Place oats, pumpkin seeds, sunflower seeds, coconut, pecans, syrup, olive oil, sugar, and 1 teaspoon salt in a large bowl and mix until well combined. Spread granola mixture in an even layer on a rimmed baking sheet. Transfer to oven and bake, stirring every 10 minutes, until granola is toasted, about 45 minutes.
- Remove granola from oven and season with salt. Let cool completely before serving or storing in an airtight container for up to 1 month.
SUPER TOASTED GRANOLA WITH CHEWY FRUIT
Don't be afraid to toast the oats until really golden as this gives the granola a more caramelised flavour.

Steps:
- Preheat the oven to 150ºC/300ºF/gas 2 and warm the honey through in a saucepan.
- Chop up the almonds then spread over a large baking tray with the oats, seeds and coconut.
- Pour over the warm honey and mix with a spoon, then pop in the oven for 20 minutes, stirring every so often.
- Meanwhile, destone the dates and chop up with the rest of the fruit.
- After 20 minutes, add all the fruit, stir once (try not to touch again until it is cool) and put it back in the oven for another 10 minutes. It should be clumping together nicely.
- Remove from the oven and allow to cool before breaking it up and storing in jars or airtight containers for up to 1 month. Serve with yoghurt and fresh or poached seasonal fruit.

BASIC GRANOLA RECIPE
This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

- Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
- Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
- Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

TOASTED OAT AND NUT GRANOLA
Steps:
- Preheat the oven to 325 degrees F (160 degrees C).
- In a large bowl, combine the oats, nuts, coconut and brown sugar.
- In a liquid measuring cup, combine the maple syrup, oil, water and salt; stir with a fork until incorporated. Pour into the oat mixture and stir until coated.
- Divide the mixture among 2 rimmed baking sheets and bake until the granola is golden brown all over, 45 to 55 minutes, stirring every 20 minutes.
- Remove from the oven and let cool completely on wire racks. Serve or store in an airtight container for up to 2 months.
STOVETOP GRANOLA
A delicious quick and easy granola with almonds and dried cranberries that is made on the stovetop. Feel free to add your favorite dried fruits and nuts too.

Steps:
- Heat the oil in a large skillet over medium-high heat. Add oats then cook and stir until starting to brown and crisp, about 5 minutes. Remove from heat and spread out on a cookie sheet to cool.
- Melt the butter in the same pan over medium heat. Stir in the honey and brown sugar; cook, stirring constantly, until bubbly. Return the oats to the pan. Cook and stir for another 5 minutes or so. Pour out onto the cookie sheet and spread to cool.
- Once cool, transfer to an airtight container and stir in the almonds and dried cranberries. Any additional nuts and fruit can be stirred in at this time also.

- Heat oven to 350 degrees. Combine oats, flakes, sugar, nuts, zest, nutmeg, and cinnamon in a bowl. Melt butter and honey in a saucepan; add to mixture. Spread in a 7-by-11-inch baking pan; bake until just golden, 10 minutes. Let cool in pan. Mixture will harden. Break into pieces; serve. Store in an airtight container up to 10 days.
