I attended a Boy Scout pot luck with my son several years ago and was introduced to these heavenly potatoes. The Scout leader was kind enough to share. It is a recipe that is hard to mess up but yet is delightful enough to serve at a formal dinner party. We seldom have leftovers and when we do my family fights over who gets to eat them. It is an easy recipe to decrease or increase depending on the needs of your family.

2 1/2 lbs potatoes, peeled and cubed
1 (16 ounce) carton sour cream (This can vary, please read below)
1/4 cup butter or 1/4 cup margarine
1 -2 cup shredded colby cheese or 1 -2 cup cheddar cheese (optional)
salt
pepper
cooking spray

Steps:

  • Place peeled and cubed potatoes into a medium size saucepan.
  • Cover with water,place on stove and cook on medium heat until fork tender, approximately 10 to 15 minutes depending on the size of cubes and type of potato.
  • Remove from heat and drain any remaining water.
  • Place potatoes into mixing bowl.
  • Add butter and start to whip potatoes with mixer set on 7 or 8.
  • Add sour cream slowly and whip until smooth and creamy.
  • (The amount of sour cream may vary depending on the type of potato used, Yukon gold uses all, some other softer potatoes do not need all of the sour cream.) Pour potatoes into a cassole dish sprayed with cooking spray.
  • Top with as much cheese as desired.
  • Bake at 350 for approximately 20 minutes or until cheese bubbles and edges start to brown.
  • Remove from oven and let sit for five minutes.
  • If you are serving a meat that has a gravy, then leave off the cheese but still bake the potatoes until bubbly.

2 1/2 pounds Yukon gold potatoes, well scrubbed and cut into quarters
Kosher salt
1 stick unsalted butter
3/4 cup half-and-half
1 cup shredded smoked gouda
Freshly ground pepper
1/4 cup thinly sliced chives

Steps:

  • Slip the potatoes into a large pot of cold salted water and bring to a boil. Reduce the heat and simmer until tender, 15 to 20 minutes.
  • Meanwhile, heat the butter and half-and-half in a small pot until the butter melts and the mixture is hot.
  • Once the potatoes are cooked, drain well in a colander and then return them to the pot. Turn the heat back on to low and stir the potatoes to "dry" them. Mash the potatoes until smooth and stir in the hot half-and-half and butter. Add the shredded cheese by the handful, stirring to melt, and season generously with salt and pepper. Stir in the chives. Serve immediately.

5 pounds Idaho russet potatoes, peeled and cut into 1-inch pieces
Kosher salt
6 ounces cream cheese
1 stick (8 tablespoons) butter, softened, plus more for greasing dish
1 cup half-and-half, warmed
1/2 tablespoon cracked black pepper
2 cloves garlic, zested
1/2 stick (4 tablespoons) butter, melted
1/4 cup minced fresh chives
2 tablespoons fresh parsley, minced

Steps:

  • For the mashed potatoes: Add the potatoes and 1 tablespoon salt to a large saucepan and cover with water. Bring to a boil and cook over medium-high heat until fork-tender, about 15 minutes. Drain the potatoes and set aside to dry.
  • Whip together the cream cheese and butter in a large bowl with a hand mixer on medium speed until thoroughly blended, about 2 minutes. Add the still-warm potatoes alternating with the half-and-half. Whip until blended. Add in the pepper and garlic and season with salt to taste.

Steps:

  • Put the potatoes in a large saucepan, cover with cold water by about 1 inch and add 2 tablespoons salt. Bring to a boil, uncovered, over high heat, and then reduce the heat to medium-high and simmer briskly until fork tender, about 45 minutes. Drain the potatoes, reserving 1/2 cup of the water. Quarter the potatoes and pass them through a food mill or ricer back into the pan. (Peel them first if you are using a ricer). When the potatoes are almost done, heat the buttermilk in a small saucepan over medium-high heat to just under a simmer. 1 kg floury potatoes (like Maris Piper), cut into chunks
50g Yeo Valley Organic salted butter, plus 1 tbsp
50g whole milk

Steps:

  • Tip the potatoes into a large pan, cover with cold water and sprinkle with a generous pinch of salt. Set the pan over a high heat and bring to the boil. Once boiling, reduce the heat to a simmer and cook for 15-20 mins until the potatoes are very tender - they should be able to be easily pierced with the tip of a knife. Drain well, then return to the pan and leave to steam-dry for 5 mins.
  • Pass the potatoes through a ricer into a large bowl for a lump-free mash (you may need to do this in batches). Alternatively, mash with a potato masher until smooth, then press through a sieve using the back of a spoon to get rid of any remaining lumps.
  • Tip the 50g Yeo Valley Organic salted butter, the milk and some seasoning into the bowl with the hot mash.   • In a large stock pot fill with water and bring to a boil.
  • While you are waiting for the water to boil, skin and quarter potatoes (depends on size) Put taters in the boiling water until mildly tender (time depends on lots of time and has never been the same, but start looking at them after 30 min) Use a potato ricer*** (works lots better and is the key of the recipe) or masher to compress the potatoes into a large serving bowl.
  • Add the butter, pepper and season salt.
  • Use a whisk or hand mixer to blend ingredients and make taters smooth.
  • Add cream to the point, while stirring, that the taters have a great consistency.
  • You can add more pepper, garlic, salt to taste if wanted.
  • I sometimes bake the potatoes about 20 minutes in the oven at 300°F after the fact to blend the flavor beautifully.
