IRISH APPLE CAKE

An authentic Irish Farmhouse Apple Cake -- delicious with or without the traditional custard sauce! https://theviewfromgreatisland.com/irish-apple-cake/

Provided by Gagoo

Categories     Dessert

Time 1h10m

Yield 10 serving(s)

Number Of Ingredients 18

1/2 cup unsalted butter, at room temperature
1/2 cup sugar
2 large eggs
3 tablespoons milk or 3 tablespoons cream
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/8 teaspoon salt
3 Granny Smith apples, peeled and thinly sliced
confectioners' sugar, for dusting
3/4 cup flour
1/4 cup old fashioned oats
6 tablespoons unsalted cold butter, cut in small pieces
1/2 cup sugar
6 large egg yolks
6 tablespoons sugar
1 1/2 cups whole milk
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 350°F.
  • Make the custard sauce ahead of time. Bring the milk to a simmer over medium heat. Meanwhile whisk the yolks and sugar until pale. Drizzle a little of the hot milk into the egg mixture, whisking all the time. Drizzle a little more, then transfer that back into the pan of hot milk and continue cooking, stirring constantly, until the mixture coats the back of a spoon. Don't overcook or it can curdle. Stir in the vanilla. Refrigerate the custard sauce until needed.
  • To make the streusel topping, blend the bits of butter into the flour, sugar, and oats until the butter is incorporated and the mixture has a coarse crumbly texture. Put in the refrigerator.
  • To make the cake, grease a 9 inch round spring form pan.
  • Cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time.
  • Whisk together the flour, baking powder, cinnamon, and salt. Fold the dry ingredients into the butter/sugar mixture, along with the milk or cream.
  • Spoon the batter in to the pan, and smooth out evenly. Top with the sliced apples, and then the streusel topping.
  • Bake for about 50 minutes to an hour, until the top is lightly browned and a toothpick comes out without wet batter clinging to it.
  • Let cool a bit in the pan before removing. Dust with confectioner's sugar before serving.

IRISH APPLE CAKE

Irish Apple Cake image

When Gemma Stafford was growing up in Ireland, her mom always had a cake or crumble on hand just in case someone dropped by for a cup of tea and a chat. Like many traditional Irish desserts, her mom's weren't particularly complicated: What made them so good were ingredients like Irish butter, rhubarb from the garden and sour apples picked from a tree near the house. "In Ireland, everything is local," the chef says. When Gemma started cooking and baking professionally, she became known for over-the-top treats like birthday pound cake and peanut butter fudge ice cream pie (check out her recipes at biggerbolderbaking.com), but she still loves a simple, classic dessert like this one from her mom. "It's a humble cake but it yields a big reward," she says. "A lot of Irish recipes are like that." -Francesca Cocchi for Food Network Magazine.

Time 1h30m

Yield 8 servings

Number Of Ingredients 16

6 tablespoons cold salted butter, plus more for the pan
3/4 cup all-purpose flour
1/4 cup rolled oats
1/2 cup granulated sugar
Pinch of salt
1 stick salted butter, at room temperature
1/2 cup granulated sugar
2 teaspoons pure vanilla extract
2 large eggs
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon salt
3 tablespoons milk
3 Granny Smith apples, peeled and thinly sliced
Confectioners' sugar, for serving

Steps:

  • Preheat the oven to 350˚ F. Butter a 9-inch round cake pan and line the bottom with parchment paper.
  • Make the streusel topping: In a medium bowl, combine the flour, oats, granulated sugar and salt. Next, rub in the cold butter until fully incorporated and you've reached the texture of coarse breadcrumbs. Set aside in the fridge while you make the cake.
  • Make the cake: Cream the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy. Add the vanilla, then beat in the eggs one at a time. In a medium bowl, combine the flour, baking powder, cinnamon and salt. Fold the dry ingredients into the wet ingredients with a rubber spatula along with the milk. Once the batter has formed, transfer it to the prepared pan and lay on the sliced apples, making sure they are arranged in one even layer. Cover the apples with all the streusel topping.
  • Bake the cake until the top is golden brown and crisp, 60 to 70 minutes. Remove from the oven and let cool slightly before turning out of the pan onto a rack. When ready to serve, dust the cake with confectioners' sugar.

