Easy Whole Wheat Pizza Dough image

Whip up this 100% whole wheat pizza dough recipe in your food processor. It hardly needs kneading or rising time. You can make this pizza in less than the amount of time it would take for pizza delivery. Dinner is ready! Yields two medium (11" diameter) pizzas.

1 cup water, heated to 110 degrees (very warm, almost too hot for comfort)
1 tablespoon extra virgin olive oil
1 tablespoon honey or sugar
1 envelope (2 1/4 teaspoons) rapid-rise or instant yeast
2 3/4 cups (345 grams) white whole wheat flour or regular whole wheat flour
1/4 cup grated Parmesan cheese
1 teaspoon fine salt
1 cup pizza sauce or one 32-ounce can whole tomatoes, drained and crushed by hand
2 to 3 cups shredded low-moisture part-skim mozzarella cheese
Additional toppings, as desired

Steps:

  • Preheat oven to 500 degrees Fahrenheit with a rack in the upper third of the oven.
  • Whisk water, oil, honey and yeast in a liquid measuring cup or small bowl. Allow yeast to proof for 5 minutes. It should puff up some by then.
  • Pulse flour, Parmesan, and salt in food processor until combined. While running the food processor, slowly pour in the water mixture and process until a shaggy ball forms, about 1 minute.
  • Dump the dough onto a floured work surface and quickly knead dough a few times until it comes together. Halve the dough.
  • On a floured surface, use a rolling pin to roll dough into two rounds about 11 inches in diameter. For best results, roll the dough out about as thin as reasonably possible. Aim for even thickness rather than a perfectly round shape.
  • Carefully lift and transfer one of the rounds onto a baking sheet lined with parchment paper. Brush the outer 1-inch of the dough with a light coating of olive oil. Add half of the pizza sauce or crushed tomatoes (crush the tomatoes over the sink to get out as much liquid as possible). Sprinkle with half of the cheese and any other toppings you'd like to add.
  • Bake on the top rack until the crust and cheese are lightly golden, about 10 minutes for cheese pizza and 12 minutes for pizza with additional toppings. Repeat with the remaining dough, then slice and serve. Leftover pizza will keep well in the refrigerator for about 4 days.

Making your own whole wheat pizza dough from scratch is easier than you think! A mix of flours, olive oil, and a touch of maple will give you the perfect crispy, tender, and flavorful crust that works with just about any pizza recipe.

1 1/2 cups water, (heated to about 110°F)
1 (1/4 ounce) packet active dry yeast
1 teaspoon organic granulated sugar
2 tablespoons olive oil
1 tablespoon maple syrup
2 teaspoons salt
1 1/2 cups bread flour, (plus more as needed)
1 1/2 cups whole wheat pastry flour, (plus more as needed)

Steps:

  • Place the water in a small bowl or liquid measuring cup, and whisk in the yeast and sugar. Let the mixture sit for about 5 minutes, until it becomes frothy and smells yeasty.
  • Stir the olive oil, maple syrup, and salt into the yeast mixture.
  • Stir 1 1/2 cups of bread flour and 1 1/2 cups of whole wheat pastry flour together in a large mixing bowl.
  • Pour the yeast mixture into the flour mixture and stir to form a soft dough.
  • Transfer the dough to a well-floured work surface.
  • Knead the dough for about 5 minutes, until it's smooth and elastic, working up to an additional cup of flour into it as you knead*.
  • Rub the inside of a large mixing bowl with olive oil and place the dough into the bowl. Cover it with a damp tea towel.
  • Place the bowl in a warm location in your kitchen and allow it to rise until doubled in size. This usually takes between 1 and 2 hours depending on the temperature.
  • Cut the dough in half. Each half can be used to make one medium pizza crust.

