FLOURLESS CHOCOLATE CAKE
This flourless chocolate cake is fudgy, rich, and perfect if you're baking for gluten-free guests. I like to finish it with fresh raspberries and a little powdered sugar to remind us of snow.

- Preheat oven (convection if possible) to 325 degrees F. In a heatproof bowl fitted over a pot of simmering water, melt the butter and chocolate, stirring occasionally. Meanwhile, prepare the ramekins with nonstick spray. Set aside.
- In a stand mixer, beat the egg whites with 1 tablespoon sugar until soft peaks begin to form. Meanwhile, add cocoa powder to the melted chocolate-butter mixture and stir to combine. Add the egg yolks and stir again to combine. Set aside. When the egg whites are silky, with soft peaks, slowly add the remaining sugar. Then, using a spatula, gently incorporate the whites into the chocolate mixture. Hold the bowl with one hand and carefully spin it with the other, folding the batter the entire time.
- Evenly divide the batter into ramekins, place on a baking sheet (for easy handling and even baking), and bake 15 minutes.
- Cakes are done when a tester inserted into the center of the cake comes out clean. Cool several minutes, then serve in the ramekins, garnished with powdered sugar and raspberries. Or un-mold by placing the ramekins directly over a stovetop flame for several seconds to loosen, then invert them onto a serving plate and garnish.
FLOURLESS CHOCOLATE CAKE

- Preheat the oven to 325 degrees F. Spray a springform pan with cooking spray and line the bottom with a circle of parchment. Coat the top of the paper with the spray.
- Melt the chocolate and butter in a double boiler, stirring in 45-second intervals to avoid burning. Set aside to cool for several minutes.
- In the bowl of a mixer, beat the granulated sugar, brown sugar and eggs until fluffy. With the mixer on low, add the cocoa powder, vanilla and salt. Slowly drizzle in the cooled chocolate mixture and mix until just combined.
- Pour the batter into the pan and smooth the top. Rap the pan on the counter a couple of times to release any trapped air bubbles. Bake until just set on top, about 50 minutes. Remove and allow to cool completely, then chill in the refrigerator for at least 2 hours or overnight.
- Just before serving, remove the cake from the pan and place it on a platter. Sprinkle the top with sifted powdered sugar.

- For the cake: Spray an 8-inch square cake pan with cooking spray, then line with parchment, allowing the parchment to hang over the sides. Spray the parchment paper with cooking spray to prevent sticking. Preheat the oven to 350 degrees F.
- Place the cookies and baking powder in a food processor and process until fine crumbs form. With the food processor running, slowly drizzle in the milk. Continue to process until you have a smooth batter, about 2 minutes.
- Pour the batter into the prepared cake pan and bake until a toothpick inserted in the center comes out clean, 20 to 22 minutes.
- For the icing: Meanwhile, combine the powdered sugar and milk in a large bowl. Whisk until smooth, then set aside.
- Allow the cake to cool slightly in the pan before carefully removing it from the pan using the parchment overhang and placing it on a platter.
- Allow to cool completely, about 30 minutes. Pour the icing over the top and spread it all over. Top with the sprinkles, then slice and serve.
FLOURLESS CHOCOLATE CAKE

- Preheat oven to 325 degrees F. Spray a 9 by 2-inch spring form pan with nonstick spray.
- Put the chocolate, butter, and salt in a large microwave safe bowl. Melt in the microwave on 75 percent power for 2 minutes. Stir and microwave again until completely melted, about 2 minutes more. Alternatively, put the chocolate and butter in a heatproof bowl. Bring a saucepan filled with an inch or so of water to a very slow simmer; set the bowl on the pan without touching the water. Stir occasionally until melted.
- Beat the eggs and sugar with a standing or handheld mixer until light and thickened, about 8 to 10 minutes. Fold the melted chocolate into the whipped eggs until evenly combined.
- Pour the batter into the prepared pan and bake until a toothpick inserted into the center comes out wet but not gooey, about 1 hour and 25 minutes. Remove cake from the oven and cool on a rack.
- When ready to serve remove ring from spring form mold. Dust cake with confectioners' sugar or cocoa powder. Serve with whipped cream or ice cream if desired.
- Beat the cream and vanilla in a chilled non-reactive bowl with a whisk or an electric mixer just until they hold a loose peak. (Lift the beater from the cream and look at the shape of the peak at the end of the whisk; it should hold a lazy curve.) Sift the sugar over the cream and continue to beat just until it holds a soft peak. Take care not to over beat the cream or it will be look curdy. Serve, or refrigerate covered for up to 4 hours.
