PUMPKIN AND SWEET POTATO SOUP

My Spiced Pumpkin and Sweet Potato Soup is a golden bowl of goodness that is sure to delight! It is healthy, tasty, easy to prepare and is guaranteed to brighten any day. The gentle spices add warmth and another layer of flavour and although the soup does not contain cream, it has a smooth, velvety texture.

2 brown/yellow onions
1 tbsp olive oil (See Note 1)
550 gm pumpkin (See Note 2 and 4)
550 gm sweet potato (See Note 2 and 3)
1 tsp ground cinnamon
1 tsp ground cumin
4 cups (1 litre) vegetable stock
salt and pepper (to taste)
coconut cream, fresh herbs, toasted pumpkin seeds

Steps:

  • Peel and finely slice onions.Peel and cut pumpkin and sweet potato into small cubes.
  • In a large saucepan over a medium heat, cook onions in the oil for a couple of minutes.
  • Add the sweet potato, pumpkin, and the spices. Stir until well coated. Cook for 1 minute.
  • Add vegetable stock and simmer for 20-25 minutes, or until vegetables are tender.
  • Use an immersion blender, food processor or blender; blend the soup until it is smooth. See Note 5.
  • Make sure the consistency is to your liking - add a little extra stock or water to thin the soup out if you wish.
  • Optional - drizzle the soup with coconut cream or a garnish of your choice; fresh herbs or pumpkin seeds are great options.

If you can use organic vegetables, the soup will have a glorious color and taste more intense. Most people cannot tell that you have used coconut milk instead of cream. This makes it not only taste good, but full of all the health benefits of the coconut. Add a dollop of plain Greek yogurt or some chopped parsley, or drizzle with good quality, cold-pressed extra virgin olive oil. Enjoy and taste the golden color of the sun!

1 large sweet potato
1 small pumpkin or buttercup squash, peeled and cut into 1-inch cubes (4 cups)
3 large carrots, peeled and cut in half
2 large red onions, halved
¼ cup cold-pressed extra-virgin olive oil
1 teaspoon flaked sea salt, or to taste
½ teaspoon ground allspice
1 pinch ground white pepper
1 teaspoon ground nutmeg
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground ginger
1 pinch ground black pepper
4 cups chicken stock
2 (13.5 ounce) cans coconut milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Wrap sweet potato in aluminum foil; place on an oven-safe dish to catch drips.
  • Bake in the preheated oven until soft, about 45 minutes.
  • While the sweet potato is roasting, place pumpkin, carrots, and onions on a baking pan. Brush with olive oil; sprinkle with salt, allspice, and white pepper.
  • Bake in the preheated oven until soft, 30 to 40 minutes.
  • Peel the sweet potato and squash when cool enough to handle. Transfer to a large saucepan; add carrots, onions, nutmeg, cumin, coriander, ginger, salt, and pepper. Stir in chicken stock and coconut milk. Bring soup to a boil; reduce heat and simmer until fragrant, about 20 minutes. Remove from heat.
  • Puree soup using an immersion blender until smooth.

1 tablespoon vegetable oil
1 onion, finely chopped
1 leek, chopped
1 pound peeled and diced pumpkin
¾ pound sweet potato, peeled and cubed
1 quart vegetable broth
1 ¼ cups light coconut milk

Steps:

  • Heat the oil in a soup pot over medium heat. Add the onion and leek, and cook for a few minutes, until soft. Stir in the pumpkin, sweet potato, and vegetable broth. Bring to a boil, then cover and reduce heat to low.
  • Simmer for about 15 minutes, until vegetables are tender. Mash vegetables coarsely using a potato masher. Stir in the coconut milk, season with salt and pepper, and serve.

