GRILLED BABY BACK RIBS

4 2-pound racks baby back pork ribs
1/4 cup packed light brown sugar
2 tablespoons paprika
2 tablespoons steak seasoning (such as Montreal blend)
1 tablespoon ground cumin
1 tablespoon dried oregano
Vegetable oil, for the grill
1/4 cup honey
1 tablespoon apple cider vinegar
Kosher salt and freshly ground pepper

Steps:

  • Turn the ribs bone-side up. Slip a paring knife between the thin membrane and the bone to loosen, then pull off the membrane. Mix the brown sugar, paprika, steak seasoning, cumin and oregano in a small bowl; rub all over the ribs. Place on a baking sheet, cover with plastic wrap and refrigerate at least 6 hours or overnight.
  • Preheat a grill to medium high and prepare for indirect grilling: For a gas grill, turn off one or two of the center burners and reduce the remaining burners to medium low. On a charcoal grill, bank the coals to the sides, leaving the center open; set up a drip pan to avoid flare-ups.
  • Oil the grill grates. Place the ribs bone-side down, overlapping slightly if needed, on the cooler part of the grill (indirect heat). Cover and cook, rotating the rib racks once, until the meat is tender and pulls away from the bones, about 2 hours to 2 hours 15 minutes.
  • Mix the honey, vinegar and a pinch each of salt and pepper in a small bowl. Transfer the ribs to direct heat. Brush with the honey mixture and continue to grill, uncovered, brushing with the honey mixture once more, until glazed, 5 to 10 minutes. Transfer to a cutting board and cut into ribs.

1 tablespoon vegetable oil
1/2 large onion, chopped
3 cloves garlic, chopped
2 tablespoons chili powder
Kosher salt and freshly ground black pepper
1/4 cup bourbon
1 cup ketchup
1/2 cup brewed coffee
1/3 cup light brown sugar
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
2 racks baby back pork ribs (4 to 5 pounds)

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onions, garlic, chili powder and 1/2 teaspoon salt and cook, stirring occasionally, until the onions are softened, about 10 minutes. Add the bourbon and cook until slightly reduced, 2 to 3 minutes. Then add the ketchup, coffee, 1/2 cup water, brown sugar, cider vinegar and Worcestershire. Increase the heat and bring to a boil; lower the heat and simmer until slightly thickened and the onions are tender, about 25 minutes. Transfer the mixture to a blender and puree until smooth (be careful when blending hot liquids). Transfer the sauce to a bowl and cool slightly.
  • Preheat the oven to 325 degrees F. Line a baking sheet with heavy-duty aluminum foil.
  • Sprinkle the ribs with salt and pepper, and coat the racks on both sides with about 2 cups total of the barbecue sauce (reserve the remaining sauce). Put the ribs, bone-side down, on the prepared baking sheet and wrap each rack with foil. Bake until the meat is tender and pulling away from the bone, about 2 hours.
  • Remove the foil and turn the ribs bone-side up. Preheat the broiler to high. Brush the bone side of the ribs with half of the remaining sauce, and broil until lightly charred in spots, about 5 minutes. Turn the ribs over, brush with the remaining sauce and broil again until charred stops on top, another 5 minutes. Cut the racks in half and serve.

1 cup turbinado sugar, ground
1/4 cup kosher salt
6 tablespoons Spanish paprika
4 tablespoons chili powder
2 tablespoons granulated garlic
1 tablespoon onion powder
2 teaspoons ground cumin
2 teaspoons ground mustard
1 1/2 teaspoons cayenne pepper
1 teaspoon black pepper, coarse ground
One 2.25-pound slab of baby back pork ribs (also known as loin-back ribs)
2 tablespoons yellow mustard
2 tablespoons BBQ sauce, for glazing, optional

Steps:

