CHOCOLATE FUDGE ICING

Chocolate fudge icing image

Use this easy chocolate buttercream recipe for rich and smooth icing every time - ideal for finishing birthday, celebration or party cakes

Provided by Cassie Best

Categories     Afternoon tea, Dessert, Treat

Time 25m

Yield Covers 1 x 20cm sponge cake (serves 12)

Number Of Ingredients 5

100g milk chocolate, chopped into small pieces
200g slightly salted butter, softened
400g icing sugar, sieved
4 tbsp cocoa powder
2 tbsp milk

Steps:

  • Put the chocolate in a heatproof bowl, suspended over a pan of barely simmering water. Stir every now and then until melted. (Alternatively, melt in the microwave, stirring the chocolate every 20 secs so it doesn't burn.)
  • Remove the bowl from the heat and leave to cool a little. Meanwhile, put the butter and icing sugar in another large bowl and mash with a spatula to combine (this will prevent you covering the work surface in icing sugar), then whisk with a hand mixer until smooth.
  • Sift in the cocoa and pour in the melted chocolate and milk, then mix again until smooth, and use to ice your chosen cake immediately. Will keep in the fridge for up to a week, but remove an hour before using to bring it back to room temperature, and beat well.

THE VERY BEST CHOCOLATE FUDGE CAKE

The Very Best Chocolate Fudge Cake image

I have made this cake for the past several years with unfailing applause. I got the recipe from Cooks Illustrated. Do not substitute semisweet chocolate chips for the chopped semisweet chocolate in the frosting-chocolate chips contain less cocoa butter than bar chocolate and will not melt as readily. For best results, don't make the frosting until the cakes are cooled, and use the frosting as soon as it is ready. If the frosting gets too cold and stiff to spread easily, wrap the mixer bowl with a towel soaked in hot water and mix on low speed until the frosting appears creamy and smooth. Refrigerated leftover cake should sit at room temperature before serving until the frosting softens. Recipe for the wonderful Frosting is on this site "The Very Best Chocolate Fudge Icing"

Provided by Miss V

Categories     < 60 Mins

Time 55m

Yield 1 2 layer cake, 10-12 serving(s)

Number Of Ingredients 12

12 tablespoons butter (1 1/2 sticks, very soft)
1 3/4 cups all-purpose flour (8 3/4 ounces, sifted, unbleached)
4 ounces unsweetened chocolate (coarsely chopped)
1/4 cup Dutch-processed cocoa powder (3/4 ounce)
1/2 cup water (hot)
1 3/4 cups sugar (12 1/4 ounces)
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup buttermilk
2 teaspoons vanilla extract
4 large eggs
2 large egg yolks

Steps:

  • 1. FOR THE CAKE: Adjust oven rack to middle position; heat oven to 350 degrees. Grease two 9-inch-round by 2-inch-high cake pans with softened butter; dust pans with flour and knock out excess. Combine chocolate, cocoa powder, and hot water in medium heatproof bowl; set bowl over saucepan containing 1 inch of simmering water and stir with rubber spatula until chocolate is melted, about 2 minutes. Add 1/2 cup sugar to chocolate mixture and stir until thick and glossy, 1 to 2 minutes. Remove bowl from heat and set aside to cool.
  • 2. Whisk flour, baking soda, and salt in medium bowl. Combine buttermilk and vanilla in small bowl. In bowl of standing mixer fitted with whisk attachment, whisk eggs and yolks on medium-low speed until combined, about 10 seconds. Add remaining 1 1/4 cups sugar, increase speed to high, and whisk until fluffy and lightened in color, 2 to 3 minutes. Replace whisk with paddle attachment. Add cooled chocolate mixture to egg/sugar mixture and mix on medium speed until thoroughly incorporated, 30 to 45 seconds, pausing to scrape down sides of bowl with rubber spatula as needed. Add softened butter one tablespoon at a time, mixing about 10 seconds after each addition. Add about one-third of flour mixture followed by half of buttermilk mixture, mixing until incorporated after each addition (about 15 seconds). Repeat using half of remaining flour mixture and all of remaining buttermilk mixture (batter may appear separated). Scrape down sides of bowl and add remaining flour mixture; mix at medium-low speed until batter is thoroughly combined, about 15 seconds. Remove bowl from mixer and fold batter once or twice with rubber spatula to incorporate any remaining flour. Divide batter evenly between prepared cake pans; smooth batter to edges of pan with spatula.
  • 3. Bake cakes until toothpick inserted into center comes out with a few crumbs attached, 25 to 30 minutes. Cool cakes in pans 15 minutes, then invert onto wire rack. Cool cakes to room temperature before frosting, 45 to 60 minutes.