IRISH APPLE CAKE

Irish Apple Cake image

This is a traditional recipe - serve warm with whipped cream. I love this type of cake for brunch or tea time, or late at night!

Provided by momaphet

Categories     Dessert

Time 1h20m

Yield 4-6 serving(s)

Number Of Ingredients 8

1 3/4 cups all-purpose flour (plain)
1/2 teaspoon baking powder
1/2 cup butter
1/2 cup sugar, plus 2 tablespoons
1 egg, beaten
1/2 cup milk (approximately )
1 large cooking apple (about 10 ounces in weight, I like granvenstein or granny smith, use your favorite)
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350°F (180°C/Gas Mark 4). Butter a 10-inch pie pan.
  • Mix the flour with the baking powder. Rub in the butter with your fingertips until the texture resembles bread crumbs. Add the ½ cup sugar, beaten egg, and enough milk to form a soft dough. Pat out half of the dough in the greased pie pan (it is supposed to be very wet).
  • Peel, core, and chop the apple into ¾-inch (2cm) cubes. Arrange the apples on the dough and sprinkle with 1 tablespoon sugar and the cinnamon.
  • Gently spoon out the remaining dough on top of the apples to cover them completely. Sprinkle with the remaining 1 tablespoon sugar and cut a slit through the middle of the top dough.
  • Bake for 40 to 50 minutes, until golden and crunchy on the outside (the apples should be soft on the inside).
  • Serve with softly whipped cream.

IRISH APPLE CAKE WITH TOFFEE SAUCE

Irish Apple Cake With Toffee Sauce image

This is a luscious cake I've used from an Irish cookbook I have. This recipe is from Jeanne & Paul Rankin, Belfast chefs. This reminds me of a delightful treat that may be found in a Bed & Breakfast or at a special brunch. I did not have the 'hard' Irish Cider, so substituted Apple Juice, but I'm sure Irish fermented Cider would really be nice. There are 3 steps; roasting apples, making the cake, and preparing the toffee sauce.

Provided by DiLo4602

Categories     Dessert

Time 2h20m

Yield 8-10 serving(s)

Number Of Ingredients 19

8 granny smith apples, peeled, cored and quartered
2 lemons, juice of
2/3 cup sugar
4 tablespoons unsalted butter
1/2 cup slivered almonds
1 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 pinch salt
1/2 cup unsalted butter, at room temperature
1 cup sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream (needing 12-24 hours, see end of recipe) or 1/2 cup creme fraiche (needing 12-24 hours, see end of recipe)
1/4 cup apple cider or 1/4 cup juice
3/4 cup water
3/4 cup sugar
1 tablespoon lemon juice
3/4 cup heavy whipping cream

Keep oven on to maintain temperature.

  • In a separate bowl, sift flour, cinnamon, baking soda and salt. Set aside.
  • In another bowl, cream butter & sugar until light & fluffy. Add eggs one at a time and beat until smooth.
  • With a wooden spoon, fold in dry ingredients, vanilla, sour cream (or creme fraiche - see below) and cider.
  • To arrange the Cake, starting in the centre, decoratively arrange half the apples in prepared pan. Roughly chop remaning apples and stir into cake batter. Pour batter into pan and bake 70 - 80 minutes until a skewer inserted in the middle comes out clean. Remove cake and let cool on a wire rack for 10 minutes. Release sides of pan, invert to a cake plate and remove the base.
  • Toffee Sauce; In a medium saucepan bring water and sugar to a boil. stir in lemon juice. Cook 10 - 15 minutes or until it starts turning a light caramel colour. Remove from heat and slowly whisk in the cream.
  • To Serve, cut cake into slices and drizzle with the toffee sauce.
