- Add granulated sugar and kosher salt to a very large mixing bowl, large pot. Add hot water and stir until the sugar and salt have dissolved. Add the cold water, and stir. Once the water is either at room temperature or cold, add the pork tenderloins (do not add pork to warm or hot water). Transfer to the refrigerator for at least 6 hours or overnight.
- Preheat the oven to 400° and have ready a rimmed baking sheet fitted with an oven-safe rack. If you do not have a rack, line baking sheet with nonstick aluminum foil.
- Remove the tenderloins from the brine, and pat dry with paper towels. Set aside.
- In a small bowl, whisk together mustard, canola oil, salt, pepper, garlic powder, paprika, onion powder and rosemary. Rub evenly across each tenderloin.
- Place tenderloins on the rack, leaving ample room between for air to circulate. Cook for 35-40 minutes, or until fully cooked. Remove from the oven and allow to rest for 10-15 minutes. Serve and enjoy.

- In separate bowl mix dry ingredients such as garlic powder, oregano, cumin, coriander, thyme and salt. Stir mixture with a fork until all the ingredients are well combined and they form a seasoning. This will be used as a rub to ensure the pork is well seasoned throughout. - Preheat your oven to 400 degrees. Dry the pork tenderloins well with paper towels.
- Mix the paprika, onion powder, garlic powder, oregano, salt, and pepper together in a small bowl. Rub this spice mix over all sides of the pork.
- Heat the oil in a large frying pan over medium-high heat. Add the pork, working in 2 batches if your pan is not big enough to fit both tenderloins without them touching. Sear the pork on all sides until it is brown, about 6 minutes total. Take the pan off the heat.

My #1 way to cook a pork tenderloin or a boneless pork loin because it's ALWAYS moist and tender. It's easy and foolproof! If you like, marinate the roast and rub with any seasonings that please your palate! So many people have asked me how long to cook tenderloins if they have "more than one" to cook, I wanted to give a simple response. ANSWER: So long as the tenderloins are NOT touching each other, cook 3 or 4 individual tenderloins for the same amount of time as if you were cooking one. Remember, each tenderloin is cooking in its own separate space. EXAMPLE: If cooking three 1-pound tenderloins, cook them only 5-1/5 minutes TOTAL. - NOTE: The success of this cooking method will depend upon how accurate the temperature of your oven is and how well your oven retains heat. Adjust cooking time +/- according to your individual oven.
- NOTICE: If you have a very old oven that is not well insulated, this recipe may not work for you, as heat retention/residual heat is important to the success of this recipe.
- Determine the EXACT weight of roast from the meat wrapper. Weight will determine how long to cook the roast.
- Preheat oven to 500 degrees. Remove tenderloin from refrigerator. Season meat as desired. Place seasoned meat in an uncovered roasting pan on a shelf in the bottom 1/3 of your oven.
- Bake EXACTLY 5 1/2 minutes PER POUND. Adjust +/- according to your oven's accuracy and heat retention. NOTE:.

- After resting 10 minutes, the roast should reach a safe 145-150 degrees.
- NOTE:******* For anyone questioning this method of cooking, it really does reach the proper internal temperature on a thermometer. According to Sara Moulton on FoodTV, trichinosos is killed at 138 degrees, and 145 is a safe temperature for pork, although the USDA recommends 160 degrees (meat will be much drier). If the center of the meat is not a little pink, it is overcooked!
- VARIATION: To make Roasted Veggies along with the tenderloin, peel carrots and potatoes, and cut into about 1-inch cubes. Season as desired and drizzle with a little oil. Add vegetables to pan around (but NOT touching) pork tenderloin. Cook tenderloin as instructed above. The roasted potatoes and carrots should be done when the roast is done. You may need to adjust the size of the potatoes and carrots depending upon the weight of your tenderloin and how long you cook it.

