- Preheat oven to 120°C / 250°F and set a wire rack on a baking tray.
- Place flour, cornflour and baking soda in a bowl, mix to combine.
- Add egg and milk, mix until incorporated (batter will be lumpy and thick).
- Add corn, parmesan, green onions and coriander. Mix until all the corn is evenly coated in batter.
- Add enough oil into the skillet so it just covers the base. Heat over medium high heat.
- Spray the underside of a spatula with oil (so batter won't stick when you flatten).
- Place 1/4 cup batter into skillet (ice cream scooper with lever is handy), then flatten to 1cm thick. Repeat with 2 or 3 more, but don't crowd the skillet.
- Cook 3 minutes until deep golden and crisp, then flip and cook the other side for 2 - 3 minutes.
- Transfer to rack and keep warm in oven. Repeat with remaining fritters, using more oil as necessary.

- Gather the ingredients.
- Using a sharp knife over a large bowl, carefully shave the corn kernels off the cob into the bowl. With the back of the knife, scrape the milky juice from the cob into the bowl as well.

- In a medium bowl, mix the corn, onion, chile if using, garlic, parsley and yeast flakes. Stir in the flour and baking powder. Gradually stir in the milk, mixing to combine all the ingredients. Season with a pinch of salt and pepper and stir in the lemon juice.
- Heat 1 tablespoon oil in a large sauté pan over medium-high heat. To check the heat, drop a test piece of batter in, and you should hear a sizzle in the pan.
- Spoon 1 tablespoon of the corn mixture into the pan for each fritter, leaving a little space between them so they don't stick together. Pat each fritter down with the back of the spoon so it is flatter and easier to cook on both sides. SUGAR-DUSTED CORN FRITTERS
I adapted this from an Amish recipe. I love them sprinkled with a little confectioner's sugar and served with maple syrup for breakfast. You can also serve them as a side dish. The yield is approximate. Depends on how large or small you make them, and how much corn you put into it.

- Beat the egg, milk and sugar together.
- Sift the dry ingredients and add to the egg mixture.
- (If using sifted flour, you can just mix the dry ingredients together well and still get excellent results).
- Add the melted butter or margarine (or oil) and beat or stir briskly by hand until well blended.
- Stir or fold in the corn until evenly distributed.
- Drop by tablespoons into hot deep fat (375 degrees) and cook until golden brown.
- Drain on paper towels.
- Place on plates and dust with confectioner's sugar if desired. These are best if served with maple syrup.
- Notes: I usually try one first.
- If I find the oil is bubbling through the fritter, which would make it too greasy, I'll add a little more flour to the batter to prevent that.
- Also, as a shortcut, instead of deep frying, I usually pour 2 or 3 inches of oil into a large saucepan or electric frying pan and fry that way.
- When one side is brown, I just turn and brown the other side.

- Roast the whole chiles in a dry skillet until lightly charred all over, then cool, peel, stem & seed.
- In a food processor combine the chile with the red pepper flakes & 2 cups of the corn, processing for a minute or until quite smooth, stopping the machine to scrape down the sides if necessary.
- Combine this puree with the whole corn kernels, egg, flour, spices, cilantro & season with salt & pepper. The mixture should hold together when you clump it, but if it doesn't add a little more flour.
- Put at least 2 inches of oil in a deep saucepan or skillet & heat over medium-high heat to 350 degrees F or until a pinch of flour dropped into it sizzles.
- Use a spoon or your hands to form the batter into golf-ball-size (or smaller) fritters, & gently slide them into the oil. Fry about 4 minutes or until golden brown, turning once.

- Position an oven rack about 4 inches below the broiler and heat the broiler on high. Arrange the tomatoes and garlic on a rimmed baking sheet and broil until the tomatoes are charred on one side, about 5 minutes. Turn the tomatoes and garlic and char on the second side, about 2 minutes longer. Let cool. Peel the tomatoes and garlic, discarding the skins and saving any juices that are released.
- In a blender, briefly purée the tomatoes and their juices, the garlic, chipotle chile, and 1/2 teaspoons salt-it needn't be perfectly smooth.
- In a medium, heavy-based saucepan, heat the oil over medium-high heat. When a drop of the puréed tomato mixture sizzles when added, pour in the remaining purée. Bring to a boil, stirring frequently. Adjust the heat to an active simmer and continue to cook, stirring frequently, until reduced to a scant cup and thickened to a sauce consistency, 8 to 12 minutes. Cool to room temperature. Stir in the cilantro and the lime juice. Season to taste with salt. Serve at room temperature.

- Put the corn, the flour, cornmeal, sugar, cheese, and salt in a large mixing bowl and toss well to combine.
- Mix the yolks and buttermilk together with a fork and add to the bowl, stirring with a large spoon just until there is no dry flour left, don't over mix. Feel free to add a touch more buttermilk if your mixture is very dry. It should be quite thick.
- Heat about 4 tablespoons or so of oil in a cast iron skillet. You want a good layer coating the bottom of the pan, about 1/8 to 1/4 inch deep. - Mix the dry ingredients in a large bowl under well incorporated. Then mix in the wet ingredients.
- Refrigerate for 30 minutes if possible. This will firm the dough up slightly but it will still be very wet. (If making this ahead, you can always refrigerate overnight and then fry when ready to serve.)
- *If necessary, you can add additional flour to firm up the batter a bit more. I didn't need to do this, but feel free.
- Add the oil to a deep fryer and heat until it reaches 375 degrees. If it’s not hot enough, the fritters will fall apart when added. When in doubt, add a small drop of batter into the oil and see if it almost immediately begins to fry.

- Combine the flour, cornmeal, baking powder, salt, pepper, and cayenne pepper in a large bowl. Add the corn kernels, tossing to coat them with the flour mixture.

- Heat 2-3 tablespoons of oil in a large skillet over medium heat. Use a large scoop to drop 1/4 cup of the corn fritter batter into the pan and flatten slightly with a spatula. I can usually fit 4 in my pan at a time.
