Our home economists enhances ordinary deviled eggs by stirring in three different kinds of cheese. A dash of paprika and sprinkle of chives on top add a little color.

6 hard-boiled large eggs
3/4 cup mayonnaise
2 tablespoons finely shredded Monterey Jack cheese
2 tablespoons finely shredded Swiss cheese
2 tablespoons minced chives, divided
1/8 teaspoon ground mustard
1/8 teaspoon pepper
2 ounces process cheese (Velveeta), cubed
Dash paprika

Steps:

  • Cut eggs in half lengthwise. Remove yolks; set whites aside. In a bowl, mash the yolks. Add the mayonnaise, shredded cheeses, 1 tablespoon chives, mustard and pepper. , In a microwave-safe bowl, melt the process cheese on high for 1-2 minutes; stir until smooth. Stir into yolk mixture. , Pipe or spoon into egg whites. Sprinkle with paprika and remaining chives. Refrigerate until serving.

12 large eggs, in their shells
Greens, for lining the serving platter
2 tablespoons mayonnaise
1 tablespoon capers, chopped, plus more for garnish
2 teaspoons spicy brown mustard
2 sweet gherkins, finely chopped
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
2 tablespoons mayonnaise
1 teaspoon prepared wasabi
Kosher salt and freshly ground black pepper

Pickled ginger, for garnish
3 cucumber slices, cut into quarters, for garnish
2 tablespoons mayonnaise
1 teaspoon sesame oil
1 teaspoon toasted sesame seeds, plus more for garnish

Steps:

  • For the hard-boiled eggs: Fill a large, deep saucepan with a tight-fitting lid with 2 inches of cold water. Place the eggs in it and bring to a boil over medium-high heat. Immediately turn off the heat and cover with the lid. Let sit for 12 minutes. Transfer to a colander and rinse under cold water.
  • Once cooled, peel the eggs and slice in half lengthwise. Scoop out the yolks and place 4 yolks in each of 3 bowls. Mash well with a fork.
  • Line a large serving platter with the greens.
  • For the pickles and capers: Add the mayonnaise, chopped capers, mustard and gherkins to one of the bowls of yolks and mash together until thoroughly incorporated. Season with salt and pepper. Divide the filling among 8 egg halves. Top each with some capers and place on the platter.
  • For the wasabi and ginger: Add the mayonnaise and wasabi to the second bowl of yolks and mash together. Season with salt and pepper. Divide the filling among 8 egg halves. Top each with a slice of pickled ginger and a small piece of cucumber and place on the platter.
  • For the sesame carrot: Add the mayonnaise, sesame oil, sesame seeds and carrot to the remaining bowl of yolks and mash together. Season with salt and pepper. Divide the filling among the remaining 8 egg halves. Top each with more sesame seeds and place on the platter.

1 Tbsp parmesan cheese, finely shredded

Steps:

  • Cook eggs until hard boiled.
  • Allow to cool completely and peel.
  • Cut eggs in half and separate the yolk into a small bowl.
  • Add next six ingredients to the egg yolk and mix well.
  • Place shredded cheddar cheese into twelve equal piles onto a baking sheet lined with parchment paper.
  • Broil on low until cheese is melted and golden. Allow to cool.
  • Spoon the mixture into the cooked egg white halves.
  • Top eggs with parmesan cheese and cheddar cheese 'chips'.

1/4 cup mayonnaise
1/4 cup sour cream
2 -3 teaspoons dijon-style mustard
2 tablespoons fresh parsley, snipped
2 tablespoons fresh dill, snipped or 1 1/2 teaspoons dried dill weed
2 tablespoons fresh chives, snipped or 1 1/2 teaspoons dried chives
sea salt, to taste
fresh ground black pepper, to taste
paprika (optional) or cayenne pepper (optional)

Steps:

  • Cut tops off of hard-cooked eggs about 1/3 from the top; gently scoop out yolks with a small spoon. Cut a small thin slice off the rounded bottoms so eggs will sit flat. (Set aside tops for another use.).
  • Place yolks in a bowl; mash with a fork. Add mayonnaise, sour cream and mustard, mix well. Stir in parsley, dill and chives. Season to taste with salt and black pepper.
