1 tablespoon canola oil
1 large onion, finely chopped
1 jalapeno chile, minced
Coarse salt and ground pepper
2 cloves garlic, minced
1 tablespoon chili powder
1/2 teaspoon ground cumin
1 pound ground beef
1 can (14 1/2 ounces) diced tomatoes, with juice
8 (6-inch) corn tortillas
Optional Toppings: cilantro, iceberg lettuce, diced jalapenos, pickled jalapenos, Monterey Jack cheese, sour cream
Pico de Gallo, optional
Guacamole, optional

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion and jalapeno; season with salt and pepper. Cook, stirring occasionally, until softened, 4 to 5 minutes.
  • Add garlic, chili powder, and cumin to skillet; stir until fragrant, about 1 minute. Add beef; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes. Add tomatoes; simmer over medium-low heat, stirring occasionally, until thickened, 10 to 12 minutes. Season with salt and pepper, as desired.
  • Meanwhile, warm tortillas in a dry skillet over medium heat or directly over a gas burner, about 30 seconds on each side. At the table, fill tortillas with beef mixture and desired garnishes.

We love tacos around here, so this is a favorite. I have used the meat to make burritos and enchiladas too. This recipe also works well with pork. The house smells so good when it is cooking! Leftovers freeze great too.

3 lbs beef roast, trimmed of excess fat (I have used brisket, chuck, sirloin, bottom round)
1 large onion, diced
1 cup beef broth
4 ounces tomato sauce
1/4 cup lime juice
2 garlic cloves, minced
1 teaspoon cumin
1 tablespoon chili powder
1 1/2 teaspoons salt
1 teaspoon cilantro
1 jalapeno pepper, seeded and chopped (leave some seeds if you want it spicier)

Steps:

  • Place onion in slow cooker and top with beef roast.
  • In a small bowl, whisk together remaining ingredients and pour over beef roast.
  • Cook on low for about 8 hours.
  • Remove roast from slow cooker, reserving juice.
  • Use 2 forks to shred meat; mix in enough of the reserved juice until it is the desired consistency.
  • Use as filling to tacos, burritos, enchiladas, quesadillas, or nachos.

1 tablespoon olive oil
1/2 yellow onion, diced
2 pounds ground beef
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika

1/4 teaspoon crushed red pepper
20 fajita-sized flour tortillas
18 hard taco shells
1 pound Cheddar-Jack cheese, grated
15 Roma tomatoes, diced
1 head green leaf lettuce, shredded

Steps:

  • Preheat the oven to 325 degrees F.
  • For the beef: In a skillet over medium-high heat, add the olive oil and onions. Cook until starting to soften, then add the ground beef. Cook the meat until it's totally browned, then drain the fat. Add the chili powder, cumin, paprika, salt, black pepper and crushed red pepper and stir to combine. Add 1/2 cup hot water and stir. Reduce the heat to low and simmer for 15 minutes.
  • For the fixins: Meanwhile, wrap the flour tortillas in foil and warm in the oven for 20 to 25 minutes. Right before serving, crisp the taco shells in the oven according to package instructions.
  • Serve with the grated cheese, diced tomatoes and shredded lettuce.

Who doesn't like some version of a taco, there are so many. This is one of my family's favorites, as long as they get to pick their own toppings.

2 lbs ground beef
1 teaspoon salt
1 -2 tablespoon chili powder
2 tablespoons paprika
1 teaspoon cumin
1 -2 teaspoon garlic powder
1/2 green bell pepper, diced
1/2 cup onion, diced
12 corn tortillas (Packaged or Homemade)
lettuce (Plus other toppings listed below)

Steps:

  • In a 2 quart sauce pan add ground beef, salt, chili powder, garlic, cumin, paprika, and enough water to cover meat.
  • Bring to a boil.
  • Simmer for about an hour.
  • Add bell pepper and onion. Continue simmer for 20 to 30 minutes. (Until bell pepper and onion are fully cooked).
  • Meat can be used at this time or cooled for later depending on your meal schedule. I like to make the meat mixture ahead of time.
  • Full Corn Tortilla Shells just about 1/2 way full or desired amount.
  • Put into a preheated oven (300) for about 10 minutes or until completed heated through.
  • Ready to Serve!

1 (14 ounce) bottle ketchup
1 (8 ounce) package shredded Cheddar cheese
1 large tomato, diced
1 cup iceberg lettuce, shredded

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Warm taco shells for 5 minutes on the center rack in the preheated oven.
  • In a medium skillet over medium high heat, brown the beef. Halfway through browning, pour in ketchup. Stir well and let simmer for 5 minutes.
  • Spoon the meat mixture into the warm taco shells and top with Cheddar cheese. Return the filled taco shells to the preheated oven and bake until cheese is melted. Top each taco with a little tomato and lettuce.

