This healthy homemade granola is vegan, gluten-free, healthy and super easy to make. It is low glycemic, delicous and filling! Add it to smoothie bowls, mix with almond milk or enjoy with fresh fruit and yogurt.

2 cups gluten-free oats
1 cup coconut flakes
1 cup chopped walnuts
½ cup sunflower seeds
½ cup pumpkin seeds
¼ cup hemp seeds
¼ cup goji berries or cranberries
2 tsp cinnamon
2 tsp vanilla extract
¼ cup coconut oil
¼ cup rice malt syrup

Steps:

  • Combine the oats with the nuts and seeds in a mixing bowl with cinnamon.
  • Melt coconut oil, rice malt syrup and vanilla in a pot and stir. Pour over top of the dry granola mix.
  • Line a bkaing tray with baking paper and spread the granola evenly on top of the baking tray.
  • Bake the granola for 20 minutes @ 175° Celcius. be sure to stir the granola half way through to cook the granola evenly and prevent the edges from burning.

Enjoy these super healthy Granola, as a cereal or on top of yogurt as a parfait or just as plain snack. This is the best tasting granola I have ever had.

Number Of Ingredients 10

2 cups old fashioned oats
1/2 cup wheat germ
1/3 cup wheat bran
1/4 cup slivered almonds
1/4 cup shelled unsalted sunflower seeds
1/4 cup shelled unsalted pumpkin seeds (optional)
2 tablespoons sugar substitute
1 tablespoon canola oil
1 tablespoon water
2 teaspoons grated orange zest

Steps:

  • Toss together in a large bowl the oats, wheat germ and bran, almonds, sunflower seeds and pumpkin seeds.
  • Preheat oven to 300°F.
  • In a small bowl, whisk together the sugar substitute, oil, water and orange zest. Pour over the oat mixture and toss well to coat evenly.
  • Spread the mixture onto a large baking sheet lined with parchement paper and bake , stirring once, until golden brown, about 30 minutes.
  • Let cool completely and store it in a airtight container at room temperature for a week.
