COFFEE CHOCOLATE TRUFFLE KISSES

Steps:
- Break chocolate into small pieces. In a food processor pulse together chocolate and butter until chocolate is finely chopped. In a small saucepan whisk together cream, espresso powder, and salt and bring just to a boil. Pour hot cream mixture over chocolate mixture and pulse until smooth. Transfer mixture to a bowl. Let mixture stand at cool room temperature until just firm enough to pipe, about 2 hours.
- Oil a large baking sheet and line with parchment paper.
- Transfer chocolate mixture to a pastry bag fitted with a 1/2-inch plain tip. Pipe mixture onto baking sheet to form 1- by 1-inch cones, or "kisses." Chill kisses, uncovered, until firm, at least 3 hours, and up to 1 day.
- Into a small bowl sift cocoa powder. Working with 1 kiss at a time, roll in cocoa powder to coat. Kisses keep, in one layer in an airtight container at cool room temperature or chilled, 2 weeks.
CHOCOLATE COFFEE KISS
This is a sweet coffee-based drink, served hot, that I found on the Barista Corner website. It's a great coffee drink to serve at your holiday celebrations, especially Christmas and Thanksgiving.

- In an Irish coffee mug, combine coffee liqueur, Irish cream, creme de cacao and Grand Marnier. Add half of the chocolate syrup, then fill mug with hot coffee; stir gently.
- Top with a dollop of whipped cream, drizzle with remaining chocolate syrup and garnish with a maraschino cherry or a few chocolate shavings.

- In a large bowl, cream margarine with sugar and vanilla until light and fluffy. Mix in flour and walnuts, beating on low speed of an electric mixer until well mixed. Cover, and refrigerate dough for 2 hours, or until firm enough to handle.
- Preheat oven to 375 degrees F (190 degrees C).
- Remove wrappers from chocolate kisses. Shape approximately 1 tablespoon of dough around each chocolate kiss; be sure to cover chocolate completely. Place cookies on an ungreased cookie sheet.
- Bake for 10 to 12 minutes in the preheated oven. While cookies are still warm, roll them in confectioners' sugar.

After some experimenting, I've finally found a way to reproduce the delicious chocolate-covered coffee beans that you often see in coffee shops. This recipes uses 2 two ingredients: coffee beans and chocolate.

- Place 1/2 of the chocolate in a microwave-safe bowl. Microwave on low until almost melted, about 1 minute; do not allow chocolate to burn. Remove from the microwave, stir to melt any remaining pieces, and let cool slightly.
- Drop a small handful of coffee beans into the chocolate and drench until completely covered. Fish out with a fork and drop onto waxed paper, making sure beans are separated. Repeat with remaining beans. Let cool until chocolate is solid, about 30 minutes.
- Meanwhile, melt remaining chocolate in the microwave; do not allow to burn. Stir once and cool slightly, about 2 minutes. Drop a small amount of chocolate-covered coffee beans into the melted chocolate at a time, until completely covered with a second coating. Place on a new sheet of waxed paper and let cool completely, about 30 minutes.

These are nice little biscuits with a butter cream filling in the middle, the recipe is from my BERO book I have had for many years. I love coffee biscuits and cakes but never drink the stuff, don't know why I just don't like it in a drink. I would much rather have these wee biscuits with a cup of tea. you should get about 60 so you will end up with 30 sandwiched together

- Mix flour and sugar and rub in margarine.
- Stir in egg and coffee mix well.
- Shape into balls the size of a cherry and place on a greased baking sheet.
- Sake in a moderate oven (325 350) (165 175) for 15-20 minutes.
- When cold sandwich together with butter icing.
- To make the icing.
- Cream the fat till pale.
- Add the icing sugar gradually and cream together.
- Add the flavouring.

COFFEE KISSES
Beautiful, light and great at an afternoon tea party, these little biscuits are worth their while. Try them if you please!

- Preheat the oven to 170°C/325°F/gas 3.
- To make the dough, combine the flour and sugar in a mixing bowl. Add the butter and rub into the flour mixture using the tips of your fingers, until the mixture looks like fine crumbs.
- Dissolve the coffee in 1 teaspoon of boiling water. Beat the egg until frothy and mix in the coffee. Add to the bowl and stir into the mixture with a wooden spoon.
- Tip the dough onto a well floured work surface and divide into 16 pieces. Flour your hands well then shape each piece into a neat ball. Arrange them well apart on the prepared baking trays (to allow for spreading) and bake in the heated oven for 12 to 15 minutes, until light golden and firm to the touch.
- Leave to cool for a couple of minutes, then transfer to a wire rack and leave to cool completely.
- Make a simple buttercream by beating the butter with the icing sugar and cocoa powder, if using. When very light and smooth, use to sandwich the biscuits in pairs.
CHOCOLATE-DIPPED BEVERAGE SPOONS

- In a microwave-safe bowl, melt milk chocolate chips with 2 teaspoons shortening; stir until smooth. Repeat with white baking chips and remaining shortening. Dip spoons into either mixture, tapping handles on bowl edges to remove excess. Place on a waxed paper-lined baking sheet. Pipe or drizzle milk chocolate over white-dipped spoons and white mixture over milk chocolate-dipped spoons. Use a toothpick or skewer to swirl chocolate.
