THICK & MEATY SPAGHETTI SAUCE
As everyone knows by now, most of my recipes come from a "Taste of Home" recipe magazine. This is by far our favorite spaghetti sauce. It is so thick and meaty that sometimes my boys just pour it over a piece of garlic bread and eat it like that!

Steps:
- In a large skillet over medium heat, cook beef and sausage until no longer pink; drain.
- Transfer to a 5 quart slow cooker.
- Stir in green pepper, onion, garlic, tomatoes, tomato sauce, tomato paste, sugar and seasonings; mix well.
- Cover and cook on low for 8 hours or until bubbly.
- Serve over spaghetti.
THICK 'N' HEARTY SPAGHETTI SAUCE

- Spray bottom of 4-quart saucepan with cooking spray; set over medium heat. Add onion, green pepper, celery, carrot and garlic. Cook 10 minutes, stirring occasionally until vegetables are softened. Stir in crushed tomatoes, tomato sauce, parsley, grated lemon peel, basil, oregano and pepper; bring to a boil. Reduce heat to low and simmer 20 minutes until thickened and flavors are blended, stirring frequently and scraping bottom of pan often to prevent sticking. Can be frozen up to 6 months.

Steps:
- In a large pot (I use cast iron), quickly and thoroughly brown the ground beef.
- Drain and add mushrooms, followed by garlic (I use at least a tablespoon in this step), parsley (a lot), oregano, sage, and basil.
- Add tomatoes, sauce, and paste; stir together.
- Cook on med-high for 5-10 minutes, then reduce heat to med-low.
- Allow to simmer covered about one hour, stirring occasionally.
- Add garlic, pepper, basil, oregano, sage, and parsley to taste (also sugar).
- Cook covered on med-low for 2 hours.
- Add more seasoning to taste.
- Cook covered on med-low for another 30 minutes-1 hour.
- At this point, the sauce should be thick, cooked down about halfway.
- Serve with your favorite pasta or on slices of bread with parmesan or cheddar.

HEARTY BEEF SPAGHETTI SAUCE
This is family favorite sauce. It cooks on the stove a couple of hours and makes the kitchen smell delicious. It is thick and filling, just add a salad and slice of garlic bread for a complete meal. If I am in a rush, I use frozen chopped onion and fresh garlic in a jar. Note: you can vary the size cans of tomatoes and sauce to your taste.

- Saute onion and garlic in oil until soft.
- Add beef and mushrooms and saute. Drain fat.
- Add all seasonings and one to one and a half cans tomato sauce, paste and tomatoes and beef consume.

- Heat olive oil over medium high heat. Add 1/2 of the onions and saute until translucent and slightly browned. Add garlic and stir constantly for 1 minute. Add beef and sausage and cook until no red remains. Drain excess fat off of the cooked meat and return to the pan
- Place the remaining onions and red pepper in a blender or food processor and blend until mostly smooth. Add mixture to the garlic, onions and beef and stir to combine, cooking for another minute. Add tomato paste and spices and cook for 1 minute, stirring until combined. Add tomatoes, beef broth, sugar and mushrooms. Stir until combined and add the bay leaves and balsamic vinegar.
- Bring to a boil and then reduce to low and simmer for 1 hour up to 3-4. The longer it simmers, the more flavorful it will get. The sauce will seem watery at first, but as it simmers it will thicken.

- Insert the nanoceramic inner pot, no basket or rack. Turn the Foodi on saute, hi temp, and add ground beef, sausage, and pepperoni. Stir and break up meat as it cooks to crumble it. Cook until no pink (approx. 10 minutes)
- Add onions, green pepper, and mushrooms. Cook another 5 minutes, stirring occasionally to cook evenly.
- Add half the basil and half the dried spices (oregano and Italian seasoning). Add minced garlic. Cook another 5 minutes until aromatic.
- Carefully hand-crush the whole tomatoes into the pot one by one by pushing them through your fingers using your thumb. Do this slowly, or you'll squirt yourself with juice. Dump the remaining juice from the can into the pot.
