- In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed.)

- Preheat oven to 400°F (200°C).
- In a bowl, combine all of the ingredients except the baguette, and mix until smooth.
- Slice the baguette in half lengthwise, then spread the butter mixture evenly on both sides of the baguette.
- Place on a tray lined with parchment paper and bake for about 15 minutes, until cheese is bubbly and starting to brown on the edges.
- Slice, cool, then serve.

GARLIC CHEESE BREAD

- Preheat the oven to 375 degrees F.
- Mix the cheeses with the mayonnaise, 1/4 stick of the softened butter and the green onions. Add the salt and pepper to taste and set aside or keep in the fridge until you need it.
- Melt the remaining 1 stick butter in a skillet over medium-low heat and add the garlic. Cook for a couple of minutes to release the garlic flavor.
- Cut the loaf of bread in half. Brush the garlic butter over each half, making sure it's evenly distributed. Spread the cheese mixture on the loaves and bake until the cheese is hot and bubbly, about 10 minutes.
- Once out of the oven, sprinkle over the chopped parsley. Slice and serve.

- 1. Preheat oven to 350 degrees F. Grease two 9×5-inch loaf pans.
- 2. Grate all of the cheese.
- 3. In a large bowl whisk together the flour, baking powder, salt, dried mustard and Italian herbs.
- 4. Remove a 1/ 2 cup of the white cheddar and 1/2 cup of the Gruyere cheese and a 1/4 cup of the Parmesan and set aside for the topping of the bread. Add the rest of the cheeses to the flour mixture. Using your fingers mix in the cheese so all the cheese is coated in flour.
- 5. In a separate bowl whisk together the beer, sour cream, tomato juice, eggs and worcestershire sauce until thoroughly combined.
- 6. Add the liquid mixture to the dry ingredients and mix with a spatula just till mixed. Do not over mix.
- 7. Divide the batter between the two greased loaf pans and press down with a spatula. Sprinkle the top with the cheese that was set aside earlier.
- 8. Bake for 50 -55 minutes or until done. Allow to cool in the pans for 15 minutes before removing them from the pans. Place on a wire rack to cool.

- To create the starter, combine the water and yeast in a medium mixing bowl. Stir to dissolve the yeast fully. Add the flour to the bowl and stir until the ingredients are fully incorporated. Cover with a cloth and ferment the starter at room temperature for 30 minutes.
- For the dough, combine the water, honey and yeast in the bowl of a stand mixer. Stir to dissolve the yeast fully. Add the shortening, flour, salt, cheeses and fermented starter. Mix on low speed until the dough is fully developed. Remove the dough from the mixing bowl.
- Divide the dough into 2 pieces weighing about 22 ounces each. Set aside any remaining dough and freeze for future use. Roll each piece of dough into a smooth ball. Place the dough on the counter or in a proofing basket and cover with a warm, damp cloth to rest at room temperature for 30 minutes. Preheat the oven to 400°F.
- Form the dough into loaves, cover with a warm, damp cloth and proof at room temperature for 30 minutes.
- Score the loaves with a sharp knife, spray with water and bake for 30 minutes, or until the crusts are a deep golden brown and the middle of the loaves is 190-200°F.
- Remove the bread from the oven and place on a cooling rack for 30 minutes. If the bread was baked in loaf pans, remove the bread from the pans before cooling.
THREE CHEESE AND ONION BREAD (FOR BREAD MACHINE)
A good protein filled bread (perfect for toddlers who only eat a few bites of food at any given meal!) I prefer to dice the cheese, rather than grate it, because then the machine doesn't mash it all up and you get the occasional bite of cheese in the bread... but it works just as well grated! addendum: i've made this recipe a few times since posting, and have found that i've needed to add another 1/4 c. milk, and decreased the salt to about 1/4 tsp. i found that after a few tries as the original recipe that it was a little too dry and didn't rise as much as i'd like. the dryness could be because i live in a super dry climate, so it might not be so for everyone. and i'm sure the yeast issue was because i like a super cheesy bread, and there's a lot of salt in cheese... hope this helps!

- According to manufacturer's directions, place the milk, water, egg, oil, salt, flour and yeast into the bread machine basket in the order given for your machine. Process using the dough cycle.
- When the dough cycle is finished, remove dough to floured board (you may need to knead in extra flour to make dough easy to handle).
- Roll dough into a 18 x 20 inch rectangle. Sprinkle cheeses over dough, leaving a 1/2-inch border (without cheese). Begining at a long end, roll up tightly, pinching seam to seal edges. Place seam down on a large greased cookie sheet.
- With a sharp knife, cut lengthwise down the center of the roll, one inch deep, keeping 1/2 inch free of each end (with no cuts).
- Keeping the cut end on top, fold dough in half lengthwise forming a"U". Cross one side over the other, curving the open ends to form an"8". Pinch the ends to join. Cover and let rise until doubled (45 minutes).
- Preheat oven to 375-degrees F.
- Bake bread for 25-30 minutes or until done.
