Argentinian Chimichurri sauce is a wonderful way to mix up your condiment routine. All at once citrusy, tart, garlicky, herby, and a tad bit spicy, this sauce makes a great marinade or topping for chicken, steak, fish, or pork as well as potatoes and vegetables.

½ cup cilantro
½ cup parsley
½ onion (diced)
1 teaspoon salt (or to taste)
¼ teaspoon pepper (or to taste)
1 tablespoon garlic
½ teaspoon Italian blend seasoning
½ teaspoon crushed red pepper flakes
⅓ cup oil
2 tablespoons red wine vinegar (or apple cider vinegar)

Steps:

  • Combine all chimichurri ingredients in a blender or food processor, and pulse until smooth. (SEE NOTE)
  • Serve immediately, or can be stored (covered) at room temperature up to 24 hours before serving.

CHIMICHURRI CHICKEN MARINADE



Chimichurri Chicken Marinade image

Fresh and flavorful even after a month in the freezer, this garlicky marinade works great with boneless skinless chicken breast or thighs.

Number Of Ingredients 9

1 cup packed fresh parsley leaves
2 tablespoons red wine vinegar
2 teaspoons dried oregano
1/2 teaspoon crushed red pepper flakes
4 scallions, cut into 1-inch pieces
3 cloves garlic, minced
1/2 cup olive oil
Zest of 1 lemon
Kosher salt and freshly ground black pepper

Steps:

  • For the marinade: Add the parsley, vinegar, oregano, red pepper flakes, scallions and garlic to a food processor and pulse a few times to combine. With the food processor running, stream in the oil until uniform in a consistency. Add the lemon zest, 1/2 teaspoon salt and several grinds of pepper. Pulse just to combine. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds) to a large resealable plastic bag. Pour in the marinade, squeeze out the air, seal tightly and massage gently to coat the chicken. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.
  • To cook: Transfer the chicken to a foil-lined baking sheet and roast in a 425-degree F oven until cooked through and an instant-read thermometer registers 165 degrees F, 20 to 25 minutes.

1 tablespoon chopped fresh oregano
1/4 cup chopped white onion
3 tablespoons minced garlic
2 tablespoons chopped red bell pepper
3 tablespoons red wine vinegar
1/4 cup fresh lime juice, plus 1 tablespoon finely grated lime zest
1/2 cup extra-virgin olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Blend all the ingredients in a food processor until smooth. Refrigerate at least 2 hours to allow the ingredients to settle and the flavors to meld before serving.

  • Put the herbs, garlic, onion and chilli in a bowl. Pour the oil and vinegar in and add salt. Mix together.

I am an avid fan of chimichurri. Too many times though I have seen recipes call for ingredients where I feel like I am making salad dressing. This recipe will make a very delicious and uniquely-flavored chimichurri. Goes perfectly on: rice, any kind of meat, beans, or heck just eat it right out of the container!

Number Of Ingredients 7

1 bunch flat leaf parsley (You could substitute curly-leaf but flat for me tastes best. By bunch I mean around the size of a sm)
1 large lemon (The lemon has to be large. If it is small or medium, the purchase two. Make sure lemon is fresh.)
8 garlic cloves (Sounds crazy but the parsley balances it perfectly.)
3/4 cup olive oil (Extra virgin if possible.)
1 tablespoon paprika
1/2 teaspoon black pepper (At all possible make an effort to use freshly ground pepper. Pre-ground just does not taste the same)
1/2 tablespoon salt

Steps:

  • Thoroughly wash, crudely chop (thirds), and place parsley in food processor.
  • Peel, crudely chop, and place garlic in food processor.
  • Peel, separate, and place entire lemon in food processor (Don't squeeze the lemon, just place the whole thing - excluding the rind - in the food processor).
  • Add the olive oil.
  • Add all spices (salt, pepper, and paprika).
  • Turn on food processor and run until mixture is a creamy, light green color. Making sure that entire mixture is fully minced and uniform. Time to run should be no less than two minutes.
  • Test for desired taste and consistency.
  • Tasting and Consistency Notes - Taste should be very bold. The parsley and garlic should clearly stand out; however, the lemon should immediately kick in; the salt enhances the lemon flavor. A moment later you will taste the bite of the freshly ground pepper. The oil contributes to smoothness. In fact, this recipe, if done properly, should resemble that of a pesto. Furthermore, we even use this as a topping for our pastas! Enjoy.
