Cinnamon and honey keep things sweet and simple, but there's plenty of space to spice up your bowl with exotic combos-try cardamom, nutmeg, cloves, or ginger. And yes, steel-cut oats take longer to cook than other types of oats, but their toothsome texture and nutty flavor make them well-worth the effort. Best of all, they reheat beautifully, so you can easily cook up a big batch ahead of time. For a richer, nuttier flavor, try toasting your oats in the pan first. Keep the heat at medium-low and stir constantly to prevent burning. Short on time? Our basic oatmeal recipe is your go-to healthy breakfast for busy mornings.

Number Of Ingredients 7

1 cup steel-cut oats (such as Bob's Red Mill Steel-Cut Oats)
1 cup milk
2 cups water
1/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon
2 teaspoons honey
Desired toppings (such as fresh fruit, sliced almonds, chia seeds, or your favorite nut butter)

Steps:

  • Combine oats, milk, water, salt, and cinnamon in a medium saucepan. Bring to a boil, then reduce heat to low.
  • Simmer uncovered for 15 to 20 minutes until desired thickness, stirring occasionally. Remove from heat and let cool slightly.
  • Divide equally between four bowls. Drizzle each serving with 1/2 teaspoon honey. Add additional desired toppings and serve.

I found this on Alton Brown's Good Eats and it is delicious. Adding the step of toasting with butter really adds to the flavor. Plus, adding the (already) boiling water to the toasted grains and letting it cook without constant attention (like a pilaf!) makes preparation soooo easy. And the buttermilk adds richness to the mix. My family loves the hearty flavor and texture of Scottish (steel-cut) oats, and this is the best recipe I've ever found.

1 tablespoon butter
1 cup steel cut oats
3 cups boiling water
1/2 cup whole milk
1/2 cup low-fat buttermilk, plus
1 tablespoon low-fat buttermilk
1 tablespoon brown sugar
1/4 teaspoon ground cinnamon

Steps:

  • In a large saucepot, melt the butter and add the oats.
  • Stir for 2 minutes to toast.
  • Add the boiling water and reduce heat to a simmer.
  • Keep at a low simmer for 25 minutes, without stirring.
  • Combine the milk and half of the buttermilk with the oatmeal.
  • Stir gently to combine and cook for an additional 10 minutes.
  • Spoon into a serving bowl and top with remaining buttermilk, brown sugar, and cinnamon.
