Healthy Chicken Tetrazzini Recipe. I don't think I've seen more beautiful words. Tender chicken, sweet peas, and savory mushrooms all twirled with noodles and smothered with a creamy, cheese-laced sauce. If that's not heaven, I don't know what it.

3 tbsp unsalted butter, divided
1 lb chicken tenders
8 oz cremini mushrooms, sliced
1/2 medium onion, chopped
2 large garlic cloves, minced
1 1/2 tsp salt, divided
3/4 cup dry sherry
1/3 cup all-purpose flour
2 cups warm or hot 2% milk
1 1/4 cups warm or hot low-sodium chicken stock or broth
1/4 tsp freshly cracked black pepper
1 lb whole-wheat linguine
1 1/2 cups shredded 2% milk sharp cheddar cheese

Steps:

  • Preheat oven to 375 degrees. Grease a 9x9 baking dish with non-stick cooking spray. Bring a large stock pot filled with water to a rolling boil. Add a generous handful of salt. It should taste almost as salty as the sea.
  • Heat a large skillet with high sides (about two-three inches), to medium heat. Add one tablespoon of butter. Season chicken tenders generously with salt and pepepr on both sides. Once the butter has melted, add the chicken. Cook until seared on both sides and cooked through, about 2-3 minutes per side. Remove from the pan, cool and cut into bite-sized pieces.
  • Add the remaining two tablespoons butter to the pan. Add mushrooms, stir and then cook without touching for 2-3 minutes until brown. Stir with a wooden spoon and cook a little bit more until the other side is brown, about 1-2 minutes. Add onion and 1/2 teaspoon salt. Continue to cook until onion is soft and fragrant, another 2-3 minutes. Add garlic, stir and cook another minute.
  • Stir in dry sherry. Bring to a boil and reduce to a simmer. Simmer until reduced by half. Whisk in flour. Cook for one minute. Remove from the heat and slowly whisk in WARM chicken stock, making sure there are no lumps. Slowly whisk in milk, and remaining salt along with freshly cracked black pepper. Return to the heat, bring to a boil and reduce to a simmer. Simmer until thickened, about 5-7 minutes.
  • Once the sauce has simmered for a few minutes and has started to thicken, drop the pasta into the boiling water. Cook until just UNDER aldente. It should have a good bite to it. Drain.
  • When the sauce has thickened. Season to taste with salt and pepper. Add the pasta, 1 cup of the shredded cheese and chopped chicken. Use tongs to combine everything together. Season to taste again with salt and pepper.
  • Transfer to prepared baking dish. Cover with remaining 1/2 cup of cheese. Bake uncovered until hot, bubbly and the cheese has melted, about 20 minutes. Let sit for 2-3 minutes before serving.

1 (16 oz) box linguini (cooked 2 minutes less than al denté according to package directions)
1/2 cup unsalted butter (melted)
1 (8 oz) block cream cheese (softened to room temperature)
2 (10.5 oz) cans cream of mushroom soup
1 (8 oz) container sour cream (room temperature)
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup white wine (can replace with milk)
4 cups cooked and cubed chicken (I used 1 rotisserie (about 1 pound))
1 (8 oz) block mozzarella cheese (shredded)
1/4 cup finely grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees F and grease a 9x13 inch baking dish with cooking spray. Set aside.
  • In a large bowl, mix together butter, cream cheese, soup, sour cream, salt, paprika, pepper, garlic powder, onion powder, and wine until well combined.
  • Use tongs to stir in chicken and noodles.
  • Pour mixture evenly into prepared baking dish.
  • Sprinkle the top with shredded mozzarella, then parmesan.
  • Bake in preheated oven for 30 minutes or until hot and bubbly.

This Tetrazini is very good -- it does not taste like a lower fat version at all. I love chicken tetrazini, but almost all the versions I've seen are made with lots of butter (and therefore saturated fat), so I created this healthy version. I don't care for mushrooms, so I don't use them, but I will list them as an optional ingredient. This recipe makes alot -- I usually use two casserole dishes.