FOR TACO MEAT
1 lb ground beef, I buy 85/15% fat
1/2 link soft chorizo, 6 oz.
salt, to taste
pepper, to taste
TOPPINGS
1 large tomato, cut up
1/2 medium red onion, chopped
1 large avocado, chopped
1 bag(s) taco seasoned cheddar cheese
1 bag(s) shredded lettuce
1 container sour cream
salsa, mild or spicy; your choice. i like ketchup, lol!
TORTILLAS
1 pkg super-size corn tortillas
canola oil for frying tortillas

Steps:

  • 1. Fry ground beef and add salt and pepper to taste.
  • 2. Add 1/2 link of soft chorizo and mix into the ground beef. Taste and add additional seasoning if necessary.
  • 3. Prepare all toppings and make a nice presentation if you are serving to company.
  • 4. To prepare tortillas, add enough oil to the pan to cover tortilla and heat to medium-high.
  • 5. With tongs, add tortilla to hot oil and count 8 seconds. Turn over and count another 8 seconds. Take end of tortilla and fold in half and count another 8 seconds. Turn over and count another 8 seconds. Take paper towel and drain oil from tortilla.
  • 6. To cooked tortilla, fill first with the ground beef, about two tablespoons.
  • 7. Add cheese on top of meat.
  • 8. Add onions if you like.
  • 9. Add chopped tomatoes.
  • 10. Add chopped avocados.
  • 11. Add shredded lettuce...sliced or chopped black olives are also a nice addition.
  • 12. Add sour cream and salsa or topping of your choice! Then just enjoy!
  • 13. FYI: I am adding pictures for those of you who are unfamiliar with chorizo. Please note that they also make pork chorizo but I use the beef kind.
  • 14. I turned the package over so you can see the product better. This package is frozen.

2 teaspoons vegetable oil
1 pound lean ground beef (I use 90% lean)
1/2 cup onion (finely chopped)
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes (optional)
1/4 teaspoon dried oregano
1/2 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon pepper
1 14 ounce can petite diced tomatoes (drained)
8 taco shells
assorted toppings such as lettuce, tomato, onion and shredded cheese

Steps:

  • Heat the oil in a large pan over medium high heat.
  • Add the ground beef and break up with a spatula.
  • Add the onion to the pan.
  • Cook, stirring occasionally, until beef is done and onion is soft, 5-6 minutes. Drain off any excess fat.
  • Add the chili powder, garlic powder, onion powder, red pepper flakes, oregano, smoked paprika, cumin, salt and pepper to the pan. Stir to coat the meat in the seasonings.
  • Add the tomatoes to the pan and simmer for 2-3 minutes.
  • Spoon the beef into the taco shells and add toppings such as lettuce, tomatoes and cheese. Serve immediately.

Made on the stove or in the slow cooker, this meat is perfect for tacos, burrito bowls, salad, etc. Or pick it all out of the pot with your fingers, I'm not gonna judge.

2-3 pounds cheap steak or roast (chopped into bite size pieces*)
1 large onion (chopped well)
3 cups water
8 ounces tomato sauce
2 tablespoons garlic powder
1/2 teaspoon salt
2 tablespoons beef bullion (good quality)
1/2 teaspoon pepper
1/2 teaspoon cumin

Steps:

  • Heat a large, high-sided skillet (or a wide-bottomed pot), over medium high heat.
  • Salt and pepper the beef chunks.
  • Add about a tablespoon of oil to the pan and swirl. It should start to shimmer if the pan is hot enough.
  • Add 1/3 of the seasoned meat to the pan. Place the pieces of meat so that they are not touching each other (You don't want them to steam--see photos). Turn the pieces with tongs to brown all sides. Remove to a plate and repeat 2 more batches, adding more oil as necessary.
  • Remove the final batch of meat, then add the onions to the pan, adding more oil first if there is none left.
  • Saute the onions over medium heat for 5-8 minutes, or until mostly cooked through. Do your best to scrape up the browned bits.
  • Return the meat to the pan. Add the water, tomato sauce, garlic powder, salt**, beef bullion, pepper, and cumin.
  • Bring the mixture to a boil, then reduce to a low simmer. You want there to be some movement. If the mixture is completely still, turn it up a little. I had my burner set just below medium.
  • Simmer for 2-3 hours, or until the meat is tender and the gravy has thickened. Stir occasionally.
  • To serve authentically, put the meat, some rice, cheese, and guacamole in a warm flour tortilla.
  • It's important to note that this is not a shredded beef recipe; "Carne Guisada" literally means "Stewed Beef" so you want it to be just like beef stew, but without any veggies.
  • Don't add 3 cups of water! Read on:
  • Brown the meat and saute the onion as instructed above. Add the meat and onion to a crock pot. In a glass measuring bowl, measure out 1/4 cup HOT water. Add the beef bouillon and dissolve. Add the tomato sauce, garlic powder, salt**, pepper, and cumin to the measuring cup. Stir and combine, then pour over the meat in the crock pot, stirring to coat.
  • Cook on low for 6-7 hours.
  • Remove the lid for the last half hour of cook time, and turn the heat up to high. This is to burn off some of the excess liquid. If it's at a consistency you like, you can skip that step.
  • It's important to note that this is not a shredded beef recipe; "Carne Guisada" literally means "Stewed Beef" so you want it to be just like beef stew, but without any veggies.

  • Get all your ingredients prepped and in place, measure your spices out into one small dish. Heat oil in large skillet over medium heat until shimmering.