1 acorn squash
1 medium pumpkin
2 large sweet potatoes
2 (14 ounce) cans coconut milk
2 (14.5 ounce) cans chicken broth
salt to taste
ground black pepper to taste
1 lime, juiced
1 pinch ground ginger, or to taste

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Puncture acorn squash and pumpkin in several places using a knife. Wrap the sweet potatoes in aluminum foil. Place squash, pumpkin, and sweet potatoes on a baking sheet.
  • Bake in the preheated oven until the pumpkin begins to cave in and the skin browns, about 2 hours.
  • Remove the skin, then chop the sweet potatoes. Skin, seed, and chop the pumpkin and acorn squash. Place the sweet potatoes, pumpkin, and acorn squash in a large pot and mash until smooth. ROASTED SWEET POTATO SOUP WITH HAM HOCKS



Roasted Sweet Potato Soup with Ham Hocks image

2 pounds sweet potatoes
2 cups chicken stock
1 to 2 smoked ham hocks (about 1 pound total)
8 tablespoons (1 stick) unsalted butter, cut into pieces
2 tablespoons dark brown sugar, or more as needed
1/2 teaspoon ground cinnamon
1 orange, zested and juiced, or more as needed
One 15.5-ounce can unsweetened coconut milk
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the sweet potatoes in a single layer on a baking sheet. Place in the center of the oven and bake until fully cooked, 1 to 1 1/2 hours. To check for doneness, pierce one with the tip of a small knife; it should slide in and out easily. Set the potatoes aside until cool enough to handle.
  • Meanwhile, place the chicken stock, ham hock and 1 cup water in a medium pot and bring to a boil. Reduce the heat to medium-low and simmer, adding more water if the liquid runs low, until the tough skin of the ham hock softens, 30 to 45 minutes. Remove the ham hock and transfer to a flat surface. Peel away or use a knife to cut off the tough skin. Discard the skin and cut the meat beneath it into smaller pieces. Put the meat back into the stock and simmer gently over low heat so the meat flakes and flavors the liquid. You want to end up with 1 to 1 1/2 cups meaty, flavorful liquid. Keep warm.
  • In a small saucepan, melt the butter over medium heat until it turns a light brown color, 2 to 3 minutes. Remove from the heat and immediately stir in the brown sugar, cinnamon, orange zest and juice and stir to combine. Set aside.
  • Peel the sweet potatoes and break the flesh into chunks; put the chunks into a large pot. Add the coconut milk and 1 cup water and simmer over medium heat, 5 to 8 minutes. Puree the soup with an immersion blender or in small batches in a blender. Return the soup to the pot and stir in the brown butter and ham and liquid. Taste for seasoning. If the soup needs more flavor, add salt, pepper, a pinch of brown sugar or more orange zest.

1 unbaked 10-inch pie shell
1 1/4 lbs sweet potatoes
1 cinnamon stick
2 -3 whole cloves
1 inch fresh ginger
1 pinch anise (optional)
2 cups pumpkin puree (or 1 15oz can)
2 eggs
2 tablespoons butter, melted
1/2 cup granulated sugar
1/2 cup brown sugar, packed
2 tablespoons flour
1/2 teaspoon salt
1/2 cup coconut milk
1 cup heavy cream
3 tablespoons sugar

Steps:

  • Peel sweet potatoes and cut into chunks.
  • Place in shallow baking pan in 1/2 inch water.
  • Break cinnamon sticks, peel and cut ginger in small pieces, scatter among sweet potato pieces along with cloves and pinch of anise.
  • Cover with foil and bake at 350°F for about 30 minutes, until sweet potatoes are easily pierced with a knife.
  • Remove sweet potatoes from baking pan and mash.
  • Process in blender until smooth.
  • Strain the baking liquid, discarding the solids.
  • Reserve 1/4 cup liquid, add fresh water if needed.
  • If you have too much, simmer the liquid in saucepan on stove until reduced to 1/4 cup.
  • Filling:.
  • Beat together sweet potato and pumpkin purees until well blended.
  • Beat in eggs, melted butter and reserved spice liquid.
  • In separate bowl mix together the sugars, flour and salt.
  • Add the sugar-flour mix to the pumpkin and stir until well blended.
  • Blend in coconut milk.
  • Pour filling into prepared pie shell and bake at 350°F for 1- 1.5 hrs or until knife inserted in middle comes out clean.
  • If the edges of crust darken too much before filling is cooked cover them with strips of aluminum foil.
  • Let pie cool completely before topping.

  • On high speed beat cream and sugar until high peak form.
