Learn how to make fresh tomato sauce with any type of tomatoes you have on hand. This recipe is rich in flavor and the most delicious compliment to any Italian meal. Say adios to canned tomatoes!

5 lbs fresh assorted tomatoes ((or all plum tomatoes))
2 Tablespoons olive oil
5 garlic cloves
1 small yellow onion
2 Tablespoons tomato paste
2 Tablespoons fresh basil ((or 1-2 teaspoon dried basil) )
salt and black pepper

Steps:

  • Sauté onions & garlic: Heat your sauce pot with oil, then saute diced onions and minced garlic until soft (about 3-5 minutes). Remove from burner and set aside.
  • Boil tomatoes: Then bring a large pot of water to a boil for blanching. In shifts, drop tomatoes into water while boiling until they begin to wrinkle and peel (about 2-3 minutes). Use a slotted spoon to remove tomatoes and place on sheet pan to cool.
  • Peel cooled tomatoes: Use hands to peel the skin from tomatoes. Use a pairing knife to carefully remove the hard tomato core. Roughly chop up tomatoes and add to pot with the onions and garlic.
  • Simmer: Add tomato paste and pinch of salt, let tomatoes simmer on LOW for up to 2 hours - stir often.
  • Season with herbs: When sauce is finished, season with salt to taste, add a dash of black pepper, and stir in chopped fresh basil. Enjoy! See notes for storing tips.

4 lbs fresh tomatoes, chopped & peeled
2 medium onions, chopped
4 garlic cloves, chopped
1/4 cup fresh basil, chopped
1/4 cup olive oil
1 teaspoon salt
4 sprigs parsley
1 tablespoon sugar
grated parmesan cheese
2 tablespoons fresh oregano
1 lb hot Italian sausage
1 lb ground beef

Steps:

  • To cook pasta sauce, heat olive oil over medium heat in a large iron skillet or heavy saucepan.
  • Add onion, basil, garlic oregano and salt.
  • Saute until onion is tender, approximately 5 minutes.
  • Add tomato, parsley and sugar; heat to a boil; reduce heat and simmer, uncovered for about 2 hours, stirring often or until sauce has thickened.
  • Remove parsley.
  • Brown meat add to sauce.
  • If needed add tomato sauce for consistency
  • Serve over cooked spaghetti or other Italian pasta and top with Parmesan cheese.

I discovered this sauce recipe by total accident, randomly paging through a 33 year old Sunset canning book. Once made, it is the BEST fresh tomato sauce I've ever tried or made. Well worth the time it takes to make from scratch.

2 onions, medium-sized, finely chopped
4 garlic cloves, minced
1/3 cup olive oil
5 lbs fresh tomatoes (about 12 medium-sized ones)
1/2 cup green onion (white and green parts minced)
1 green pepper, seeded and chopped
1 1/2 teaspoons salt
1 teaspoon black pepper
1/4 teaspoon anise seed, crushed
1 tablespoon oregano leaves, crushed
1 teaspoon rosemary, crushed
1 teaspoon paprika
2 cups dry red wine (to taste)

Steps:

  • In a large Dutch oven, cook onions and garlic in olive oil over medium heat until golden brown (about 15 minutes), stirring occasionally.
  • Meanwhile, immerse tomatoes, a few at a time, in a large pan of boiling water for 1 minute; then lift out and plunge in plunge into cold water. Pull off and discard skin.
  • Cut tomatoes into eighths and add cooked onions, along with green onion, green pepper, salt, pepper, anise seed, oregano, rosemary, paprika, and the 2 cups of dry red wine.
  • Bring mixture to boiling, stirring with a heavy wooden spoon to break up tomatoes. Cover, reduce heat, and simmer for 1 hour. Remove cover and boil until reduced to 8 cups.
  • You can use the sauce while hot, let it cool and refrigerate for 3 days, or freeze up to 4 months.

There are about as many versions of tomato sauce as there are cooks in the world. The Italian-American heritage of one of our test-kitchen team members informed the development of this recipe, leading us to a version of her family's favorite tomato sauce. A variety of canned tomatoes adds richness. A long simmer helps the flavors meld and results in a sauce that is perfect on pasta or nestled around chicken cutlets or meatballs.

1/2 cup extra-virgin olive oil
6 cloves garlic
1 medium onion, diced
One 28-ounce can whole San Marzano tomatoes
One 28-ounce can crushed tomatoes
One 14-ounce can tomato sauce
2 tablespoons tomato paste
1 teaspoon granulated garlic
1 teaspoon onion powder
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 piece Parmesan rind, optional
1 sprig basil

Steps:

  • Combine the olive oil and garlic cloves in a large saucepan over medium-low heat and cook, stirring occasionally, until the garlic is soft and golden brown, about 6 minutes (do not let the garlic burn). Once the cloves are nicely browned remove them from the pot with a slotted spoon and set aside.
  • Add the onion to the garlic-infused oil and cook until translucent, about 5 minutes. Crush the can of San Marzano tomatoes into the pot with your hands, then fill the can with water and pour it into the sauce. Stir in the crushed tomatoes, tomato sauce, tomato paste, granulated garlic, onion powder and crushed red pepper flakes. Season with salt and pepper.
  • Finely chop the reserved browned garlic cloves and add to the sauce.
  • Stir in the Parmesan rind, if using, and the basil sprig. Bring the sauce to a simmer and cook, stirring occasionally, until it has deepened in color and reduced slightly, about 1 hour 30 minutes (if the sauce begins to scorch, lower the heat). Season to taste with salt and pepper. Discard the Parmesan rind and basil before serving.

1 teaspoon crushed red pepper flakes
3 cloves garlic, smashed and chopped
One 28-ounce jar crushed red tomatoes, canned at the peak of the season, or store-bought canned crushed tomatoes
1 teaspoon kosher salt
Freshly ground black pepper
2 tablespoons fresh basil leaves

Steps:

  • Combine the olive oil, red pepper flakes and garlic in a saucepan. Saute over medium-high heat until the garlic is fragrant, about 3 minutes. Add in the tomatoes, salt and pepper to taste, bring to a simmer and cook for about 10 minutes. Tear the basil leaves and stir them into the sauce.
