A low oven temperature and a touch of fresh lime juice take ripe summer peaches to the next level. Serve alongside Rose-Geranium-and-Cardamom Ice Cream and Almond Cookies.

6 ripe but firm peaches (about 2 1/4 pounds), halved, pitted, and cut into 1-inch wedges (about 6 cups)
2 tablespoons fresh lime juice
1 teaspoon extra-virgin olive oil
Kosher salt and freshly ground pepper
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 225 degrees. In a bowl, gently toss peaches with lime juice and oil. Lightly season with salt and pepper. Spread in a single layer on a rimmed baking sheet lined with parchment. Place confectioners' sugar in a fine-mesh sieve and dust peaches evenly.
  • Bake until peaches darken and begin to curl, about 1 hour. Let cool completely; serve.

PEACHES IN SAUTERNES

6 to 8 very ripe yellow or white peaches
3 tablespoons sugar
1 (375-ml) bottle of good Sauternes
1 tablespoon Grand Marnier

Steps:

  • Bring a pot of water to a boil and immerse the peaches in the water for 1 to 2 minutes, until the skins are loose. Remove the peaches with a slotted spoon and place them in a bowl of cold water to stop the cooking. Peel the peaches and then slice them off the pit in wedges into a bowl. Stir in the sugar, Sauternes, and Grand Marnier. Cover and refrigerate for at least 2 hours, or overnight. Serve cool but not cold.

Baked Peaches are DELICIOUS and EASY! Fresh peaches with maple syrup, brown sugar and cinnamon, baked until warm and tender. Add ice cream or caramel or enjoy them just as they are!

3 fresh, very ripe peaches (halved and pitted)
2 tablespoons extra virgin olive oil
2 tablespoons pure maple syrup or honey
1 tablespoon brandy (bourbon, or rum (optional))
1 tablespoon coconut sugar or light brown sugar
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon kosher salt
Vanilla ice cream, Greek yogurt, or heavy cream, for serving

Steps:

  • Preheat oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish that's large enough to hold the peach halves in a single layer with nonstick spray. Pick a dish that's sized to where your peaches fit comfortably side by side, but there isn't too much excess room around them. Arrange peaches cut-side up in the dish.
  • In a medium mixing bowl, stir together the oil, maple syrup, brandy, coconut sugar, vanilla, cinnamon, and salt. Spoon the mixture over the peaches, filling the center and letting it run over the sides.
  • Bake peaches, uncovered, until the peaches are cooked through and fork-tender, about 30 minutes. Serve warm, topped with vanilla ice cream, Greek yogurt, or a pour of heavy cream, as desired.

BOURBON-LACED TIPSY CHICKEN WITH PEACHES



Bourbon-Laced Tipsy Chicken with Peaches image

4 chicken breast halves
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 tablespoons butter
1 large onion, finely chopped
1 teaspoon paprika
1 1/2 cups green onions, chopped (about 6 green onions, including green part)
1/2 cup orange juice
2 tablespoons bourbon
1 cup chopped fresh peaches (about 2 medium peaches)
Dash nutmeg

Steps:

  • Preheat oven to 400 degrees.
  • Sprinkle chicken quarters with salt and pepper. Place in a 13 by 9-inch baking pan and set aside.
  • In a medium skillet, melt the butter over medium heat. Add the chopped onion and cook, stirring occasionally, until translucent, about 5 minutes. Add the paprika and all but 1 tablespoon of the green onions and continue to cook, stirring occasionally, for an additional 4 minutes.
  • Spread the onion mixture evenly over the chicken, spoon the orange juice and bourbon over the top, and bake in the preheated oven for 30 minutes, turning and basting occasionally.
  • Remove the chicken from the oven, spoon the peaches over the top, sprinkle with nutmeg, and return to the oven for an additional 15 to 20 minutes or until the chicken is tender and shows no trace of pink near the bone. Remove the chicken from the pan, place on serving dish, and pour the juices over the chicken. Garnish with the remaining green onions and serve immediately.

SMOKEY ROASTED PEACHES

1 purple onion, skin removed
1 red bell pepper, stemmed, seeded, and ribs removed
2 jalapenos, stemmed, seeded, and ribs removed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly cracked black pepper
4 ripe fresh freestone peaches, halved and pitted

Steps:

  • Preheat oven to 400 degrees F.
  • Cut the onion and red bell pepper into rough chunks and put in a bowl; mince the jalapenos and add them to the onion and peppers. Drizzle about 1 tablespoon of the extra-virgin olive oil over the vegetables and toss. Add a good pinch of salt and some pepper, toss, and place on 1 side of a rimmed baking sheet.
  • Drizzle the peaches with another tablespoon of oil, being sure to coat the cut sides well. Put them, cut side down, on the other side of the baking sheet. Roast the fruit and vegetables until caramelized, about 25 minutes. Using tongs, pull the skin off the peach halves and discard.
  • Arrange 2 peach halves on each serving dish, cut side up, on a bed of the roasted vegetables.
  • Note: If freestone peaches are not available, split the peaches leaving the pits intact; they can be removed easily after roasting.

BRANDY BAKED PEACHES

Peaches are cut into halves, topped with a brandy-cinnamon sauce, and baked for 30 minutes. Place peaches on individual serving dishes, top with ice cream, and drizzle with sauce for a light summer dessert.

¼ cup honey

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a baking dish with cooking spray.
  • Arrange peaches cut-side up in the prepared baking dish.
  • Put butter in a saucepan over medium-low heat, add almonds, and heat together until butter melts, about 2 minutes. Stir honey, brown sugar, and cinnamon into the melted butter; bring to a simmer and add brandy and salt. Stir to dissolve the salt, remove saucepan from heat, and add vanilla extract; pour the mixture over the peaches.
  • Bake peaches in preheated oven until the peaches are cooked through, about 30 minutes.