EASIEST BEST FUDGE FROSTING

Easiest Best Fudge Frosting image

I found this recipe years ago, and it got rave reviews, but I lost it and have looked for it ever since. Only 3 ingredients, VERY simple, and it generously frosts a 13 X 9 pan of brownies or Cake. Works best when slightly warm. I usually use it on brownies, (but usually have a little left for on top of ice cream)....Feel free to experiment....You can use semi sweet, dark, or milk chocolate, and you can garnish the top with nuts etc, but move quickly before it sets up all the way and your garnish won't "stick". Onr try and you will be hooked on the simplicity and the great flavor!

Time 5m

Yield 3 cups, 18 serving(s)

Number Of Ingredients 3

12 ounces chocolate chips
3 tablespoons butter
1 (12 ounce) can sweetened condensed milk (not evaporated milk)

Steps:

  • In microwave safe bowl ,melt the chocolate chips until just melted 1-2 minutes.
  • Stir with a spatula or scraper. Stir in the butter. Let the mixture sit for 4-5 minutes.
  • Add the can of sweeetened condensed milk and stir until smooth.
  • That's it! Frost the brownies or cake immediately as this mixture will set up and become more fudgey as it cools. If it cools too fast for you, place in the micrewave for 15 seconds to loosen it back up a bit.

Categories     Cakes

Time 1h25m

Number Of Ingredients 23

12 oz. bittersweet or semi sweet chocolate, melted and cooled
2 and 1/2 cups unsalted butter, softened to room temperature
3 cups powdered sugar, sifted
1/2 cup unsweetened cocoa powder, sifted
1/2 cup dutch process cocoa powder, sifted
1/2 cup hot water
1/2 cup full-fat sour cream, room temperature
1 tablespoon pure vanilla extract
1/8 teaspoon salt
2 and 1/4 cups all purpose flour
1 cup unsweetened cocoa powder
1/2 cup black cocoa powder (can substitute with unsweetened cocoa powder)
1 and 1/2 teaspoon salt
2 and 1/4 teaspoon baking soda
1 teaspoon baking powder
1 and 1/2 cups unsalted butter, room temperature
2 and 1/4 cups granulated sugar
4 large eggs, room temperature
3/4 cup sour cream, room temperature
1 and 1/2 tablespoon pure vanilla extract
1 and 1/2 tablespoon instant coffee granules
2 and 1/4 cups buttermilk, room temperature
Mini chocolate chips or fresh fruit

Steps:

  • Preheat oven to 350° F (177°C). Prepare four 8-inch round cake pans with parchment rounds, and grease the sides. Set aside.
  • In a large bowl, sift flour, cocoa, salt, baking powder and baking soda. Whisk to combine, set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and sugar on medium speed until pale and fluffy, 4-5 minutes. Scrape down the sides and bottom of the bowl.
  • Lower the speed to medium-low and add eggs one at a time, mixing after each addition until just combined. Scrape down the sides and bottom of the bowl.
  • In a small bowl, combine the vanilla and instant coffee granules. Add the sour cream to the batter along with the vanilla coffee mixture and beat on medium speed until combined.
  • Alternately add dry ingredients in thirds and buttermilk in 2 additions to the batter, beginning and ending with the dry ingredients. Beat each addition just until combined. Divide batter equally between the cake pans, a little over 2 cups per pan.
  • Bake two layers at a time for 20-25 minutes or until a toothpick inserted into the center comes out clean and cake springs back when lightly touched.
  • Remove cakes from oven and allow to cool in pans for about 10 minutes, then turn onto cooling racks to cool completely before frosting. Or at this point, you can wrap all the cake layers tightly in plastic wrap and freeze or refrigerate until ready to assemble.
  • Put chocolate in a heat-safe bowl and heat in the microwave for 30 second intervals, stirring after each interval until chocolate is completely melted and smooth. Set aside to cool.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with a hand-held mixer, beat the butter on medium speed until light and fluffy, about 5-6 minutes. \
  • Turn the mixer to low, and gradually add the powdered sugar one cup at a time, along with the cocoa powders.
  • Once incorporated, add hot water, sour cream, vanilla and salt and beat until combined. Pour in cooled melted chocolate and mix on low to combine.
  • Once the chocolate is combined, increase mixer speed to high and whip until light and fluffy, about 2-3 minutes.
  • Once cake layers are completely cooled, place one layer on a turntable. Using an offset spatula, spread about 1 cup of the fudge frosting on top. Repeat with all layers, placing the final layer upside down.
  • Frost the entire cake in a thick layer of fudge frosting. Use the back of a spoon to create swirls in the frosting. Top with mini chocolate chips of fresh fruit. Enjoy!

4 ½ cups powdered sugar ((565g))
1 ½ teaspoons vanilla extract

Steps:

  • Combine chopped chocolate, butter, milk, and salt in a saucepan over low-heat.
  • Stir frequently until chocolate and butter are completely melted and mixture is smooth.
  • Remove chocolate mixture from the heat and pour into a large bowl. Add powdered sugar and vanilla extract and whisk until icing is glossy and smooth.