1 1/4 cups lukewarm water
1 1/2 cups whole wheat flour
2 cups all-purpose flour
1 tablespoon olive oil
1 tablespoon honey
1/2 teaspoon salt
Grated mozzarella cheese
Grated Parmesan cheese
Ricotta cheese
Sliced tomatoes
Sliced onions
Sliced mushrooms (chanterelles)
Roasted red bell peppers, peeled, seeded, sliced
Calamata olives, pitted and sliced
Japanese eggplant, sliced thin
Leeks, washed well, outer leaves trimmed, sliced into "rings"
Broccoli florets
Spinach leaves

Steps:

  • Proof yeast in a measuring cup with lukewarm water.
  • In a food processor add whole wheat and all purpose flours, proofed yeast, oil mixed with honey and salt. Pulse processor to combine all ingredients. Then process until the dough forms a ball on the blade. Remove dough to a large oiled bowl. Cover with plastic wrap or a kitchen towel and let rise in a warm place for 45 minutes or until dough has doubled in bulk.
  • Punch down dough and transfer to a floured board and knead briefly. Divide dough into 4 equal portions and roll each piece into a ball. Place the balls of dough, covered, in the refrigerator for at least 2 hours or overnight. Bring the dough to room temperature before proceeding.
  • On a floured board roll and stretch each piece of dough into a 7 to 8-inch circle. Place each circle on a wooden pizza peel or pizza pan and top as desired.
  • Preheat oven to 450 degrees F. and bake 7 to 8 minutes per pizza.

1 1/2 cups warm (115 degrees) water
2 packets (1/4 ounce each) active dry yeast
1/4 cup olive oil, plus more for bowl
2 tablespoons sugar
2 teaspoons coarse salt
2 cups all-purpose flour (spooned and leveled), plus more for kneading
2 cups whole-wheat flour (spooned and leveled)

Steps:

  • Place water in a large bowl; sprinkle with yeast. Let stand until foamy, about 5 minutes. Brush another large bowl with oil.
  • In bowl with yeast, whisk sugar, oil, and salt. Stir in flours with a wooden spoon until a sticky dough forms. Transfer to oiled bowl; brush top of dough with oil. Cover bowl with plastic wrap; let stand in a warm spot until dough has doubled in size, about 1 hour.
  • Turn dough out onto a well-floured surface. With floured hands, knead until smooth, about 15 seconds; divide into 2 balls.
  • To freeze 1-pound balls: Set balls on a plate (they should not touch); freeze until firm, about 1 hour. Then freeze in a freezer bag up to 3 months. Thaw overnight in refrigerator.
  • To freeze individual shells: Divide each ball of dough into 4 pieces. Using your hands, stretch each piece into a 5-inch disk (if dough becomes too elastic to work with, let it rest a few minutes).

  • Spray or oil a large bowl and set the bowl aside. Start by dissolving the yeast in the warm water with the sugar (or alternative choice). Simply combine them together and five them a quick stir with a fork. I like to do this in my mixing bowl that I will use to mix this recipe in.
  • While this is ‘proofing’ you can attach your dough hook to your mixer. Tip: spray the hook with nonstick for an easier clean up later on.
  • When the yeast and water mixture begins to bubble, it is ready to move on. This should happen in 5-10 minutes. Add the olive oil and the salt to the yeast mixture and give it a quick stir. Then add a cup of the flour. Mix this on a slow speed for about a minute and then add another cup of flour. Mix for a minute and then add one more cup of flour. However, continue to mix until your dough forms a ball. If the dough is too wet and a ball does not start to form after a few minutes you can slowly add the remaining flour until you get a ball formed. I’ve made this recipe many times and I have found that every time it takes me a different amount of flour to get the dough to form a ball. The whole process of mixing should take about 10 minutes.
  • Place the ball of dough into the bowl that your prepped in the first step. I like to rotate the ball to ensure that it is therefore evenly coated. You can even give it a quick spray of olive oil on the top to make sure that it gets coated too. Cover the bowl with a clean kitchen towel and allow the dough to rise. I like to place my covered bowl on top of the microwave or refrigerator. It should take about an hour to 1 1/2 hours for the dough to double in size.

  • Heat the water (or use warm tap water). You know it’s about 100F if it feels warmer than your body temp, but not at all painful to leave your finger in for more than 5-10 seconds.
