THICK CRUST PIZZA CRUST
Easy to make thick crust pizza dough recipe. This is one of the easiest ways to make a delicious thick crust pizza for making a pan pizza or any type of pizza you like!

Steps:
- Combine the first 4 dry ingredients in a large bowl. I prefer to use the Kitchen Aid mixer.
- Combine water and oil, then add to the dry ingredients. I use my KitchenAid mixer to mix then use the dough hook to knead for about 5 minutes. You can mix by hand then knead on a lightly floured surface until the dough is smooth and elastic.
- Grease a bowl with olive oil and put ball of dough in it. Toss it around to coat. Cover the bowl with plastic wrap and let rise 20 minutes. I use the same mixer bowl so I don't dirty another dish. In a rush, I sometimes skip this rise. The dough will still be good, just not as thick or pliable.
- Grease a 12" or 16" pizza pan and spread dough out with your hands on the pan. Don't use a rolling pin. Let rise for 15 more minutes.
- Top pizza with olive oil, Italian spices, garlic powder, salt. Then add your favorite pizza sauce, mozzarella cheese, toppings and parmesan cheese.
- Bake at 450 degrees for 11-15 minutes.

THICK CRUST PIZZA DOUGH
This dough is very easy to work with so if you're not a bread or pizza dough expert, this is a great recipe. It has a very nice consistency and tastes great too. Recipe from The Pillsbury Cookbook. I made it with Pizza Sauce and Pizza Deluxe. Cooking and prep time excludes time for dough to rise.

- In a large bowl, combine 3/4 cup flour, salt, sugar, and yeast and blend well.
- In a small saucepan, heat water and oil until very warm (120 to 130) and add to flour mixture.
- Blend at low speed until moistened and beat 2 minutes at medium speed.
- Stir in 1/2 to 3/4 cup of flour to form a stiff dough.
- On a floured surface, knead in 1/4 cup to 1/2 cup flour until dough is smooth and elastic (about 3 to 5 minutes).
- Place dough in greased bowl and cover loosely with plastic wrap and a towel.
- Let rise in warm place (80 to 85 degrees) until light and doubled in size (30 to 40 minutes).
- Punch down several times to remove all air bubbles.
- Prepare as directed in Pizza Deluxe or for your favorite pizza recipe.

PIZZA DOUGH
From America's Test kitchen. Our absolute favorite pizza dough. "This dough can be used for any size pizza with thick or thin crust; simply adjust the cooking time to fit the pizza. Make sure you heat the oven to 500 degrees for thirty minutes before you start cooking. Your tiles or stone need at least that long to heat up; if they're not properly heated, your pizza crust will be thin, blond, and limp. Once the dough for the crust has been topped, use a quick jerking action to slide it off the peel and onto the hot tiles or stone; make sure that the pizza lands far enough back so that its front edge does not hang off. For a cornmeal-flavored dough, substitute three-quarters cup of cornmeal for three-quarters cup of the bread flour."

- Measure 1/4 cup of warm water into 2-cup measuring cup. Sprinkle in yeast; let stand until yeast dissolves and swells, about 5 minutes.
- Add remaining 1/4 cup warm water plus remaining 1 1/4 cups tap water and olive oil.
- Meanwhile, pulse flour and salt in workbowl of large food processor fitted with steel blade to combine.
- Add liquid ingredients (holding back a tablespoon or so) to flour and pulse together. If dough does not readily form into ball, stop machine, add remaining liquid, and continue to pulse until ball forms. Process until dough is smooth and satiny, about 30 seconds longer.
- Turn dough onto lightly floured work surface; knead by hand with a few strokes to form smooth, round ball.
- Put dough into medium-large, oiled bowl, and cover with damp cloth. Let rise until doubled in size, about 2 hours.
- Turn dough out onto lightly floured work surface and use chef's knife or dough scraper to halve, quarter, or cut dough into eighths, depending on number and size of pizzas desired. Form each piece into ball and cover with damp cloth. Working with one piece of dough at a time, shape into rounds as thick/thin as desired. Use your hands to stretch the dough into shape, rather than a rolling pin.
- Transfer to pizza peel that has been lightly coated with semolina, brush dough very lightly with olive oil before topping and cooking.
- Use the following guide to determine cooking time for pizza crust with topping but without cheese. All pizzas need to be cooked an additional two or three minutes after adding cheese, or until cheese is completely melted.

