EASY BROCCOLI CHEESE SOUP
Recipe video above. This Broccoli Soup is a cream of broccoli soup that's thick and creamy, with a great hit of cheese! It's creamy whether you make it with or without cream, though the cream does add an extra edge of luxury. Don't forget the hot crusty bread for dunking!

- Melt butter in a large pot over medium high heat. Add onion and garlic, saute for 2 minutes until onion is softened.
- Add broth/ water, broccoli, potato, salt and pepper. Bring to simmer, then place the lid on, turn the heat down to medium high and cook for 20 minutes or until the broccoli is soft.
- Turn stove off (but leave on stove). Puree using a stick blender until smooth (Note 2).
- Stir in cream, then add cheese a handful at a time, stirring in between to melt.
- Taste and add more salt if desired.
- Ladle into bowls. Drizzle with cream and top with extra grated cheese, if desired.

- In a large pot heat olive oil over medium heat. Add in the onion and cook for several minutes until softened. Add in the garlic and stir and let cook about 15 seconds or until fragrant.
- Add in the broth and milk. Stir to combine. Add the cauliflower florets and seasonings. Bring to a simmer, cover and let simmer about 10 minutes until the cauliflower is softened and easily mashed with the stirring spoon.
- Turn the heat off, remove the bay leaf, and using an immersion blender, blend the soup until the cauliflower is all pureed and no large chunks remain. (If you don't have an immersion blender you can carefully transfer the soup to a blender or food processor to blend, then return to the pot.)
- Turn the heat back to medium heat, add the broccoli and bring soup back to a simmer. Cover and let cook another 10 minutes.
- Once the broccoli is softened and easily mashed, then again turn the heat off and using the immersion blender, blend the broccoli to desired consistency. I prefer no large chunks in my soup, and to make it nice and creamy.
- Once blended, turn the heat back to low, add the cheese and stir until the cheese is melted.
- Serve warm and enjoy! Top with additional cheese if desired.

THE BEST BROCCOLI-CHEDDAR SOUP
This outstanding broccoli-cheddar soup is rich, cheesy and packed with flavor. We decided to puree just over half the soup which makes it extra thick and creamy, and left the remainder chunky so there are broccoli bits in every bite. Gild the lily with more shredded cheese on top to satisfy your comfort food craving.

- Melt the butter in a large saucepan or Dutch oven over medium-high heat. Add the onion, carrot and garlic and cook, stirring occasionally, until just tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, broccoli, bay leaves, nutmeg, 1/2 teaspoon salt and few grinds of black pepper Bring to a boil, then reduce to medium-low and simmer, uncovered and stirring occasionally, until the broth has thickened and the broccoli is very tender, about 15 minutes.
- Meanwhile, prick the potato all over with a fork and put on a microwave-safe plate. Microwave on high until tender, flipping halfway through, about 6 minutes. Let cool, then peel. Use a fork or potato masher to mash until crumbly.
- Reserve 2 cups of the soup in a liquid measuring cup and discard the bay leaves. Let the remaining hot soup cool for 5 minutes or so, then transfer it to a blender, filling no more than halfway. Add the mashed potato. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters, and pulse until very smooth.
- Stir the pureed soup and reserved 2 cups of soup back into the pot. Whisk in the cheese until melted and smooth. Season with salt and pepper. Ladle into serving bowls and top with more shredded Cheddar.
BROCCOLI CHEESE SOUP
This is a great, very flavorful soup. Good for serving at luncheons or special gatherings with a quiche. To make this soup a little fancier, add 1 cup sliced mushrooms and 1 cup white wine with the onions.

- In a large pot over medium heat, cook the onions in the margarine until soft.
- Stir in the flour and cook (but do not brown) for 1 minute, stirring frequently.
- Whisk in the milk, reduce heat and stir occasionally.
- Meanwhile, chop the broccoli florets into small pieces, place in a small saucepan with the broth (or water) and bring to boil over medium-high heat. Reduce heat to medium-low, cover and simmer until tender (about 6-8 minutes).
- As the milk mixture thickens, stir in the slices of American cheese and season with salt and pepper to taste.
- When the broccoli is tender, add it (including the cooking liquid) to the thickened cheese mixture. Stir well to combine and serve immediately.

This recipe came from my husbands Uncle Robbie, who is a great Cook. We were visiting him in Memphis on a cold and snowy day gathering groceries for the next few days. I mentioned how great a bowl of TGI Fridays broccoli cheese soup would be. The next thing I know we gathered the ingredients and were savoring this soup. I am so glad we did not go to the restaurant!!

- Steam Broccoli by either putting in Microwave safe dish with lid and a small amount of water, or on stove in a covered sauce pan and small amount of water.
- Cook just until soft.
- Oil skillet 1/8" in bottom.
- Heat, then add 3 TBS Butter.
- Add 2 Tbs Flour, chopped Green onion bottoms and ground Pepper.
- Cook until Yellow in color, just enough so the flour is not raw.
- Add 2 Cans of Chicken Broth.
- Stir quickly, using whisk if you have one.
- Add Steamed Broccoli and any pan liquids.
- Add Green Onion tops, and Simmer 15-20 minutes on Med heat.
- This will slightly reduce liquid and impart flavors. The broccoli breaks apart and "makes" the soup. If you would like whole pieces of broccoli, keep some out to add at the end. This way they will not overcook.
- Reduce heat.
- Add Colby and American Cheeses.
- Cook on low 1 minute.
- Add 1 Cup Half and Half slowly, so it will not clump.
- Here you must watch temperature, so keep it on low.
- Cook 10 minutes.
- Add Cornstarch to water and stir.
- Pour in 1/2 of cornstarch mixture and stir.
- Then pour in 2nd half of mixture and stir.
- Turn heat off and stir until thick.

- Bring cream cheese to room temperature ( I microwave it on 4 for 1-1.5 minutes.)
- Pour broth and cream cheese into slow cooker, heat till smooth. Meanwhile, in a pot sautee onion in 2T. butter till almost transparent.
- Then add thawed broccoli and cook till tender.
- Add broccoli/onion mixture to slow cooker.
- Pour in cream and 2 cups of cheese.

- Melt 2 tablespoons butter in medium sized stock pot, and sauté onion, garlic and celery until tender.
- Add broccoli and broth; cover and simmer for 10 minutes.
- Purée soup (I use a hand blender) or mash with potato masher.
