What could possibly get us through the winter of our discontent better than the warm embrace of melted cheese nestled between perfectly crisped bread? That's right: Nothing. I like to use a mixture of semihard and semisoft cheese here. my favorite duo is equal portions of smoked Gouda and Gruyere. Fontina and Asiago are good, too. Could you use one by itself? Sure, but working with combinations will give you the best marriage of flavor and texture. But hey, at 3 a.m., sharp cheddar will do just fine. This recipe first appeared in Season 2 of Good Eats.

- Place two 10-inch cast-iron skillets over high heat for 5 minutes.
- Meanwhile, spread the mustard on one slice of bread. Distribute the cheese evenly over the mustard, season with pepper, and top with the second slice of bread. Brush the bread surface with the clarified butter. Go for even coverage, but don't soak the bread or it won't brown.
- When the pans are hot, kill the heat and place the sandwich, top-side down, in the middle of skillet number 1. Brush the newly exposed bread face with butter and lay the bottom of skillet number 2 right down on top of the sandwich. Wait. In 3 to 5 minutes, you will hear the sizzle of melted cheese oozing out into the pan. (If you don't, you went skimpy with the cheese.)
- Gently remove the top skillet and use a flat metal spatula to remove the sandwich to a waiting cutting board and wait 60 seconds. You will be hungry, so at this time you may want to examine skillet number 1 for toasty little bits of cheese, which you can hungrily devour. When 60 seconds is up, you may wish to cut the sandwich in half with a serrated knife. It won't make the sandwich taste any better, but there's something about biting into that cut side that's very satisfying.

- Spread mayo on one side of each piece of bread.

Steps:
- Spread 1 tbsp of butter on one side of each slice of bread.
- With butter side down, add cheese and then fold the sandwich closed, leaving the cheese on the inside and butter on the outside.
- In a skillet over medium heat, melt ½ tbsp of butter. Reduce heat to medium-low and add the sandwich. Cook for about 2 minutes, however the key is to attend to the sandwich closely to achieve perfection.
- Flip the sandwich to toast the reverse side once the cheese begins to melt and the down facing side begins to brown.
ROASTED PEPPER & PESTO GRILLED CHEESE
Steps:
- 1. Heat skillet over medium heat. Spread pesto on the inside of one bread slice and red pepper sauce on another. Place cheese in between two slices. Spread mayonnaise on the outside of both slices of bread. 2. Place assembled sandwich in pan and cook until golden brown, about 3-5 minutes. *Optionally: Sprinkle and press grated parmesan onto mayonnaise spread for added flavor and crunch.

- Pick the best bread. Will mediocre bread be improved when heated and layered with cheese? Yes, definitely. But using better bread will take your grilled cheese to a whole new level.
- Butter — or mayo — up! Standard procedure for grilled cheese is to butter the outsides of the bread before placing it in the pan — for more flavor, butter both sides, inside and out.
- Pre-toast the bread. Grilled cheese is supposed to be quick and fuss-free and this does add an extra step, but it’s well worth the effort and hardly any trouble.
- Use the right cheese. There’s absolutely nothing wrong with using American cheese — it’s a classic for a reason — but there’s a whole world of cheeses out there just waiting to be melted between two slices of bread.
- Don’t use too much cheese. Beyond using the right cheese, you want to use the proper amount of cheese. There has to be enough that the sandwich is sufficiently cheesy but not so much that the cheese spills out the sides and creates a mess.
- Dress up your grilled cheese. Cheese should always be the star of the show, but there’s no reason why fontina or cheddar can’t share the spotlight with a few supporting players.
- Go low and slow. Think like a barbecue pit master and exercise patience when making grilled cheese. Keep the heat in the medium to medium-low range and adjust it as you cook, ensuring that the bread toasts at the same rate that the cheese melts.
- Press down for a panini-style grilled cheese. If you own a panini press, by all means use it to make grilled cheese. But if not, you still have options for making your grilled cheese super crispy.

- Don’t Put Too Much Cheese.
