BAKED TILAPIA WITH TOMATOES AND POTATOES

Steps:
- Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. Coat a rimmed baking sheet with cooking spray; add the potatoes and spread in an even layer. Roast until browned and crisp, tossing halfway through, about 35 minutes.
- Meanwhile, toss the tomatoes, olives, capers and garlic with 1 teaspoon olive oil, 2 tablespoons vinegar and 1 teaspoon thyme in a bowl. Coat another baking sheet with cooking spray; add the tomato mixture and spread in an even layer. Roast until softened, 15 minutes.
- Mix the remaining 2 teaspoons olive oil and 1 teaspoon thyme, 2 tablespoons vinegar, 1/4 teaspoon salt, and pepper to taste in a bowl; brush on the fish. Place the fish on top of the roasted tomato mixture and return to the oven until just cooked through, about 10 minutes. Divide among plates and serve with the potatoes.
TILAPIA WITH PEACH SALSA
A quick, light dish that's bursting with flavor. You can serve the peach salsa warm or cool, and you can even use frozen peach slices if you can't find fresh peaches or they're not in season.

- Stir together celery salt, thyme, cayenne, and 1½ teaspoons pepper in a small bowl. Drizzle some of the olive oil over the fish, then gently rub spice mixture on both sides of the fillets. Let sit 5 minutes.
- Meanwhile, stir together peaches, onion, tomatoes, cilantro, honey, kosher salt, lime juice, 1 tablespoon oil, and remaining ¼ teaspoon pepper. Set aside. (You can also cook the salsa -- see note)
- Heat remaining olive oil in a large skillet over high heat. Add fish and cook for 3-4 minutes, until starting to char on the bottom. Flip and cook until fish flakes easily with a fork, about another 3 minutes.
- Serve fish with peach-tomato salad. Great with zoodles and pesto, or a pasta/rice side dish.
TILAPIA WITH SPICY FRESH SALSA
Watching your weight? Take it easy on the calories with this tilapia with spicy fresh salsa. A little spice from the jalapeños, and you'll fill up on healthy fats too. Swap the fish for any white, mildly flavored variety you like.

- Preheat the broiler to high and move the oven rack about 6 inches from the broiler.
- Line a rimmed baking sheet with foil and spray lightly with cooking spray.
- Place the tilapia on the baking sheet and pour the olive oil evenly over them.
- Sprinkle with salt and pepper.
- Broil the fish until it flakes with a fork, about 4 minutes per side or so if your fish is thin. Turn it once during cooking.
- While the fish cooks, toss the tomatoes, jalapeño, onion, lime, cilantro and salt together in a small bowl. Set aside.
- When the fish comes apart easily, remove from the oven and transfer to plates; top with your desired amount of fresh salsa and serve warm.

TILAPIA WITH ESCAROLE AND LEMON-PEPPER OIL

- Heat 1/4 cup of the olive oil in a large deep skillet with a lid over medium heat. Place the potatoes in the pan cut-side down. Add the garlic and cook until the potatoes are slightly golden and crisp, 4 to 5 minutes. Add the escarole, season with salt and pepper, then add about 1/3 cup water. Cover and steam until the escarole wilts, about 5 minutes.
- Season the fish with salt and pepper; place on top of the greens in the pan and sprinkle with the oregano leaves. Cover and steam until the fish is just cooked through, about 5 more minutes.
- Meanwhile, whisk the lemon juice in a bowl with the remaining 1/4 cup olive oil; season with 1 teaspoon salt and plenty of pepper.
- Carefully lift the fish off the greens and transfer to rimmed plates or bowls. Distribute the greens, potatoes and pan juices around the fish. Drizzle with the lemon-pepper oil.

This meal comes together in about a half hour total but when I am feeling especially lazy I will buy prepared mango/peach salsa at the store and use a package of prepared cole slaw mix plus the lime juice. Enjoy!

- In a small bowl combine all salsa ingredients and toss gently. Place in fridge for at least 15 minutes to allow flavors to combine.
- In a medium bowl combine cabbage, cilantro, mayonnaise, and lime juice. Mix to combine.
- Preheat oven to 450 degrees and spray a 13x9 baking dish with cooking spray.
- Rinse and pat dry fish. Cut into 3/4 inch pieces and lay in a single layer in baking dish. Sprinkle with cumin, garlic and onion powder. Bake for 10 minutes or until fish flakes with a fork.

BAKED LEMON-GARLIC TILAPIA AND POTATOES IN FOIL

- Preheat the oven to 375 degrees F (190 degrees C). Spray foil with cooking spray.
- Place equal amounts of diced potato and red bell pepper in the middle of each piece of foil and sprinkle with 1/2 of the seafood seasoning. Dot 1 1/2 teaspoons of butter on top of the potatoes.
- Add 1 tilapia fillet to each packet of potatoes. Sprinkle fillet with remaining seafood seasoning. Dot remaining 1 1/2 teaspoons butter on top of the fillets.
- Cut 1/2 of the lemon into thin slices and place 1 to 2 lemon slices on top of each fillet. Seal foil packets and crimp edges tightly.
- Bake in the preheated oven until tilapia flakes easily with a fork, about 25 minutes.
- Open packets carefully and vent steam. Squeeze remaining lemon juice over the tilapia and serve immediately.

- Preheat the oven to 425 degrees F (220 degrees C). Spray a baking dish with nonstick cooking spray.
- Place potatoes, bell pepper, garlic, oil, and 1/2 teaspoon salt in the prepared dish; toss to coat.
