This is a receipe I received from my mother. These are a little time consuming to make, but there are never any left when I take them to parties! You have to use a mini muffin pan, as this is the only way these will work.

3 ounces cream cheese
1/2 cup butter
1 cup flour
1 egg
1 cup dark brown sugar
1 teaspoon butter
1 pinch salt
1 teaspoon vanilla

Steps:

  • In a medium size bowl combine 3 oz of cream cheese, 1/2 cup butter, and 1 cup of flour.
  • Beat on medium speed until a soft dough forms.
  • Use a mini muffin pan (only the mini will work, regular muffin pan size is too big) and scoop about a tablespoon of dough into each muffin cup.
  • Using your fingers work dough into the cup shape (all the way up the sides about an 1/8 in thick, and about a 1/4 inch thick on the bottom.).
  • Continue until all the cups are made.
  • Preheat oven to 350 degrees.
  • In a small sauce pan cook 1 Tsp of butter until lightly browned.
  • In another medium bowl mix 1 egg, 1 cup dark brown sugar packed, 1 Tsp of browned butter, a pinch of salt, and 1 Tsp Vanilla.
  • Blend well until a smooth dark brown runny mixture forms.
  • Spoon the brown filling into each muffin cup about 1/2 to 3/4's full.
  • Repeat until all cups are filled.
  • Bake at 350 for approx 8-11 minutes. DO NOT OVERCOOK. The edge of the crust on the top of sides should be light brown. The brown filling will crust on top, and be runny in the middle.
  • Optional: An additonal garnish is to place a pecan half on top of brown filling before baking.

1 ½ cups all-purpose flour
1 cup packed brown sugar
¼ cup shortening
¾ teaspoon baking soda
⅛ teaspoon ground nutmeg
1 pinch ground ginger
1 pinch ground cinnamon
1 pinch ground cloves
¼ teaspoon salt
¾ cup molasses
¾ cup hot water

Steps:

  • Preheat oven to 450 degrees F (225 degrees C).
  • To Make Crumb Filling: In a medium bowl, combine flour and brown sugar. Mix well, then cut in shortening until mixture is crumbly.
  • To Make Molasses Filling: In a medium bowl, combine baking soda, nutmeg, ginger, cinnamon, cloves, and salt. Mix well, then stir in molasses. Pour in hot water and mix until smooth.
  • Sprinkle a layer of crumb filling into pastry shell. Cover with a layer of molasses filling. Alternate layers of crumb and molasses fillings, ending with crumb filling on top.
  • Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake an additional 20 minutes.

1 ½ cup all-purpose flour
½ teaspoon salt
⅓ cup vegetable shortening, cold
4 tablespoons unsalted butter, cubed and cold
3 to 5 tablespoons ice water
1 cup all-purpose flour
½ cup packed brown sugar
¼ cup vegetable shortening, cold
½ cup molasses
½ cup light corn syrup
½ cup brown sugar
2 eggs, lightly beat
1 cup hot water
1 teaspoon cornstarch

Steps:

  • In a medium bowl stir together the flour and the salt.
  • Add the cold vegetable shortening, incorporate into the flour using a pastry cutter or 2 forks until the shortening is evenly crumbly.
  • Cut in the cold butter. It's important not to overwork, there should be some smaller and some larger chunks.
  • Add 2 tablespoons of the ice water and toss. Add more water a tablespoon at a time just until the dough holds together when pinched. It still may look dry and crumbly.
  • Transfer to a floured surface, fold the dough into itself until all the flour is incorporated into the fats. Shape into a disk about 1 inch thick. Wrap tightly in plastic wrap and refrigerate for at least 1 hour to rest or up to 3 days before rolling.
  • When ready to roll, remove the plastic wrap from the disc. Lightly flour your work surface and your rolling pin. Start from the center of the disc using gentle force, rolling in all directions, turning the dough in quarter turns as you go to prevent sticking. If any sticking occurs lightly flour the surface.
  • Roll to about 13 inches.
  • Starting on one end, roll the dough around the rolling pin and transfer to the pan. Trim and shape as desired.
  • Set in the refrigerator while preparing the filling.
  • Preheat oven to 400 degrees.
  • Stir together 1 cup of flour and ½ cup brown sugar until well blended. Cut in the vegetable shortening with a pastry cutter or rub in with fingers until small crumbs form; set aside.
  • Dissolve 1 teaspoon cornstarch into 1 cup of very hot water; set aside. In another bowl, mix together the molasses, corn syrup, brown sugar and the eggs until well combined. Stir in the water and cornstarch mixture, mix well.
  • Pour half of the syrup mixture into the chilled prepared pie crust. Top with half of the crumbs and pour in the rest of the syrup mixture, evenly top with remaining crumbs. Carefully place on the bottom rack of the oven and bake for 10 minutes at 400 degrees. Turn down oven to 350 degrees and bake another 45 to 50 minutes. Remove from oven and place on a rack to cool.

