THE BEST MEATLOAF I'VE EVER MADE

The Best Meatloaf I've Ever Made image

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

Time 1h25m

Yield 12

Number Of Ingredients 14

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

CLASSIC MEATLOAF

Classic Meatloaf image

Good meatloaf is about as comforting as comfort food gets. Thankfully, meatloaf doesn't have to be complex to be good. It just needs to be tender (from breadcrumbs soaked in milk and gentle handling) and flavorful (from onion, garlic, and ketchup).

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes     Ground Beef Recipes

Time 1h10m

Number Of Ingredients 9

3 slices white sandwich bread
1/3 cup whole milk
1 1/2 pounds ground beef chuck
1/2 pound ground pork
1/2 medium onion, grated
2 garlic cloves, minced
1 large egg
1/2 cup ketchup
Coarse salt and ground pepper

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
  • Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).
  • Place meat mixture on prepared baking sheet, and form into a loaf about 9 inches long and 4 to 5 inches wide.
  • Bake, brushing twice with remaining 1/4 cup ketchup during baking, until an instant-read thermometer registers 160 degrees, 45 to 55 minutes. Let meatloaf rest 10 minutes before slicing and serving.

THE PERFECT MEATLOAF

The Perfect Meatloaf image

Super moist meatloaf packed with tons of flavor. Simple ingredients and effortless to make. Once you try this recipe, you will never try any other.

Provided by Ryda Mae

Categories     Meatloaf

Time 1h

Yield 8 serving(s)

Number Of Ingredients 12

3/4 cup whole milk
6 slices white bread
2 lbs ground beef
1 teaspoon salt
fresh ground black pepper
1/2 diced onion
4 beaten eggs
10 slices bacon
1 1/2 cups ketchup
1/4 cup brown sugar
1 teaspoon dry mustard
Tabasco sauce (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Pour milk over the bread slices. Allow it to soak in for several minutes.
  • Place the ground beef, milk-soaked bread, salt, and black pepper in a large mixing bowl. Add in your beaten eggs.
  • USE YOUR HANDS and git in there, mix it up well.
  • Form into a log. Hint: don't "smoosh" it down to tight, that just compacts the meat and tends to make for a dense er heavy meatloaf. I honest and truly believe THIS step was the defining factor in the most juiciest meatloaf I have ever eaten.
  • Lay bacon slices across the top, width wise, tucking the ends underneath the meatloaf.
  • Spread a good amount of sauce onto your loaf, leaving a little for your second application later in cooking process.
  • Bake for 45 minutes, then slather the rest of the sauce over the top.
  • Bake for 15 more minutes or so, you can raise oven temperature to 400 after the second application,.

THE BEST CROCKPOT MEATLOAF

The Best Crockpot Meatloaf image

The Best Crockpot Meatloaf is a great way to enjoy classic comfort food, with less stress, and dinner is ready when you get home!

Provided by The Chunky Chef

Categories     Main Course

Time 6h15m

Number Of Ingredients 14

2 lbs. ground beef
1 large yellow onion, finely minced (divided)
2 boxes (6 oz each) dried stuffing mix (I like the savory herbs variety)
1 1/3 - 1 1/2 cups whole milk
2 large eggs
2 Tbsp glaze (see below)
1 tsp kosher salt
1/2 tsp black pepper
1 1/2 cups ketchup
1/4 cup light brown sugar
2 Tbsp finely minced onion
1 Tbsp yellow mustard
2 tsp white vinegar
1/2 tsp black pepper

Steps:

  • Tear off a large strip of aluminum foil (heavy duty works well), and press it into the bottom and up two of the sides of a 6 quart or larger slow cooker. Spray lightly with non-stick cooking spray, then set aside.
  • Combine all ketchup glaze ingredients in a small mixing bowl and whisk to combine. Set aside.
  • Add ground beef, all but 2 Tbsp of the minced onion, stuffing mix, milk, eggs, 2 Tbsp glaze, salt and pepper. Use your hands to mix until just combined.
  • Shape into an oval-like shape and place into the foil lined crockpot. Top with ½ cup of the glaze, cover, and cook on LOW for 6 hours.
  • When finished cooking, carefully lift out the meatloaf, using the foil overhang, and place on a baking sheet. Top with 2/3 cup of the glaze and broil until glaze is sticky and bubbly.
  • Serve sliced, with remaining glaze sauce served on the side for drizzling.

MAKE PERFECT MEATLOAF EVERY TIME WITH THESE ... - TODAY.COM

From today.com
Estimated Reading Time 6 mins
  • Use high-fat meat. The leaner the meat, the dryer and grainier the meatloaf. For an all-beef meatloaf, always use a higher-fat cut, at least 15 percent.
  • Add moisture at every step. Don't skip adding eggs, ketchup, tomato paste, mustard, Worcestershire, barbecue sauce or some combination of wet seasonings.
  • Use soaked crustless bread. For a meatloaf with beef, pork or veal, soak the bread in milk first. For a ground turkey meatloaf, which needs a boost of fat, soak the bread in cream.
  • Sauteed vegetables are key. This one extra step makes a huge difference. Sauteed veggies add flavor, texture and moisture. Try a mirepoix, a fancy French word for a combination of carrots, celery and onion.
  • Don't play patty cake with the meat. Overmixing will make a meatloaf dry and dense. Start by stirring the wet ingredients together. Then add the sautéed veggies.
  • Taste-test the meat mixture. No, it's not advisable to eat raw meat (although many chefs might use this method). Since the only thing worse than a dry meatloaf is a bland one, take a moment to fry up a tiny bit of the mixture — perhaps the size of a teaspoon — to check it for seasoning.
  • Give the meatloaf space in the pan. Yes, there is definitely something satisfying about filling a baking pan to the edges with meat goo. Here's the thing: baking meatloaf in a loaf pan will result in a meat brick.
  • Glaze it up. Even a meatloaf made with the most amazing, high-quality meat in the world should have a jazzed up top. Straight ketchup works in a pinch, but chili and barbecue sauces are also great alternatives.
  • Let it rest. Just like a roast, it's important to let a meatloaf rest for at least 10 minutes (tented with foil to keep it hot) before slicing. It helps the loaf set up for easier slicing and, most importantly, it locks in those luscious, precious juices.

THE 7 SECRETS TO A PERFECTLY MOIST MEATLOAF

From thespruceeats.com
  • Fat Is Your Friend. No matter which meats you decide to use, the right ratio of lean meat to fat is a critical factor in determining the texture and moisture of your meatloaf.
  • Vegetables Are Your Other Friends. By adding finely diced or pureed aromatic vegetables to your mixture, you are adding additional moisture into the meatloaf.
  • Use Enough Filler. The function of breadcrumbs in meatloaf is to absorb and retain the juices so you have a moister loaf. Meat by itself will simply drain away the juices and end up dry.
  • Do Not Over Mix or Compress the Meat. Mixing your ingredients too much is a very common mistake that can really make for meatloaf with a tough, dry texture.
  • Slow and Low Is the Way to Go. Some recipes have you cook your meatloaf at temperatures as high as 425 F. Noted food authority Alton Brown says that the ideal oven temperature for a moist meatloaf is 325 F. If the oven is too hot it will reduce the cooking time, but it tends to dry out the meat.
  • Use a Digital Thermometer to Determine Doneness. If you cook your meatloaf too long, it will become dry. But it needs to reach a safe temperature for food safety, so you don't want "rare" meatloaf.
  • Let Your Meatloaf Rest. You may be used to letting steaks and roasts rest for 10 minutes before slicing or serving. Resting is also beneficial for meatloaf.
