TOASTED ALMOND
One of my favorites! Actually I think last night I may have had one too many. They taste so good, you forget what it is. And you get all the calcium you need for the day. What a drink! This is supposed to be made with half and half, but its too heavy for me, so I use low-fat milk. Ingredient amounts can be adjusted to personal preference.

TOASTED ALMOND
Ahhh...this drink goes down smooth and is sure to please! This is one of the drinks that I make most often, especially in the colder months when I am not in the mood for something fruity. I first had this drink on a cruise through the Mediterranean, and this is the closest I can come to replicating it. Both DH and I love it, as it is neither too strong or too sugary/fruity. Feel free to alter the ratios to your own enjoyment! The taste can change a lot based on how much of each liquor you add.

Steps:
- Put ice cubes into a glass (about the size of a regular drinking glass).
- Add all liquor and then top off with the mixer.
- The creams will (obviously) give you a much richer, creamier drink. DH uses almond milk because he is lactose intolerant, and the taste compliments the amaretto. It can be found in the dairy or baking section of most groceries. Milk is also okay, but it will taste thinner and weaker.
- Stir thoroughly to mix ingredients.
- Enjoy!

Steps:
- Add liqueurs to a cocktail shaker with ice. Shake and strain into a 10-ounce rocks glass over ice. Top with heavy cream and serve with a short straw.

Steps:
- Sprinkle 1 cup of the crushed cookies and 1/3 cup of the almonds on bottom of 9-inch springform pan; carefully spread half of the ice cream evenly over cookie mixture. Repeat all layers. Top with remaining crushed cookies and almonds; press into ice cream with back of spoon to secure. Cover.
- Freeze at least 4 hours.
- Remove side of pan. Cut dessert into 16 slices to serve. Store leftover dessert in freezer.

- Preheat oven to 325ºF if using a silver 9-inch springform pan (or to 300°F if using a dark nonstick 9-inch springform pan). Finely chop 1 cup of the almonds; mix with graham crumbs and butter. Press firmly onto bottom of pan. Bake 8 min; cool completely.
- Beat cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Add sour cream and liqueur; mix well. Add eggs, one at a time, beating on low speed after each addition just until blended. Pour over crust.
- Bake 50 to 55 min. or until center is almost set. Run knife or metal spatula around side of pan to loosen cake; cool before removing side of pan. Refrigerate at least 4 hours or overnight. Sprinkle with remaining 1/2 cup almonds just before serving. Store any leftover cheesecake in refrigerator.

CHOCOLATE TOASTED ALMOND TORTE

- Bake cake:
- Preheat oven to 350°F with rack positioned in middle.
- Grease spring-form pan and line bottom and sides with parchment (greasing pan will help parchment stick).
- Arrange almonds in a shallow baking pan and toast in oven until deep golden in color, about 15 minutes. Cool completely. Reduce oven temperature to 325°F.
- While nuts cool, place chocolate in a heatproof bowl and melt over a pot of simmering water, stirring occasionally. Cool chocolate to warm.
- Place cooled almonds with matzoh cake meal, potato starch and salt in a food processor and pulse until finely ground. (Be careful not to grind to a paste.)
- Whisk yolks, coconut milk, and vanilla into chocolate until smooth, then whisk in half of almond mixture until combined (mixture will be slightly grainy).
- Beat egg whites with a pinch of salt in the bowl of an electric mixer at medium speed until they just hold soft peaks. Increase speed to medium high and add sugar in a slow steady stream, beating, until whites hold stiff glossy peaks.
- Fold one third of whites into chocolate mixture to lighten, then fold in remaining whites gently but thoroughly.
- Sprinkle remaining almond mixture over the top and fold in gently but thoroughly until combined. Pour batter into prepared pan, and bake until cake is firm to the touch and begins to pull away from sides (center will appear moist but will set once cool), 45 to 50 minutes.
- Transfer to a rack and cool 30 minutes, then remove sides of spring-form and parchment and cool completely. Invert cake on rack and remove bottom and parchment, then reinvert cake onto a serving plate.
- Make powdered sugar while cake cools:
- Grind sugar and potato starch together in coffee/spice grinder until powdery.
- Just before serving, sprinkle top with sliced almonds (if desired) and dust with powdered sugar. Enjoy with berries alongside.