1 cup warm water
1 cup molasses

1 9-inch pie crust (homemade or store-bought)
1 cup molasses
⅔ cup boiling water
1 teaspoon baking soda
TOPPING:
3½ cups all-purpose flour
1 cup sugar
¾ cup shortening, softened
Dash of salt

Steps:

  • Preheat the oven to 350°F.
  • In a large bowl, combine the molasses, boiling water, and baking soda. Pour the mixture into the unbaked pie shell.
  • To make the topping: In a large bowl, mix the flour with the sugar, shortening, and salt. Spread this crumb mixture on top of the molasses mixture in the pie shell. Bake until the center of the pie is set, about 45 minutes. Cool on a wire rack or windowsill until the pie is firm, about 45 minutes. Store any leftovers in a sealed cake safe. The pie will keep for about 5 days.

In her book The Best of Amish Cooking, Phyllis Pellman Good writes that shoofly pies may have been common in the past because "this hybrid cake within a pie shell" fared better than more delicate pies in the old-style bake ovens. With the advent of modern ovens, temperatures could be controlled, allowing for the development of the lighter pies that are standard today. Shoofly pies keep nicely in a pie cupboard. They also freeze well. This recipe uses 1/2 cup each of molasses and corn syrup for a sweeter flavor; you can simply use just a full cup of molasses, leaving out the corn syrup, for a stronger flavor if you like. This version also makes for a pie with a very wet bottom-the bottom of the crust disappears into the filling. If you'd like it drier, cut the water in the filling back to 3/4 cup.

1 cup all-purpose flour
1/2 cup light brown sugar
1 teaspoon ground cinnamon

1/2 cup dark corn syrup
1 cup boiling water
1 egg, beaten
1 teaspoon baking soda
Sweetened Whipped Cream (page 26), for topping (optional)

Steps:

  • Preheat the oven to 325°F. Line a 9-inch pie plate with the rolled-out crust.
  • To make the crumb topping, combine the flour, sugar, cinnamon, nutmeg, and butter and mix with a pastry blender or food processor until thoroughly combined and the mixture resembles fine crumbs.
  • To make the liquid bottom layer, mix the molasses and corn syrup, pour in the boiling water, and stir until evenly combined. Add the egg and baking soda and mix well.
  • Pour the liquid bottom layer into the crust, then sprinkle the crumb mixture over the top.
  • Bake for about 40 minutes, until medium set and dark brown. The filling should wobble very slightly in the center when the pan is jiggled, but a knife inserted in the center should come out clean. Cool on a wire rack for 1 to 2 hours before slicing. Serve warm or chilled, topped with a dollop of whipped cream or a drizzle of chocolate sauce if you like.

3/4 cup hot water

2 large eggs, lightly beaten

2 tablespoons unsalted butter

Steps:

  • To make the pastry: combine the flour, sugar, and salt in a large mixing bowl. Add the butter and mix with a pastry blender or your hands until the mixture resembles coarse crumbs. Pour in the ice water and work it in to bind the dough until it holds together without being too wet or sticky. Squeeze a small amount together, if it is crumbly, add more ice water, 1 tablespoon at a time. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  • Sprinkle the counter and a rolling pin lightly with flour. Roll the dough out into a 10-inch circle; to check the size, put the 9-inch pie pan upside down over the dough. Carefully roll the dough up onto the pin (this may take a little practice) and lay it inside the pie pan. Press the dough firmly into the bottom and sides so it fits tightly. Trim the excess dough around the rim. Place the pie pan on a sturdy cookie sheet so it can prevent spills from burning in the bottom of the oven.
  • Preheat the oven to 350 degrees F.
  • To make the filling: In medium-size mixing bowl, combine the molasses and water; stir in baking soda, eggs, and spices.
  • To make the crumb topping: With a pastry blender, mix together the flour, brown sugar, and butter, until it is the texture of coarse crumbs. Take 1/2 cup of the crumb mixture and put it in the bottom of the pie shell, pour in the molasses filling, and scatter the remaining crumbs on top.
  • Bake for 30 minutes, until the filling jiggles slightly and the top is firm. Let cool to room temperature before cutting. Serve with whipped cream.
