TIPSY DATE SQUARES
Think of these delightfully dense bar cookies as a variation on Italian panforte, albeit one with a playfully dark side. They include chocolate, molasses, dates, walnuts, and, to cap it all off, a brush on both sides with port. Just one tiny square delivers big flavor.

Steps:
- Preheat oven to 350 degrees. Line the bottom of an 8-inch square baking pan with parchment. Whisk to combine flour, cocoa powder, salt, and cinnamon in a bowl.
- In a separate bowl, beat brown sugar, molasses, and butter with an electric mixer on medium speed until smooth, 1 to 2 minutes; beat in eggs. Reduce speed to low; add flour mixture, beating just until combined. Fold in orange peel, dates, and walnuts.
- Transfer batter to pan; smooth top with an offset spatula. Bake until surface is set and a toothpick inserted in center comes out with only a few moist crumbs clinging to it, 20 to 25 minutes. Let cake rest in pan 5 minutes. Invert onto a wire rack; peel off parchment. Brush bottom side (now facing up) with 3 tablespoons port. Let stand 30 minutes. Flip cake over on rack, and brush other side with remaining tablespoon port. Let stand 1 hour. (Cake can be kept at room temperature, wrapped well in plastic, up to 1 month.)
- Cut into 3/4-inch squares, wiping knife with a damp cloth between cuts. Squares can be refrigerated in an airtight container (layered between sheets of waxed paper) up to 1 week.

- Preheat oven to 350 degrees. Butter an 8-by-8-by-2-inch baking pan, and set aside. In a large bowl, combine flour, oats, brown sugar, and baking soda. Add butter, and blend with your fingertips until mixture resembles coarse crumbs.
- Transfer two-thirds of the crumb mixture into prepared pan, and press into bottom and up sides. Spread date paste over bottom layer of the dough. Cover with remaining crumb mixture.
- Bake until golden brown, about 35 minutes. Transfer pan to a wire rack to cool completely. Invert onto a plate, then back onto a cutting board. Cut into 2-inch squares. Store in an airtight container for up to 1 week.
GRAMMA'S DATE SQUARES
A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
- In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
- Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

- For filling, place all ingredients in a pot and bring up to a boil. Remove from heat and let dates sit and soak until room temperature. Purée until smooth and set aside.
- Preheat oven to 350° F, grease and 8-inch square pan and line bottom with parchment paper so that the paper hangs over the edge of the pan on 2 sides. Combine oats, flour, brown sugar, cinnamon and salt in a bowl. Stir in butter and blend until an even crumbly texture. Press half of the crumble into the bottom of prepared pan. Spread date filling over base and top with remaining crumble (not pressing). Bake for 40 to 45 minutes, until the top of crumble begins to brown. Allow to cool before cutting into squares.
- Yield: 1 8-inch square pan. Makes 16 servings.
OLD FASHIONED DIABETIC DATE SQUARES

Steps:
- Preheat oven to 350°F.
- Combine flour,baking powder,baking soda,and salt.
- Rub in butter until mixture is crumbly.
- Add sugar and oats.
- Mix well.
- Spread half of crumb mixture into 9"x9" greased baking pan,patting mixture until firm and smooth.
- Cook dates,with water,orange rind ,orange juice,lemon and sugar in a saucepan till smooth and thick.
- Cool mixture.
- Add to bottom layer of oat mixture.

- Heat oven to 190C/170C fan/gas 5. Grease an 18cm square tin and line with baking parchment.
- Tip the apples into a pan with 2 tbsp water. Bring to the boil and simmer on a low heat for 5 mins until tender and slightly pulpy. Add the dates and 50g of the sugar, and cook for a further 5 mins. Take off the heat and break the apples down with the back of a spoon until smooth and well mixed with the dates. Set aside.
- Gently melt the butter in a saucepan. Mix the flour, bicarb, oats and remaining sugar in a bowl. Pour in the melted butter and stir well until oats are coated.
- Press half the mixture firmly into the tin, spread the apple mix on top and smooth over. Cover with the remaining oat mixture and press down. Bake for 30-35 mins until golden and firm. Cool in the tin before cutting into squares.

Steps:
- Oven: 375 F (190 C).
- FILLING: Mix dates, SPLENDA Granular and hot water and cook over medium heat until smooth and consistent.
- BOTTOM AND TOP MIXTURE: Mix all dry ingredients.
- Cut in softened margarine.
- Spread half of mixture onto well greased 8 x 12 pan and press down evenly.
- Add filling and spread evenly.
- Add other half of mixture on top of filling.
- Bake 375 F (190 C) for 25- 30 minutes.
EASY DATE SQUARES
My MIL's easy, no fail date squares...Make an extra batch of the date jam its good on its own...over bagels or toast. If your date jam is a little thick. Add a little extra water to thin it out, until it is the consistency that you like. Becareful not to make it too thin.

- Date Jam
- Combine dates, sugar, water and vanilla in saucepan and bring to a boil.
- Simmer 5 minutes, until mixture resembles a thick paste.
- Cool completely
- Oatmeal Layer
- Combine flour, oats, sugar, nuts and salt in mixing bowl.
- Cut in butter.
- Reserve 2 cups of this mixture for topping.
- Press remaining mixture into bottom of greased 9 x 9" pan.
- Spread cooled date jam over the bottom layer and sprinkle reserved oatmeal mixture evenly over top.
- Bake 25- 33 minute.
- Cool completely then cut into squares.