- 14-inch pizzas (Master Recipe makes 2) - 7 to 8 minutes.
- 12-inch pizzas (Master Recipe makes 4) - 5 minutes.
- 8-inch pizzas (Master Recipe makes 8)- 3 minutes.

MOZZARELLA STICK STUFFED CRUST PIZZA
We took Detroit's square deep-dish style pizza to a whole new level by stuffing the crispy crust with cheese and pepperoni. In fact, the whole pizza is loaded with it along with a hearty meat sauce that you can make while the pizza bakes.

- For the pizza: Put the pizza dough in a large bowl and coat with the oil. Cover the bowl with plastic wrap and let it sit in a warm place until slightly puffy and at room temperature, about 30 minutes.
- Spread the butter all over the inside of a metal 8-by-8-inch baking pan and put the dough in the middle. Starting from the middle of the dough, and using your fingertips, push the dough out to the corners of the pan and all the way up the sides.
- Make a pepperoni border (slightly overlapping the meat) around the bottom edge of the dough (about 8 pepperonis per side). Put 1 cheese stick on top of the pepperoni on each side, then fold down the dough from the edges of the pan to cover them. Push the dough with the pepperoni and cheese inside back tightly against the sides of the pan. Seal the dough around the pepperoni and cheese by pressing and pinching the dough together. You now have a stuffed crust. Cover the dough in the bottom of the pan (but not the crust) with the remaining pepperoni.
- Pull each of the remaining 4 cheese sticks into 4 long pieces. Put half the cheese pieces evenly on top of the crust along the edges of the dough so that they are touching the sides of the pan. Put the remaining cheese pieces over the pepperoni in the middle. Sprinkle the entire pizza with Parmesan. Cover with plastic wrap and keep in a warm place until puffy, about 30 minutes.
- Position an oven rack in the bottom third of the oven, put a baking sheet on the rack and preheat the oven to 500 degrees F. Put the pizza on the preheated baking sheet and bake until edges are dark golden and the cheese is melted and bubbling, 15 to 20 minutes.
- Meanwhile, make the meat sauce: Heat the oil in a small saucepan over medium-high heat until shimmering. Add the sausage and cook, breaking it up with a wooden spoon, until lightly browned, about 4 minutes. Add the garlic, bell pepper and onion and cook, stirring occasionally, until the moisture has evaporated from the pan and the onion is soft, about 3 minutes. Add the tomato paste, 3/4 cup water, a pinch each of red pepper flakes and salt and several grinds of black pepper. Bring to a simmer, reduce the heat to medium-low and cook, uncovered, stirring often, until thick, about 5 minutes.
- Remove the pizza from the oven and loosen the sides and bottoms from the pan with a metal spatula. Slide the pizza onto a cutting board and spoon the sauce in the center of the pizza. Sprinkle with more Parmesan and cut into squares for serving.
PIZZA - HOMEMADE, THICK CRUST
I found this recipe in one of my Amish Cookbooks "Cooking with the Horse and Buggy People". It makes a soft, thick crust that my family loves. My seven-year old son rated it as "1,000 thumbs up". This is a doubled version of the recipe to make 2 pizzas. If you don't like an extra-thick crust, use 1/2 of this recipe for 2 pizzas.

- Preheat oven to 425 deg F.
- Mix together all the dry ingredients. Add the warm water and oil, mix well. Knead dough a few times on a lightly floured surface. Put dough back in bowl, and lightly coat dough with oil. Cover and let rest or 5 minutes. While dough is resting, mix together all ingredients for the pizza sauce.
- Divide dough in half, and press each half into an oiled pizza pan. Cook dough for 2 minutes, then take out and let cool. Put sauce then desired toppings on pizza. Cook for 18-20 minutes or until crust is lightly browned and cheese is melted.

My family loves homemade pizza and using my bread machine to make the dough really takes the work out of it. This recipe make a soft thick crust. Sometimes I sprinkle the crust with garlic salt to add even more flavor. Prep time does not include cycle time, as bread machines vary.

- Layer in bread pan according to manufacturer's recommendations.
- Select'dough' setting.
- When dough cycle is done, pat dough into greased 12x15-inch jelly roll pan.
