SLOW-COOKER GREEN BEAN CASSEROLE
This comforting side dish takes a couple of supermarket short-cuts: Buy pre-sliced mushrooms and canned french-fried onions to save on prep time. The raw cremini mushrooms are thrown right into the slow cooker and release their savory goodness while the green beans cook.

- Combine the green beans, mushrooms and 1 teaspoon salt in a 6-quart slow cooker.
- Melt the butter over medium-high heat in a large skillet. Add the onions and a pinch of salt and cook, stirring occasionally, until the onions are tender and lightly browned, 6 to 8 minutes. Reduce the heat to medium, then add the garlic and cook, stirring constantly, until the garlic is just softened, about 2 minutes. Stir in the flour and stir constantly until it thickens into a paste, about 2 minutes. Add the half-and-half and 1 teaspoon each salt and pepper and cook, whisking occasionally, until thickened, 8 to 10 minutes. Remove from the heat and season to taste with salt and pepper. Pour the sauce into the slow cooker and stir to coat the vegetables. (The sauce will loosen as it cooks.)
- Cover the slow cooker and cook on low until the green beans are tender but not mushy, about 4 hours. Remove the lid and stir. If the green beans look too soupy, cook for an additional 15 minutes uncovered. Season with additional salt and pepper to taste. Transfer to a shallow serving dish and sprinkle with the fried onions. Serve hot.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble when cooled. Wipe out skillet with a paper towel.
- Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add onion and cook until clear, about 5 minutes more.
- Combine cooked bacon, cooked beef, pork and beans, kidney beans, butter beans, ketchup, brown sugar, vinegar, and mustard in a slow cooker. Stir to combine. Cook on High until heated through, about 1 hour.

SLOW-COOKED BEAN CASSEROLE

- Generously cover the beans with cold water and leave to soak overnight, then drain.
- Heat the oven to 160C/Gas 3/fan oven 140C. Cut the bacon rind off in one piece and put it in the bottom of a medium-sized casserole. Add the beans, onion, bouquet garni, garlic and some pepper and bury the meat in the beans. Pour in enough water to cover the beans generously and add the lid. Bake until the beans are very soft and a few start to burst. This can take 1-3 hours, depending on the age and type of bean and the thickness of the pot, so check occasionally to see how they are doing. If the beans begin to dry, add more water. The liquid should have evaporated so that the beans are moist but not soupy. If the liquid is too thin, take the lid off for the last half hour's cooking, or at the end of cooking, boil the pot on top of the stove to evaporate the liquid.
- When the beans are tender, stir in the wine and some salt and pepper. Cover and leave to cool for about an hour, so the beans absorb the wine. Remove the bacon and discard the onion and bouquet garni. Dice the bacon and stir it into the beans. The bacon rind can be discarded, or diced and added to the pot.
- Reheat the beans and, if too much liquid remains, boil to reduce it. Taste, adjust the seasoning and serve.

This a great dish for a crowd--it can be doubled or tripled. Ingredients can be kept on hand and preparation is simple and fast! Also can be made in slow cooker.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, break into medium pieces and set aside. In same skillet, brown beef and onion. Drain fat.
- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon/beef mixture in a large bowl and stir in the ketchup, sugar, vinegar, mustard, baked beans, kidney beans (with liquid) and butter beans (with liquid). Mix well.
- Spoon casserole mixture into a 9x13 inch baking dish and bake in the preheated oven for 1 hour, uncovered.

THREE-BEAN BAKED BEANS (OVEN OR CROCK POT)
This is my summer time dish for all BBQ's and I always double the recipe. If you enjoy baked beans you have to try this one. It's from a '98 TOH and whenever I make it someone always asks for the recipe. I have personally never made it in the oven since the crock pot does just fine and who wants to heat up the house in the summer? When using the crock pot I will take the lid off for the last hour or so (+/-) of cooking - this will thicken it up if you like your beans thick right at serving. Leftovers freeze very well.