  • For the rub: The day before cooking, mix the turbinado sugar, salt, paprika, chili powder, granulated garlic, onion powder, ground cumin, ground mustard, cayenne pepper and black pepper together.
  • For the ribs: Take a slab of ribs and turn over so the curved side is up. Using your fingernail or a knife, pry under the membrane until you can put your finger under it and then pull it off.
  • Sprinkle this side of the ribs with about 1 tablespoon rub, and then about 1 tablespoon yellow mustard. Use the mustard to help evenly distribute the seasoning. Turn the ribs over and repeat the process. Cover and store in the refrigerator overnight.
  • To cook, start a smoker and bring the temp to 200 degrees F. Use apple or cherry wood chunks to provide smoke and flavor. Place the ribs in the smoker, curved side down. Smoke for 2 hours at 200 degrees F, and then raise the temperature to 250 degrees F for about 2 1/2 hours. Check for tenderness by testing if the bones will pull apart with a slight bit of pressure. If they are still tough, allow to cook for another 30 minutes.
  • Remove from the smoker. For dry-style ribs, sprinkle with about 1 tablespoon rub. For wet-style ribs, glaze with the BBQ sauce.

LINA'S BABY BACK RIBS

Temperature is ALWAYS more important than time, make sure your meat is at the right temperature, regardless of how much time any recipe says to cook it.

3 slabs of baby back ribs
3/4 c sprinkle barbecue sauce (dry rub), recipe to follow
1 - 1 1/2 c your favorite red barbecue sauce
6 oz smoking chips (i use hickory flavored)

Steps:

  • 1. Rinse, skin and trim ribs.
  • 2. Apply a generous amount of the dry rub to both sides of the ribs. Let seasoned ribs sit in the refrigerator for 4 hours.
  • 3. Grill ribs on an indirect heat, meat side up in a covered grill. Grill temperature should be at 225 degrees Farenheit, but not hotter than 275 degrees Farenheit; this is within "smoking" range.
  • 4. Once grill has reached proper temperature, add a small amount of smoking chips, about 2 oz. Once the wood stops smoking, about 20-30 minutes, add more chips, but stop adding after the first hour of cooking so as not to over smoke the meat. *Note, this recipe doesn't call for soaking your wood chips. I've tried cooking with soaked chips and with chips that haven't been soaked, I get a better flavor from the chips that were NOT soaked. Not soaking your chips is no more of a fire hazard than barbecuing itself. Try it, you'll like it ;-)
  • 5. No need to turn ribs, however rearrange the ribs on the grill so that one slab is not on the hottest side of the grill the entire time. Ribs should cook about 3-4 hours depending on the thickness of the ribs. Brush on barbecue sauce on both sides of the ribs and move ribs to the "direct cooking" side of the grill to allow the sauce to caramelize. Remove ribs from grill and tent with aluminum foil, let meat rest for 10 minutes before serving.
  • 6. The internal temperature of your ribs should be approximately 185° F when you remove them from the grill and 190° F after resting.
  • 7. Sprinkle Barbecue Sauce (dry rub) Ingredients: 2 tablespoons Black Pepper, coarsely ground 3 tablespoons Sea Salt 3 tablespoons Season Salt 1 ½ tablespoon Garlic Powder 1 tablespoon Cayenne Pepper 3 tablespoons Chili Powder 4 tablespoons Paprika Preparation: Mix all the ingredients together in a bowl. Before barbecuing chicken, ribs, briskets, fish or pork chops, sprinkle on very heavy. This mixture serves as a "dry" barbecue sauce but makes a crust, sealing in juices. Yield: approximately 1 cup

Even a barbeque purist cannot scoff at these foil-wrapped, baked and glazed baby back ribs. They're satisfyingly sweet, savory, smoky and flavorful. The meat falls off the bones! Baking in foil also reduces the amount of clean up. You'll be busy enjoying these ribs -- who has time for dishes?

