LEFTOVER THANKSGIVING TURKEY BONE-BROTH

Steps:
- Place the turkey carcass (don't worry about a little remaining meat on the bone! it doesn't have to be perfect) in a very large pot. Add the onion, celery, carrot, bay leaves, rosemary, thyme, peppercorns and the apple cider vinegar.
- Fill the pot with water. This will likely be close to 16-18 cups of water, but this depends on the size of your pot. Don't worry, some of the water will cook off/evaporate during the cooking process.
- Bring the pot to a boil, once boiling, reduce heat to low, cover, and cook for 12-24 hours.
- When the cook time is complete, use a fine mesh strainer, strain the broth and discard the carcass/scraps from the cooking process.
- Storing Tips: Allow the broth to cool completely before pouring into mason jars. I recommend using wide mouth mason jars. If you are using regular mason jars and you are planning on freezing them, only fill them about 3/4 way full. The broth expands in the freezer and can cause the glass to break. The broth is good in the fridge for about 7-10 days. Or you can freeze for about 3 months.

- Heat oil in a large stock pot or Dutch oven over medium heat. Add leeks, carrots, garlic, and celery and saute 4 minutes, until soft. Add turkey, bay leaves, thyme, salt, and black pepper and stir to mix well. Add chicken broth and bring mixture to a boil. Reduce heat to medium-low, partially cover and simmer 10 minutes.
- Return mixture to a boil and add egg noodles. Cook 10 minutes, until egg noodles are just tender. Stir in peas and cook until peas are just heated through, about 1 minute.
- Remove from heat, discard bay leaves and stir in parsley.

- Place the turkey carcass, bones from wings and drumsticks, neck bone, onion, carrots and garlic in a 15x10x1-in. baking pan coated with cooking spray. Bake, uncovered, at 400° for 1 hour, turning once., Transfer the carcass, bones and vegetables to an 8-qt. stockpot. Add 4 qts. cold water; set aside. - Place the turkey carcass in a large, deep pot, and add the stuffing, celery, carrots, onion, bay leaves, poultry seasoning, sage, and chicken broth. Pour in additional water if needed to cover. Bring to a boil over medium-high heat; reduce heat to medium, and simmer for about 1 hour, skimming off any foam. Remove the carcass and any bones. Pick any meat off and return to the pot, discarding bones and skin.

- Cook noodles according to package directions.
- Add frozen vegetables and continue cooking for another 5 minute Drain well, set aside.

TURKEY NOODLE SOUP
With Thanksgiving close at hand (early October in Canada and late November in the United States) this simple recipe helps utilize the inevitable turkey leftovers. Enjoy!

Steps:
- In an eight quart kettle or Dutch oven place turkey bones, water -- down through to and including the bay leaf.
- Heat to boiling; reduce heat, cover and simmer for 1 hour.
- Remove the bones to a platter and let c ool.
- Add the parsley through to green beans.
- Heat to boiling; reduce heat and simmer for 10 minutes.
- Meanwhile, scrape meat from carcass and return meat to soup pot. Add liquid if required.
- Heat to boiling; add noodles and cook uncovered for 10 minutes.
- Melt butter in a small frying pan; stir in flour.
- Cook over low heat, stirring constantly, until the flour browns.
- Stir into boiling soup.
- When the soup returns to a boil; reduce heat and simmer for 5 minutes.
- Serve hot in large bowls - as if there were any other kind! - Enjoy.
- Notes: I serve this with fresh French Bread and butter.
- I have used yellow beans and a mixture of both.
- Once I wound up using frozen mixed vegetables - and it was still good.
- On two makings, chicken was substituted for the turkey - and it turned out well.
- Hints on Herbs and Spices: To substitute dried herbs for fresh, use 1/3 tsp powdered or 1/2 tsp crushed for every Tbsp of fresh chopped herbs.
- To test for dryness before packing (in case of drying f resh herbs for winter use) put a few sprigs or leaves in a tightly covered jar and watch for condensation.
- Store herbs in tightly covered jars, away from heat. Add mint, oregano, basil and any other dried herbs to recipes at the end or near end of cooking time for a more pronounced flavour.
- If you are enlarging recipes, spice to taste rather than to measure. When preparing cooked foods for freezing, it is advisable to under-season them with herbs or spices, then add more seasoning to taste when you reheat them and you will have the ultimate in flavour.

- Toast the cardamom pod, cloves, star anise, fennel, and coriander in a small skillet over medium-low heat until fragrant, 5 to 7 minutes. Place the spices onto the center of a 8 inch square piece of cheesecloth. Gather together the edges of the cheesecloth, and tie with kitchen twine to secure. Sear both sides of the ginger and 1/2 onion in the same skillet until lightly charred, about 3 minutes on each side.
- Place the turkey carcass, water, sachet, ginger, and onion in a large pot over medium-high eat. Bring to a boil, then reduce to a simmer. Simmer for 2 hours.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rice noodles, and return to a boil. Cook the noodles uncovered, stirring occasionally, until the noodles have cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
- Remove the carcass, sachet, ginger, and onion from the soup. Strain the soup to remove any meat that may have fallen off the bones, if necessary. Season with fish sauce and salt. Divide the rice noodles and turkey meat evenly into 4 large bowls. Scatter the basil, cilantro, and sliced onion on top. Ladle the soup on top. Serve with a wedge of lime and hot sauce.

MEMA'S THANKSGIVING LEFTOVERS SOUP (TURKEY NOODLE SOUP)
Growing up Black Friday always meant Thanksgiving Soup. After the family was done with dinner on Thanksgiving my mom always tossed the carcass and whatever else was left over into a large stock pot. When I moved out this is one of the recipes that I requested, but I had to wait till Thanksgiving and write down everything she did because she refused. I have since played with the ingredients and worked it so that I can make it year round and have it taste the same.

- Place turkey in a large stock pot, or crock pot, add water, stock, celery seeds, onion flakes, sage, and thyme.
- Bring to a boil then reduce to a simmer for 6 - 8 hours, or set crock pot on high for 6 hours.
- Remove the turkey from the liquid then separate turkey meat in small bite size chunks from all bones, cartilage, excess skin, gristle from the turkey and discard. Be very careful when doing this as there are a lot of small bones.
- Place turkey meat back into liquid, add turkey gravy and mix.
- Add egg noodles and cook for recommended time on package.
- Add 2 cups of stuffing and stir.
- Toss remaining stuffing on as garnish to a full bowl.

- Combine the turkey drumsticks and water in a large soup pot and bring to a boil. Stir in onions, carrots, celery, garlic, salt, black pepper, sage, thyme, rosemary, and celery salt; reduce heat to a simmer. Cook until the turkey meat is very tender, about 2 hours.
