Four 6-ounce pieces tilapia fillet
1/4 teaspoon kosher salt, plus more for seasoning
1/2 cup light reduced-fat coconut milk
1/2 cup cilantro leaves, plus more for garnish
1 teaspoon peeled chopped fresh ginger
1/2 teaspoon garam masala
2 garlic cloves
1/2 jalapeno pepper, seeded and chopped
3 cups cooked brown rice, for serving

Steps:

  • Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking pan with canola oil spray. Sprinkle the fish with the salt and place it in the pan.
  • Combine the coconut milk, cilantro, ginger, garam masala, garlic and jalapeno in a blender and pulse until fairly smooth. Pour the mixture over the fish. Bake until the fish is just opaque in the center, about 15 minutes. Garnish with more cilantro and serve with the rice.

¾ cup unsweetened flaked coconut
½ cup coconut flour
sea salt to taste
3 eggs, beaten
4 (4 ounce) fillets tilapia fillets, or more as needed

Steps:

  • Heat coconut oil in a skillet over medium-high heat.
  • Mix unsweetened coconut, coconut flour, and salt together on a plate.
  • Brush egg over each tilapia fillet. Press each fillet into coconut mixture until evenly coated. Gently toss between your hands so any coconut that hasn't stuck can fall away. Place the coated fillets onto a plate while breading the rest; do not stack.
  • Fry fillets in the hot oil until golden brown and fish flakes easily with a fork, 5 to 7 minutes per side.

2 tbsp Coconut Oil ((or olive oil))
1 Bell Pepper (chopped)
1 Onion (yellow) (minced)
3 cloves Garlic (minced)
2 tsp Salt
¼ tsp Ground Black Pepper
2 tbsp Red Curry Paste
15 oz Coconut Milk ((can))
2 tbsp Brown Sugar
4 Tilapia fillets

Steps:

  • Heat oil over medium high heat in a large pot or dutch oven.
  • Add bell pepper, onion, garlic, salt, and black pepper and stir. Cook until onion becomes translucent, about 4 minutes.
  • Drop heat to medium heat, add red curry paste, and stir.
  • Add coconut milk and sugar, and stir until well incorporated.
  • Place tilapia filets into stew and spoon some stew over them until the filets are covered.
  • Let tilapia filets cook until they have turned white and flake easily with a fork. I break my tilapia filets up into small chunks which are easier for my children to eat.
  • Once the fish is cooked, serve warm over white rice.

2 small onions, diced
2 teaspoons kosher salt
2 teaspoons curry powder
1 teaspoon black pepper
1 lb tilapia fillet
14 ounces light coconut milk (Thai Kitchen)
20 ounces pineapple chunks in juice (drained)
1 cup brown rice

Steps:

  • In a small saucepan begin to cook the brown rice.
  • Dice onions and chop broccoli, in a large pan or wok toss with 1 tsp of salt and a few sprays of PAM, and sautee about 5 minutes, remove from heat.
  • Spray another pan with PAM, sprinkle tilapia with 1 tsp salt and 1 tsp curry powder, place in the pan and then pour the coconut milk over the tilapia. Add the rest of the curry powder and pineapple and stir gently. Cook on medium-high heat for 3 minutes, turn the tilapia over gently and cook an additional 3 minutes - or until the fish is fully cooked. Stir in the broccoli and onions and serve over rice .

4 tilapia fillets
1 tablespoon oil (olive oil is fine)
1 -2 tablespoon curry powder
1 cup water
1/4 teaspoon salt
1/2 tablespoon black pepper
1/4 teaspoon chili powder
3 garlic cloves, crushed
1 small onion, sliced
10 ounces coconut milk (use only 1/2)
red pepper flakes (optional)

Steps:

  • Season tilapia fillets with salt, chile powder, and black pepper. Set aside.
  • In iron pot, heat olive oil; add curry powder stirring often. Allow curry powder to practically burn. Add a little water whenever paste becomes too sticky.
  • Add most garlic and onions until well coated.
  • Add coconut milk. Stir. After 1 minute, add fish and remaining garlic and onions.
  • Lower heat and cover for about 15 - 20 minutes.
  • Serve over jasmine or coconut rice.

4 tsp low-sodium soy sauce (use tamari for gluten-free)
1 tbsp brown sugar
2 tsp Asian fish sauce

Steps:

  • Preheat broiler.

4 shallots, finely chopped (about 3/4 cup)
1/2-1 1/2 teaspoon red curry paste
2 cups low sodium chicken broth
1/2 cup light coconut milk

4 (6 ounce) tilapia fillets
5 cups Baby Spinach, steamed
1/2 cup fresh cilantro leaves, coarsely chopped

Steps:

  • In a large saute pan, heat the oil over moderate heat.
  • Add the shallots and cook, stirring occasionally, until beginning to brown, 3-5 minutes.

  • Add the chicken broth, coconut milk, 1/2 teaspoon salt and simmer until reduced to 2 cups, about 5 minutes.
  • Season the tilapia with 1/4 teaspoon salt.
  • Arrange the fish in the pan and gently shake the pan so the fish is coated with the sauce.
  • Cover and cook until the fish flakes easily with a fork, about 7 minutes.
  • Arrange a pile of steamed spinach in the bottom of 4 soup plates.

I created this recipe in an attempt to add some flavor to Tilapia. I enjoy eating Tilapia, but other ingredients are usually needed to make it worth eating. This recipe is fairly quick and painless. I change some of the ingredient amounts depending on my particular cravings for that specific day.

2 tilapia fillets
1 egg
1/4 cup water
1/3 cup cornstarch
1 1/2 cups coconut flakes
1/4 teaspoon curry powder
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 tablespoon peanut butter
2 tablespoons curry sauce (can be bought in stores or can be made by combining coconut milk and green curry powder)
1 teaspoon minced garlic
1/4 teaspoon lime juice
1/4 teaspoon red chili pepper flakes
1/4 teaspoon soy sauce
1 pinch ginger
1 pinch sage
1/4 teaspoon brown sugar (optional)

Steps:

  • In a wide bowl/container, mix coconut flakes, curry powder, garlic powder, paprika (set aside).
  • In a small bowl, mix 1 egg, 1/4 cup water and 1/3 cup of corn starch.
  • Dip the Tilapia fillets in the egg mixture. Use a plastic bag to cover your hands when handling fillets, if preferred. Coat the fillets thoroughly with the coconut flake mixture, especially along the top, as this dramatically improves the appearance of the dish while baking.
  • Bake the Tilapia fillets at 350 degrees for about 12-14 minutes (or however long until the fish is fully white). Use cooking spray or butter the pan so the fish does not stick.
  • While the Tilapia is baking, make the peanut sauce. Mix all of the ingredients listed above. Vary ingredient amounts to your liking. Cool or set aside until the Tilapia is ready.
  • Broil the fillets for a few minutes until golden.
  • Serve the fillets on a plate and scoop the peanut sauce on the side.