2 slabs baby back ribs, about 1 pound each (see Cook's Note)
1/4 cup light brown sugar
1 tablespoon chipotle chile powder
2 teaspoons kosher salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon seafood seasoning, such as Old Bay
1/2 teaspoon freshly ground black pepper
1 cup apple cider
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
1 tablespoon Worcestershire sauce
2 cloves garlic, minced

Steps:

  • In a small bowl, combine the brown sugar, chipotle chile powder, salt, onion powder, garlic powder, seafood seasoning and black pepper.
  • Place each slab of ribs on a piece of aluminum foil large enough to fold over and seal, then place on a baking sheet. Do not seal the ribs in the foil yet (see Cook's Note). Generously sprinkle the dry rub on both sides of the ribs. Place in the refrigerator, meat-side down and uncovered, for at least 1 hour. Preheat the oven to 300 degrees F.
  • In a small bowl, combine the apple cider, apple cider vinegar, maple syrup, Worcestershire and minced garlic. Pour half the liquid over each slab and tightly seal each in the aluminum foil, crimping the edges to make a packet.
  • Transfer the foil packets and baking sheet to the oven and bake until the meat is tender and starts to pull away from the bones, about 2 hours.
  • Remove the sheet pan from the oven. Carefully open the aluminum packets and pour the braising liquid into a small saucepan. Bring the liquid to a simmer over medium heat until it becomes a thick and syrupy glaze, about 4 minutes.
  • While the braising liquid reduces, line a baking sheet with foil and gently transfer the ribs to it. Position a rack on the top level of the oven and preheat the broiler.
  • Using a pastry brush, generously brush the ribs with about half the glaze. Place the ribs under the broiler for about 1 minute. Brush with the remaining glaze and return to the broiled until charred in spots, about 1 minute more. Slice each rack between the bones into 2-rib portions and serve.

Dry Rub:
2 TBSP salt
2 TBSP brown sugar
2 TBSP ground cumin
2 TBSP pepper
2 TBSP chili powder (or mesquite or ancho or any combo)
4 TBSP paprika
4 TBSP sugar
(makes enough dry rub for 3 racks, store un-used rub in a ziplock bag)
Doctored-up BBQ sauce:
1 cup purchased "smoky" bbq sauce
1/4 cup chopped fresh cilantro
3 TBSP minced red onion
2 TBSP bourbon
2 tsp chili powder
3/4 tsp cumin
3 racks of ribs

Steps:

  • Make dry rub and coat ribs, let marinade at least one hour. Mix barbecue sauce, cilantro, onion, bourbon, chili powder and cumin in heavy small saucepan; bring to boil, stirring occasionally. Bake the ribs undisturbed & uncovered (bone side up) in the oven for about 2 hrs @ 325. Optionally: Finish on grill w/ BBQ sauce.

50g light brown soft sugar
2 tbsp smoked paprika
2 tbsp English mustard powder
1 tsp celery salt
1 tsp garlic granules
4 racks baby back pork ribs (about 450g each)
250ml yellow mustard (we used French's Classic)
150ml cider vinegar
2 tbsp treacle
75g light brown soft sugar
2 tbsp Worcestershire sauce
1-2 tbsp hot chilli sauce
2 tsp hot chilli powder

Steps:

  • Heat oven to 160C/140C fan/gas 3. Combine the sugar, paprika, mustard powder, celery salt and garlic granules in a bowl, and rub all over the ribs. Place in 2 large roasting tins with racks set inside (if you don't have racks, that's fine). Pour 150ml water into the bottom of each tin, cover tightly with foil and roast for 3 hrs until nearly falling apart. If your roasting tins are on different shelves, swap them over halfway through the cooking time. Once cooked, remove and drain the cooking liquid.
  • Meanwhile, to make the baste, mix all the ingredients in a saucepan and cook for 10 mins, stirring occasionally, until the sugar has dissolved. Set aside.
  • Heat an outdoor barbecue. Whether your grill is gas or charcoal, use low heat to barbecue the ribs. Cook the ribs for 3-4 mins each side, brushing regularly with the baste, until golden and sticky. Alternatively, heat oven to 220C/200C fan/ gas 7 and roast the ribs for 25-30 mins, turning the ribs over and rotating the tins halfway through the cooking time.