- Preheat oven to 400 degrees F. Lay two long pieces of foil on a baking sheet - these will be used to fold up each tenderloin separately.
- In a gallon-size freezer bag, mix salt with warm water until dissolved. Whisk in apple cider vinegar, brown sugar and ice, followed by pork. Brine for exactly 20 minutes then remove pork from brine, RINSE and pat very dry. The pork becomes mealy if left in the brine any longer.
- Whisk together all of the Spice Mix ingredients (not the "Add Later Herbs") in a small bowl. Evenly rub pork all over with spice mix.
- Heat 2 tablespoons vegetable oil in a large skillet over medium high heat. When oil is very hot and just smoking, add pork tenderloins, you may need to work in batches. Sear each side of pork until golden, then transfer to foil.
- Evenly sprinkle tops of pork tenderloins with remaining herbs (parsley, basil, oregano, thyme) then rub into pork. Evenly drizzle each pork tenderloin with one tablespoon of lemon juice (2 tablespoons total), then top each tenderloin with 3 pads of butter. Bring up the sides of the foil to completely enclose each tenderloin (see photos in post).
- Bake at 400 degrees F until pork registers between 145- and 150-degrees F (63 and 65 degrees C) at the thickest part of the tenderloin, 15-25 minutes depending on thickness. This means the pork will be juicy and slightly pink in the middle. To check the temperature, carefully unwrap the foil, then wrap it back up if it need to continue baking.
- When pork is done, loosen foil (so steam can escape) and let stand 5-10 minutes before slicing. Season with additional salt and pepper to taste (I like additional salt) and serve with accumulated butter sauce in the bottom of the foil.
BEST DAMN INSTANT POT PORK TENDERLOIN
Steps:
- Let pork tenderloin stay in package out of fridge for 15-20 minutes. Remove tenderloin from package and rinse and pat dry. Trim any visible fat. Cut tenderloin into 2 pieces of equal length.
- Coat each piece with about 1 teaspoon each of olive oil. In a small dish, combine all dry ingredients and mix well. Apply the rub liberally onto meat.
- Set Instant Pot to Saute mode. When hot, add meat and brown each side for a couple of minutes each. When all sides are browned, press Cancel and remove meat to a plate. Add the chicken stock to the pot and use a wooden spoon to scrape all the bits from the bottom of the pot. Add the Worcestershire sauce and liquid smoke to the chicken broth.
- Place meat directly into the liquid, secure lid, set the vent to "sealing". Pressure cook (manual) on high pressure for 3 minutes. When cycle is complete, allow pressure to naturally release for 15 minutes. Remove meat to a plate and let sit for 5 minutes before slicing into pieces about 1/4 inch thick.
- After removing meat, press Cancel, then press Saute. Scoop out 3 tablespoons of the liquid to a separate cup and add 2 tablespoons of corn starch. Mix well until corn starch is dissolved. Slowly pour mixture back into the liquid in the pot. Once it starts to boil, press cancel. Mix well and sauce will thicken into a delicious gravy.

- In a small bowl, combine honey, soy sauce, rice wine vinegar, garlic, ginger, brown sugar, sesame oil, and sriracha. Mix well with a wire whisk.
- Place pork tenderloin in a plastic bag or large, shallow dish.
- Pour half marinade over pork. Reserve other half for cooking.
- Cover with plastic wrap and marinate at least 20 minutes, up to overnight. (Please refrigerate if marinating over 20 minutes.)
- Heat olive oil in a large nonstick pan.
- Remove tenderloin from marinade (discard the marinade pork was in) and brown pork tenderloin on all sides - about 2-3 minutes per side.
- When pork has browned, remove from pan and place on a large piece of foil on a baking sheet.
- Add reserved marinade to top of pork.
- Fold foil into pouch.
- Bake 20-25 minutes, until pork tenderloin is 140 degrees internal temperature in the middle of the thickest part.
- Remove pork at 140 degrees and leave in foil to carryover cook to 145 degrees as it rests for 10 minutes.
- Slice after 10 minutes, garnish with sesame seeds, parsley and sauce from the pan, and enjoy!
- If you would like a thicker sauce, you may drain sauce from pan and heat in pan on stove with 1 tablespoon instant cornstarch to thicken (the kind you don't need to mix with water before adding to recipes is my preference), then spoon over sliced pork!

- In a large mixing bowl whisk together the paprika, salt & pepper, garlic powder, onion, powder, oregano, mustard powder, cumin and sage. Set aside.
- Place Pork tenderloin on a cutting board and with a sharp knife remove the silverskin from the pork. Discard the silverskin.
- With a dry paper towel pat all the surface of the pork removing as much moisture as possible. Throw away the damp paper towels.
- You will use 2 tablespoons of pork rub per each pound of pork tenderloin. Pictured is a 1 pound tenderloin.
- Remove 2 tablespoons of the pork rub from the mixing bowl.
- Place pork in the mixing bowl with the remaining pork rub and coat the tenderloin with the rub. Gently pat the rub on the pork.
- Shake off any excess pork rub and place in the air fryer basket.
- Turn the air fryer to 375°F degrees and set the timer to 17 minutes or according to the manufactures recommendation. Turn the pork half way though the cooking time. Cook until the internal meat thermometer reaches 140°F degrees.
- Let the pork tenderloin rest for 3 minutes before cutting into it. The meat will continue to cook and according to the National Pork Board, pork tenderloin should reach 145°F degrees.
