SPICY THREE-BEAN PANTRY CHILI



Spicy Three-Bean Pantry Chili image

This vegetarian chili gets its rich flavor from caramelizing tomato paste and warming herbs, rather than long hours of cooking. You can amp up the heat by using a spicy salsa or some of the adobo paste (though the chile itself is pretty hot). Add corn for some sweetness, or canned hominy for a chunkier and funkier chili.

3 tablespoons vegetable oil
3 tablespoons tomato paste
1 chipotle in adobo, smashed with a fork into a fine paste
3 tablespoons chili powder
1 teaspoon dried oregano
Two 16-ounce jars mild salsa (about 3 1/2 cups)
Three 15-ounce cans beans, such as kidney, black and pinto beans, or your preference, drained (but not rinsed)

Steps:

  • Heat the oil in a medium pot over medium-high heat. Add the tomato paste and cook, smearing and stirring constantly with a heat-proof spatula or flat-edged wooden spoon, until dark and aromatic, about 90 seconds. Add the chipotle, chili powder and oregano, and cook, stirring, for 1 minute. Stir in the salsa and 1 1/4 cup water. Stir in the beans and hominy. Bring to a boil, reduce the heat to medium-low, cover and simmer for 25 minutes, stirring occasionally.
  • Meanwhile, bring 1 1/2 cups water to a boil in a small saucepan with a lid. Stir in the rice, reduce the heat to medium low, cover and simmer until the water is absorbed, about 15 minutes. Remove from the heat and let stand, covered, 5 minutes.
  • Remove the chili from the heat, stir in the cider vinegar and let stand 1 minute. Fluff the rice with a fork, divide it among 6 serving bowls and top with the chili. Serve with pickled jalapenos and tortilla chips, if desired.

One 28-ounce can crushed tomatoes
2 cups water
1 chipotle chile in adobo sauce, seeded and minced
2 teaspoons adobo sauce from the can of chipotles

Salt and freshly ground black pepper
One 15.5-ounce can black beans, drained and rinsed
One 15.5-ounce can kidney beans, drained and rinsed
One 15.5-ounce can pinto beans, drained and rinsed

Steps:

  • Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the cumin and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chipotle and adobo sauce, oregano and salt and pepper. Simmer, partially covered, stirring from time to time, for 30 minutes. Stir in the beans and cook, partially covered, 20 minutes longer. Season, to taste, with salt and pepper.

Adapted from the back of a can of S&W brand tomatoes. My family loves this one, and it's so quick and easy to make. One of my faves, too. The original recipe is kicking spicy, and I had to tone it down for my spice-wimps. They STILL say it is too spicy how I make it. Watch out for those chipotle chilis in adobo sauce. They are extremely hot. I use low sodium tomatoes and low sodium beans whenever possible.

1 lb extra lean ground beef or 1 lb ground turkey breast
1 cup onion, chopped
2 garlic cloves, minced
1 tablespoon chili powder (original recipe called for 2)
1 teaspoon ground cumin (I usually add more of this...for flavor...it's not spicy)
1 (28 ounce) can diced tomatoes
1 tablespoon chipotle chile in adobo, chopped (original recipe called for 3. Buy a can)
1 (15 ounce) can black beans, drained
1 (15 ounce) can pinto beans, drained
1 (15 1/4 ounce) can kidney beans, drained
cilantro (to garnish) (optional)
diced avocado (optional)
sour cream (optional)

Steps:

  • Brown the meat, onion and garlic in a large saucepan over medium high heat, about 3 minutes. Drain.
  • Stir in chili powder, cumin, undrained tomatoes and chipotle peppers. Cook for about 10 minutes or until thickened, stirring occasionally.
  • Add the beans and cook for another 5 minutes.
  • Serve with cilantro, avocado and sour cream, if desired. Corn bread and a nice green salad round out the meal.

Steps:

  • Heat olive oil in a large enameled cast-iron Dutch oven over medium heat.
  • Add onion and cook, stirring often, until softened slightly, about 3 to 4 minutes,
  • Add garlic, stir, and cook for 1 minute.
  • Add mushrooms and celery, stirring often, until celery has softened and mushrooms have lost some of their moisture, about 5 minutes.
  • Add tomato paste and stir to combine. Cook for 1 minute.
  • Add bell peppers, chili powder, cumin, coriander, cayenne pepper, salt and black pepper. Stir to combine.
  • Add tomatoes and chipotle peppers. Stir to combine. Bring to simmer, cover and cook for 15 minutes or until vegetables are almost tender.
  • Add all of the beans, stirring to combine, and cook for an additional 10 minutes, covered.
  • Stir in apple cider vinegar. Serve and garnish to taste (if desired) with any of the garnish ideas or your favourite chili toppings. Enjoy!

1 dried chipotle pepper
2-3 garlic cloves, minced to yield ~1 Tbsp
1/2 large yellow onion
1 each red, yellow, and green bell pepper, diced
1 bunch collard green stems and leaves, finely chopped
1 28 oz can fire roasted diced tomatoes
2 Tbsp chili powder*
1 15 oz can each black beans, kidney beans, pinto beans
Salt and pepper to taste
Sliced avocado ((optional))
Shredded jack cheese ((optional))

Steps:

  • Bring a small pot of 3 cups of water to a simmer. Once simmering, remove from heat and place the dehydrated chipotle pepper in the water and top with a lid. Let steam until the pepper is rehydrated, about 3 minutes.
  • Remove the stem from the rehydrated chipotle pepper, as well as the seeds (reserve a few if you prefer more heat in your chili). Place the chipotle in a blender with 2-3 cups of the steam water and blend until smooth, adding seeds as desired (be sure to taste test so it doesn't become too spicy for your taste).
  • Mince 2-3 garlic cloves and dice 1/2 large onion and 3 bell peppers. Finely chop 1 bunch of collard greens (stems and leaves).
  • Add veggies to a crock pot, along with the pureed chili mixture. Add the 28 oz can of fire roasted diced tomatoes, 2T chili powder, and 3 cans of drained beans.
  • Set crock pot on low for 6-8 hours or on high for 4-6. When ready to eat, you may add water or stock as needed, until it reaches your desired consistency.
  • Season with extra chili powder and salt and pepper to taste. Top with sliced avocado and shredded Jack cheese, or your desired garnishes.
