This is the easiest mac and cheese you'll ever make. Seriously. I think it rivals the box in both taste and simplicity.

12 oz elbow macaroni ( or penne pasta, cooked according to package directions and drained)
8 oz sour cream
8 oz cheddar cheese (cubed)
salt
black pepper

Steps:

  • Preheat the oven to 350 degrees. Spray a 9x13-inch baking dish with nonstick cooking spray.
  • In a large pot of salted, boiling water, cook the noodles until al dente, according to package directions. Drain.
  • While the pasta is cooking, in a large mixing bowl, combine the sour cream, cheese cubes, and salt and pepper. Stir in the drained noodles.
  • Spoon this mixture into the prepared baking dish. Bake for 15-20 minutes or until bubbly.

1 (1 ounce) package elbow macaroni
3 tablespoons butter
3 tablespoons flour
1/4 teaspoon salt
1 dash pepper
1 cup milk
1 cup shredded cheddar cheese

Steps:

  • Cook the macaroni according to the package directions.
  • Drain and set aside, keeping warm.
  • In a saucepan over medium low heat, melt butter.
  • Add flour, salt and pepper; stir to make a smooth paste.
  • Gradually add milk, stirring constantly.
  • Heat and stir until thickened.
  • Remove from heat; stir in cheese until melted.
  • pour over macaroni and mix well.
  • Makes 4 servings.

Super Budget Macaroni Cheese image

This is a favourite around this house because it is so cheap to make and freezes well. I like to pack this as part of my boyfriend's lunches, along with things like chicken drumsticks, fruit, and corn fritters. Note: there are weeks when we can't afford cheese. Never fear, just leave it out! You should add a little more seasoning in this case, and perhaps a pinch of dried herbs over the top to lend it more character.

500 g macaroni
1 1/2 cups milk
1 tablespoon flour
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup grated cheese
1 -2 cup fresh breadcrumb (reserve the ends of bread if your family doesn't eat them, or keep stale bits ready to whizz in the)

Steps:

  • Cook pasta; drain; set aside.
  • Warm milk in saucepan. When it is just warm to the touch, whisk in half the flour. Let the milk begin to simmer, whisking all the time. You be the judge of the thickness - we like it really thick. If you want it thicker, add the remaining flour and continue to whisk until smooth and thick. Stir through the cheese and the salt and pepper until the cheese is melted. Take off the heat.
  • Pour into a baking dish and sprinkle the breadcrumbs over the top. Bake for 30 minutes at 180 degrees Celcius.

This perfect baked macaroni cheese recipe comes with a creamy cheese sauce, a hint of mustard and uses leftover French stick for its crunchy topping

50g baguette, cut into small chunks
2 tbsp butter, plus 1 tbsp melted
350g spiral or other short pasta
1 garlic clove, finely chopped
1 tsp English mustard powder
3 tbsp plain flour
500ml whole milk
250g vegetarian mature cheddar, grated
50g parmesan (or vegetarian alternative), grated

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Spread the baguette chunks over a baking sheet, drizzle with the melted butter and season. Bake for 6 mins until crisp, then set aside.
  • Boil the pasta for 2 mins less than stated on the pack, then drain. Meanwhile, melt the butter in a saucepan. Add the garlic and English mustard powder, cook for 1 min, then stir in the plain flour.
  • Cook for 1 min more, then gradually whisk in the milk until you have a lump-free sauce. Simmer for 5 mins, whisking all the time until thickened. Take off the heat, then stir in the cheddar and half the parmesan.
  • Stir the pasta and some seasoning into the cheesy sauce. Tip into a large ovenproof dish, or four individual dishes.
  • Scatter over the bread and the remaining parmesan, then bake for 20 mins until crisp and golden. Can be frozen before baking - defrost thoroughly before cooking.
