CUPCAKES:
1 1/2 sticks unsalted butter, room temperature
1 1/2 cups granulated sugar
3 eggs
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons vanilla extract
1/4 teaspoon salt
2 ripe bananas, mashed
2 1/2 cup flour
1 1/3 cup whole milk
2 cups Fruity Pebble cereal
BUTTERCREAM FROSTING:
2 sticks unsalted butter, room temperature
2 cups powdered sugar
2 tablespoons malted milk powder
1 teaspoon vanilla extract
More Fruity Pebbles for topping (optional)

Steps:

  • Pre-heat the oven to 350°F. Mix the butter and sugar together at medium speed for about 90 seconds, until fluffy. Add the eggs, one at a time, mixing until creamy. Be sure to scrape down the sides of the bowl so everything gets combined. Add the baking soda, baking powder, salt, and vanilla and mix until the batter is smooth. Then mix in the mashed bananas and beat for 30 more seconds. Alternate between adding the flour and milk, about a half cup of each at a time, beating on med-high speed until the batter is light and creamy and all ingredients have been added. Finally, stir in (by hand, so you don't break up the cereal too much) the Fruity Pebbles. Fill paper-lined cupcake tins 3/4 of the way full. If you'd like, sprinkle some more Fruity Pebbles on top of the batter, and bake for about 22 minutes until the cake is set and has started turning golden brown on the edges. Allow the cupcakes to cool completely before you frost them. To make the buttercream frosting, whip the butter for about 30 seconds, until smooth. Then add the powdered sugar, 1/2 cup at a time and drizzle in about a teaspoon of vanilla extract (a little more, if you like a lot of vanilla flavor). Finally, whip in the malt powder. Once the buttercream is smooth and fluffy, give it a taste to make sure you don't need more malt powder. If the frosting is too thick, you can thin it out with a couple tablespoons of milk. Frost the cupcakes and, for extra flavor and crunch, top them off with even more cereal. There's vitamin D in it-it's good for you!

1/4 cup margarine (1/2 stick)
1 (10 1/2 ounce) package mini marshmallows
1 (13 ounce) package Fruity Pebbles cereal
1 (16 ounce) container frosting (vanilla preferrably, or any other flavor)
mini chocolate chips or M&M', to garnish (optional)

Steps:

  • Lightly grease muffin pans (24).
  • Butter a 4 quart microwavable bowl on place in the microwave on high for 45 seconds or until melted (microwave times vary).
  • Place marshmallows in the melted butter and mix to ensure they are coated with the butter.
  • Place it in the microwave again for 45 seconds, take out and stir.
  • Then return to microwave and allow to cook for another 30 seconds or until melted.
  • Combine cereal to melted mixture and mix well to coat.
  • Firmly pack the cereal mixture into the muffin pans to form cupcakes.
  • Let cool.
  • Remove from pan and decorate as desired.
  • Enjoy!

My daughter found this recipe in a magazine and thought it would be good to make for her daughter's nursery school snacks. So, I helped her make them and they are very colorful for Easter. You can either use the Fruity Pebbles or the Cocoa Pebbles. She used a teflon coated cupcake pan and did not grease it and they came out fine, but if you use a regular cupcake pan, I would lightly grease it like the recipe says. These are very easy to make and the kids will love them.

1/4 cup butter
1 (10 1/2 ounce) package miniature marshmallows (6 cups)
1 (13 ounce) box Fruity Pebbles cereal (8 1/2 cups) or 1 (13 ounce) box Cocoa Pebbles cereal (8 1/2 cups)
1 (16 ounce) can ready-to-spread frosting
candy sprinkles
jelly beans or gumdrop

Steps:

  • In a 4 quart pan, melt the butter on the stove.
  • Add the marshmallows and mix to coat.
  • Continue to heat slowly till the marshmallows are melted.
  • Add cereal and mix to coat well.
  • Press firming into lightly greased muffin tins to form a cupcake using about 1/3 cup for each one.
  • Refrigerate to cool for about 20 minutes.
  • Remove from pans and spread with frosting.
  • Decorate as desired.

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Line a 12 hole muffin tray with patty cases.
  • In a medium sized mixing bowl, sift the flour, baking power and whisk together briefly. In a large mixing bowl, cream the butter and sugar with an electric beater for about 4-5 minutes or until pale and creamy. Add the eggs, one at a time, and beat for a minute or until the eggs are fully incorporated. In a separate jug, add the vanilla extract to your milk.
  • Next, add approximately one third of your flour mixture and half of your milk mixture. Gently fold with a spatula, then add another third of flour and the rest of your milk. Stir and then finally add the last of your flour mixture and the Fruity Pebble cereal. Your cupcake batter should be nice and creamy. Try not to over mix otherwise your cupcakes will be dry.
  • Fill your prepared patty cases with the mixture, ensuring they are around half full. Pop into the oven for approximately 16-18 minutes or until just golden on top and they spring back when lightly touched. Take the cupcakes out of the oven and immediately transfer them out of the tin and onto a wire rack to cool completely.
