EASY BROCCOLI SOUP

I saw this being made on TV (AWW) and thought it looked really good. On the programme they said to serve with toasted slices of french bread which were topped with crumbled blue cheese and grilled. I didn't have any on hand so I topped mine with parmesan cheese. I also, the second time round added some chopped bacon and simmered for another 15mins after I had blended the soup. You could also top each bowl of soup with a spoon of cream for a special occasion.

1 -2 tablespoon oil
1 onion (diced)
2 garlic cloves (minced or use 2teasp from a jar)
1 large head broccoli (trimmed and chopped, about 500g)
1 potato (peeled & diced or leave skin on if you prefer)
6 cups chicken stock (homemade, from a carton or use 6teasp granules to 6 cups water or to your taste)
salt & freshly ground black pepper
2 -3 slices bacon (diced, optional variation)

Steps:

  • In a large deep pan heat the oil over medium and add the onion & garlic.
  • Cook gently until softened for about 2-3 minutes.
  • Add the potato, broccoli and stock and bring to the boil.
  • Turn heat down and simmer for 20 mins until vegetables are cooked.
  • Either pour into a blender and blend or use a stick blender in pan to make a smooth mixture.
  • If using a blender add soup back to the pan and heat gently.
  • It is at this point you can add the chopped bacon and simmer til bacon is cooked, about 15mins, then check seasoning.
  • If not adding the bacon, check seasoning and add salt & pepper to taste & reheat gently.
  • Serve in nice bowls with slices of french bread which have been toasted on one side, turned over and topped with either blue cheese or whatever cheese you have on hand and grilled for a few mins til melted & crispy, on the side.
  • Note: cooking time does not include the extra time for the bacon addition.

1 small onion, chopped
1/4 cup all-purpose flour
2 cups half-and-half
3 cups low-sodium chicken broth
2 bay leaves
1/4 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
4 7 -inch sourdough bread boules (round loaves)
4 cups broccoli florets (about 1 head)
1 large carrot, diced
2 1/2 cups (about 8 ounces) grated sharp white and yellow cheddar cheese, plus more for garnish

Steps:

  • Melt the butter in a large Dutch oven or pot over medium heat. Add the onion and cook until tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, bay leaves and nutmeg, then season with salt and pepper and bring to a simmer. Reduce the heat to medium-low and cook, uncovered, until thickened, about 20 minutes.
  • Meanwhile, prepare the bread bowls: Using a sharp knife, cut a circle into the top of each loaf, leaving a 1-inch border all around. Remove the bread top, then hollow out the middle with a fork or your fingers, leaving a thick bread shell.
  • Add the broccoli and carrot to the broth mixture and simmer until tender, about 20 minutes. Discard the bay leaves. Puree the soup in batches in a blender until smooth; you'll still have flecks of carrot and broccoli. Return to the pot. (Or puree the soup in the pot with an immersion blender.)
  • Add the cheese to the soup and whisk over medium heat until melted. Add up to 3/4 cup water if the soup is too thick. Ladle into the bread bowls and garnish with cheese.

1 medium yellow onion, diced
1 large carrot, diced
2 cloves garlic, minced

Steps:

  • Melt the butter in a large saucepan or Dutch oven over medium-high heat. Add the onion, carrot and garlic and cook, stirring occasionally, until just tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, broccoli, bay leaves, nutmeg, 1/2 teaspoon salt and few grinds of black pepper Bring to a boil, then reduce to medium-low and simmer, uncovered and stirring occasionally, until the broth has thickened and the broccoli is very tender, about 15 minutes.
  • Meanwhile, prick the potato all over with a fork and put on a microwave-safe plate. Microwave on high until tender, flipping halfway through, about 6 minutes. Let cool, then peel. Use a fork or potato masher to mash until crumbly.
  • Reserve 2 cups of the soup in a liquid measuring cup and discard the bay leaves. Let the remaining hot soup cool for 5 minutes or so, then transfer it to a blender, filling no more than halfway. Add the mashed potato. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters, and pulse until very smooth.
  • Stir the pureed soup and reserved 2 cups of soup back into the pot. Whisk in the cheese until melted and smooth. Season with salt and pepper. Ladle into serving bowls and top with more shredded Cheddar.

The Easiest Soup in the World image

This is a thick delicious completely vegan soup. You can use virtually any vegetables you have in the house. I've written the recipe based on what I used this week, but it always changes - and it is always delicious. The only warning I have is regarding color: if you use a mix of orange veggies and dark green leafies - the soup will taste good, but it will have a fairly revolting color! An immersion blender and a pressure cooker make this soup even easier to prepare, but they are not necessary.

3 tablespoons olive oil
1 onion, chopped
1/2 head cauliflower, chopped
2 stalks celery, chopped
3 medium potatoes, cut into chunks
1/2 butternut squash, cut into chunks
3 garlic cloves, minced
4 cups vegetable broth

Steps:

  • Heat the olive oil in a large dutch oven or pressure cooker. Add the onion and sauté until lightly browned - 6 minutes or so.
  • Add all the remaining vegetables EXCEPT the garlic. Stir and sauté another 4-6 minutes.
  • Add the garlic during the last minute of cook time. Adding the garlic at the end prevents it from burning and becoming bitter.
  • Pour the veggie broth over all. It should just barely cover the veggies if you want a hearty thick soup. If you want something thinner use more broth to fewer vegetables.
  • I use a pressure cooker, so at this point I close the lid and allow the pressure to increase. I keep it at pressure for about 15 minutes and then allow the pressure to release slowly over time. If you don't use a pressure cooker, simply cover the pot and boil the daylights out of your soup until the veggies are almost mush - 30 to 45 minutes should be good.
  • When the pressure has released, or the boiling time is over, I use my immersion blender to puree the soup completely. If you don't have an immersion blender you can carefully pour the soup into a regular blender and achieve the same results.
  • Now ladle yourself a bowl and enjoy!

1 carrot, sliced
1 clove garlic, minced
4 cups chicken stock
1 lb broccoli, chopped
1 cup light cream
salt and pepper
chopped fresh parsley (to garnish)

Steps:

  • In a large saucepan, melt the butter over medium heat; cook the onion, carrot and garlic for 5 minutes.
  • Stir in the stock and bring to a boil; add the broccoli.
  • Reduce the heat and simmer, covered, until the broccoli is tender, 15 to 20 minutes.
  • In a blender or food processor, puree the soup in batches and transfer to a glass bowl.

600 g broccoli florets (prepared weight)
1 onion, finely chopped
450 ml water
1 vegetable stock cube
600 ml low-fat milk
salt & pepper

Steps:

  • Wash thoroughly the broccoli. You will need 600G so remove the stems and just use the heads.
  • Chop the onion.
  • In a saucepan cook the broccoli and onion together with the stock cube and the water for 15 minutes Keep the lid on whilst you do this. (you can get this cooking time down to 10 mins if you chop the broccoli quite small).
  • When the broccoli and onion are very tender add the low fat milk.
  • Then blend the soup thoroughly using a blender. I sometimes do this immediately but, from a safety point of view, its probably best to let the soup cool then re-heat.
  • You will be surprized how creamy this soup is, even using only low fat milk, check seasoning and serve.
  • Serve the soup however you like -- we like it with toasted almonds on top, it is also good with grated cheese piled on the top. Another good combination is a large teaspoon of cream cheese dropped into the centre and some chives. Last time I served it to guests I sprinkled stilton cheese and croutons over the hot soup and it was enjoyed by all.
  • However you serve it, for extremely basic ingredients, it makes a tasty affordable soup.
