Oven-Roasted Prime Rib with Horseradish Sauce image

6 pounds Prime Rib with bone, remove excess fat
2 tablespoons fennel seed
2 tablespoons whole coriander seed
2 tablespoons granulated garlic
1 tablespoons caraway seed
1 tablespoon black peppercorns
1/4 cup coarse sea salt
1/4 cup grapeseed oil
Horseradish Sauce, recipe follows
2 tablespoons freshly grated horseradish
8 ounces sour cream drained
1/4 cup fresh lemon juice
1 tablespoons Worcestershire sauce
1/2 teaspoon black pepper
Salt
Dash hot sauce

Steps:

  • Preheat oven to 325 degrees F.
  • In a coffee grinder, pulse spices until well combined and slightly coarse; add sea salt. Rub prime rib thoroughly with spices, coating entirely.
  • Pour oil over roast. Gently rub in. Sear prime rib in a heavy saute pan on all three sides; about 2 to 3 minutes each side. Place pan in oven. Cook for 1 1/2 hours until you reach an internal temperature of 135 degrees F.
  • Remove from oven and place on hot grill for an additional 15 minutes to grab grill flavor and caramelize the surface of the meat. Remove from grill and let rest for 10 minutes before slicing. Serve with the Horseradish Sauce.
  • In a medium sized bowl, mix together all ingredients and serve with Prime Rib. Place in refrigerator until ready to serve.

FOR THE MEAT:
2tablespoons kosher salt
3teaspoons ground black pepper
3 cloves garlic
2 medium shallots
2tablespoons fresh rosemary leaves
2tablespoons fresh thyme leaves
1/2 cup olive oil
1 ( 8lb) standing rib roast, trimmed (to multiply or divide the recipe,this translates to roughly 1 rib for every 2-3 people)
FOR THE HORSERADISH SAUCE:
1 cup heavy cream
6tablespoons lemon juice
1/2teaspoon salt
1/4teaspoon paprika
1/4teaspoon cayenne pepper
4tablespoons grated horseradish
FOR THE SAUTEED MUSHROOMS:
2 lbs mushrooms, washed, dried, and if large, chopped
4tablespoons unsalted butter
2tablespoons olive oil
1-2tablespoons Worcestershire sauce
2 cloves garlic, finely chopped
salt and pepper, to taste
6tablespoons fresh parsley, chopped

Steps:

  • 1. MARINATE: In a food processor, place salt, pepper, garlic, shallots, rosemary, thyme, and olive oil. Pulse until combined. Place the roast bone-side down in a large pan and pour the marinade over it. Rub as much as you can into every crevasse. Cover and refrigerate 4-24 hours. 2. ROAST: Remove the meat and let it come to room temperature, about 1 hour before you plan to put it into the oven. Meanwhile, preheat the oven to 550 and place the rack in the center. Insert a meat thermometer into the thickest part of the roast. When the oven is ready, place the roast, uncovered, into the oven. Immediately reduce the oven temperature to 350. Cook until the thermometer registers 125 degrees, about 15-20 minutes per pound, or 2 1/2 hours for an 8 lb roast. Check the temperature of the meat in several other places. A range of 125-155 will give you a good variety of doneness. Cover the roast with foil and let it rest on the counter at least 15 minutes before carving. 3. MAKE THE SAUCE : You can do this while the meat cooks. In a medium bowl, beat cream until stiff. With the mixer on, add lemon juice, salt, paprika, cayenne and horseradish. Chill until ready to serve. 4. SAUTE THE MUSHROOMS: Heat a large skillet over HIGH heat. Add the butter and olive oil. When the butter foams, give the pan a shake and then add the mushrooms, Worcestershire sauce, and garlic. Toss the mushrooms until brown, about 5-10 minutes. Remove from heat and season with salt and pepper to taste. Toss with parsley and then place in a serving dish. 5. CARVE: Slice the first piece between the ribs, close to the bone. Cut the second piece half way to the next bone and so on and so on giving each person basically half of the meat between the ribs. 6. SERVE: Top with sauteed mushrooms and whipped horseradish sauce. Garnish with fresh parsley.

This is truly the anti-vegetarian dish. Prime rib is one of those classics you can pull out that will always blow people away. It's a good special occasion dish, so good that the occasion may be nothing at all. When ordering the rib roast from a butcher, be sure to request a "top choice" roast cut from the small loin end, the best being ribs 12 through 10. Have the butcher cut off the chine (backbone) to make carving easier. The rib bones look best if they are shortened and frenched (the butcher will be happy to do this for you as well, unless he's a sourpuss, in which case get a new butcher).

5 garlic cloves, smashed
1/4 cup prepared horseradish
Needles from 2 fresh rosemary sprigs
Leaves from 4 fresh thyme sprigs
1/2 cup sea salt
1/4 cup freshly ground black pepper
1/2 cup extra-virgin olive oil
2 carrots, cut in chunks
2 parsnips
1 red onions, halved
1 head garlic, halved

Steps:

  • Preheat the oven to 350 degrees F. Lay the beef in a large roasting pan with the bone side down. (The ribs act as a natural roasting rack.)
  • In a small bowl mash together the garlic, horseradish, rosemary, thyme, salt, pepper, and olive oil to make a paste. Massage the paste generously over the entire roast. Scatter the vegetables around the meat and drizzle them with a 2-count of oil. Put the pan in the oven and roast the beef for about 1 1/2 to 2 hours for medium-rare (or approximately 20 minutes per pound). Check the internal temperature of the roast in several places with an instant-read thermometer; it should register 125 degrees F. for medium-rare. Remove the beef to a carving board and let it rest for 20 minutes. The internal temperature of the meat will continue to rise by about 10 degrees. Remove the vegetables and set aside. Pour the pan juices into a fat separator or small bowl and set aside to allow the fat and beef juices to separate. Pour off and discard the fat. You can use the tasty beef juices for Sauteed Mushrooms.

2 Tbsp. GREY POUPON Dijon Mustard
1/4 tsp. dried thyme leaves
1/4 tsp. ground sage
1-1/2 cups fat-free reduced-sodium beef broth
1/4 cup Marsala wine

Steps:

  • Heat oven to 325ºF.
  • Place meat in shallow pan; sprinkle with 1/4 tsp. pepper and salt. Bake 2 to 2-1/2 hours or until internal temperature of meat reaches 145ºF. Let stand 10 min. (Temperature will rise to 160ºF).
  • Meanwhile, melt butter in medium saucepan on medium heat. Add mushrooms; cook and stir 3 min. Stir in flour, mustard, herbs and remaining pepper. Gradually stir in broth and wine; cook and stir on medium heat 4 min. or until thickened.
  • Serve meat with sauce.