4 cups cooked chicken breasts (cubed)
1 1/2 cups hot water
2 teaspoons chicken bouillon (I use a brand with no MSG)
1 (12 ounce) package whole wheat pasta (angel hair or spaghetti)
1 large onion (chopped)
3 large celery ribs
1 (4 ounce) can sliced mushrooms (optional)
1 cup red pepper (chopped)
1 cup carrot (shredded)
1 (10 ounce) bag frozen peas
1 (10 3/4 ounce) can Healthy Request cream of mushroom soup
1 (10 3/4 ounce) can Healthy Request cream of chicken soup
1 (10 3/4 ounce) can skim milk (use a soup can)
2 cups light cheddar cheese
1 cup parmesan cheese (shredded)

Steps:

  • Prepare pasta as directed on package, set aside.
  • Saute onions, red peppers, celery (and optional mushrooms) in a lightly oiled large pan (preferably a deep skillet, 12" or more).
  • Dissolve the bullion in the hot water to make broth.
  • Stir in soups, broth, peas and shredded carrots and cook until all is heated.
  • Transfer above into large casserole dish(es).
  • Mix in the chicken and cheddar cheese.
  • Sprinkle the parmesan cheese over the top(s).
  • Bake in a 350 degree oven for about 15-20 minutes.

4 -5 cups cooked chicken, cut into large bite-size pieces (I use meat from 3-5 pound fryer, boiled, skinned, deboned and drained)
1 (8 ounce) package spaghetti or 1 (8 ounce) package narrow egg noodles, cooked al dente according to package directions,drained
1 cup chicken broth
1 medium onion, grated
1 can 98% fat-free cream of mushroom soup, undiluted
1/4 cup butter
2 ounces sharp cheddar cheese, grated or shredded (1/2 cup)
1/4 cup butter, melted
2 cups crushed corn flakes

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 1-quart casserole and a 2-quart casserole (or 1 3-quart casserole) with non-stick cooking spray.
  • To melted butter, add onion, soup, cheese and chicken broth and stir to mix.
  • Set aside.
  • In casserole dish, beginning with chicken layer, alternate layers of chicken, spaghetti (or noodles) and cheese sauce, making two layers and ending with sauce.
  • Add corn flake crumbs on top of casserole.
  • Drizzle with melted butter.
  • Bake for 30-45 minutes until hot in center.
  • VARIATION: Substitute 2-3 pounds shrimp, peeled and cooked, in place of chicken.

My MIL made this and my husband LOVES it. This recipe was a necessity for him to marry me I believe. Very cheesy and delicious!! Makes many meals and you can add your favorite veggies, such as mushrooms, etc.

3 -4 boneless chicken breasts
spaghetti noodles, size depending on how many to feed (I use two of the small packages)
1 medium green pepper
1 large onion
1 tablespoon butter
2 (12 ounce) cans evaporated milk
1 -2 lb Velveeta cheese (1 lb. if you would like less cheese)
shredded cheese (optional) or Ritz cracker (optional)

Steps:

  • Boil chicken until thoroughly cooked.
  • Place chicken aside and use broth to cook noodles.
  • Place cooked noodles in rectangular greased pan.
  • Shred chicken on top of the noodles.
  • Chop onions and bell pepper and saute in butter.
  • Layer onions and pepper on top of noodles and chicken.
  • Pour evaporated milk into pan.
  • Chop chunks of Velveeta into milk.
  • CONSTANTLY stir Velveeta in milk until it is a cheese sauce- IT WILL SCORCH!
  • Pour cheese mixture on top of noodles, chicken, onions, and pepper.
  • Bake at 350 for about 30 minutes.
  • If you choose, you can top with Ritz crackers, more cheese, or your favorite topping and then cook for 5 more minutes.
