Let the butter melt before spooning the batter into the frying pan, form 4 inch pancakes out of the batter. Once bubbles form on the top of the pancakes, flip them over, and cook them on the other side for about 3 minutes. Continue with this process until all of the batter has been made into pancakes.

BUCKWHEAT PANCAKES

Buckwheat Pancakes image

Layer these earthy pancakes with sausage patties and fried eggs for a hearty, crowd-pleasing breakfast. Or go lighter and top with yogurt and fresh fruit. Either way, don't skimp on the maple syrup!

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Pancake Recipes

Time 50m

Number Of Ingredients 12

1 1/2 cups unbleached all-purpose flour
1/2 cup buckwheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons sugar
1/2 teaspoon kosher salt
3 large eggs, room temperature
2 tablespoons unsalted butter, melted, plus more, room temperature, for serving
1 1/2 cups buttermilk
1 teaspoon pure vanilla extract
Safflower oil, for griddling
Pure maple syrup, for serving

Steps:

  • In a large bowl, whisk together flours, baking powder, baking soda, sugar, and salt. Make a well in center; add eggs, butter, buttermilk, and vanilla. Whisk until just combined but still lumpy (do not overmix). Let stand 15 minutes.
  • Preheat a large cast-iron or nonstick skillet or griddle over medium. Drizzle with 1 teaspoon oil; wipe with a paper towel to leave a thin film. Pour 1/4 cup batter per pancake onto skillet, leaving 1 inch between each. Cook until bubbly on top and golden on bottom, and beginning to lift from skillet along bottom edges, 2 to 3 minutes. Flip and cook on other side until golden on bottom, puffed, and just cooked through, about 1 minute more. Transfer to a baking sheet lined with a wire rack; keep warm in oven on low heat until ready to serve. Serve with butter and syrup.

BUCKWHEAT AND OAT PANCAKES

Buckwheat and Oat Pancakes image

I've been working on this recipe for a few months now and I'm happy with this final version. I've attempted to make it healthy without being austere. If you can't buy oat flour locally you can make it by processing rolled oats or just go ahead and use the rolled oats as is. Hope you enjoy it as much as we do. This is great for a cozy winter supper with grilled turkey sausage and a grilled seasonal vegetable.

Provided by sugarpea

Categories     Breakfast

Time 25m

Yield 10 pancakes

Number Of Ingredients 12

1/2 cup buckwheat flour
1/2 cup oat flour or 1/2 cup rolled oats

1/2 teaspoon salt
1 eggs or 1 equivalent egg substitute
3/4 cup buttermilk
1/2 cup unsweetened cinnamon applesauce
2 tablespoons melted butter or 2 tablespoons oil, of choice

CHOCOLATE BUCKWHEAT PANCAKES

Chocolate Buckwheat Pancakes image

A delicious looking and sounding recipe I was sent from Clean Home Journal. Healthy buchwheat meets luscious chocolate! ;)

Provided by Mommy Diva

Categories     Breakfast

Time 35m

Yield 12 5 inch pancakes, 4 serving(s)

Number Of Ingredients 10

1 cup buckwheat pancake mix
1/3 cup unsweetened cocoa powder
4 tablespoons powdered sugar (plus additional for dusting)
2 tablespoons vegetable oil (plus 2 teaspoons for griddle)
1 large egg
1 1/4 cups low-fat milk
1/4 cup mini chocolate chip (optional)
butter
1/2 cup fresh raspberries or 1/2 cup fresh sliced strawberry
raspberry flavored syrup or strawberry syrup

Steps:

  • Preheat the oven to 200 degrees F and place a baking sheet or oven-proof serving platter in the oven.
  • In a medium bowl, blend the pancake mix, cocoa and 4 Tablespoons of powdered sugar with a whisk or fork.
  • In a 2-cup liquid measuring cup mix the oil, egg and milk; Add the wet mixture to the dry mixture and stir just until blended, about 30 seconds, leaving lumps in the batter (Do not over-mix.).
  • Let the batter rest 5 to 10 minutes then gently stir in mini chocolate chips, if using.
  • While the batter rests, warm an electric griddle to 375 degrees F then lightly brush the surface with 2 teaspoons of vegetable oil (a large, heavy-bottomed nonstick skillet or griddle on the stove, on medium high heat, will also work - heat until drops of water dance on the surface and evaporate) .
  • Pour 1/4 cup of the batter onto the heated griddle for each pancake, flipping the pancakes with a flat spatula when bubbles appear on the pancake edges, after approximately 1 to 2 minutes.
  • Cook until steam rises from the pancakes, about 30 to 60 seconds then transfer to the baking sheet or platter to keep warm in the oven until all pancakes are cooked.
  • Remove the platter from the oven, dust lightly with powdered sugar and serve immediately along with butter, syrup and berries already on the table.
  • Enjoy! ;).

RAISED BUCKWHEAT PANCAKES

Raised Buckwheat Pancakes image

These Old-Fashioned Buckwheat Pancakes are hearty with a slightly nutty flavor. And because they are raised overnight with yeast, they are lighter and fluffier than typical buckwheat pancakes.

Provided by My Homemade Roots

Number Of Ingredients 9

1 ¼ teaspoon active dry yeast (1 packet)
½ cup warm water
2 cups buckwheat flour
1 cup all-purpose flour (or gluten-free flour blend)
1 ½ teaspoon salt
2 cups cold water
4 tablespoons butter, melted
1 tablespoon brown sugar
1 teaspoon baking soda dissolved in ½ cup hot (not boiling) water

Steps:

  • Dissolve the yeast in the warm water and set it aside. It should become foamy after five minutes. If it doesn't, discard the yeast and use new yeast.
  • In a separate bowl, whisk together the flours and salt.
  • Combine flour mixture with the dissolved yeast mixture, along with 2 cups of cold water. Cover and refrigerate until morning.
  • In the morning, before making the pancakes, mix together butter, brown sugar, and dissolved baking soda, and add to the batter you prepared the night before. Use a spoon or spatula to combine, and set aside for 15 minutes.
  • Cook pancakes on medium heat on a lightly greased griddle or cast-iron skillet. I like to use a ⅓ cup measuring cup to scoop out the batter (use ¼ cup for smaller cakes).

BUCKWHEAT PANCAKES

Buckwheat Pancakes image

I decided to make buckwheat pancakes for a few reasons: I get lots of requests for anything breakfast, I'm trying to cook with more whole grains, and I heard someone say it's almost impossible to make a great pancake using 100% buckwheat flour.

Provided by Chef John

Categories     100+ Breakfast and Brunch Recipes     Pancake Recipes     Whole Grain Pancake Recipes

Time 25m

Yield 4

Number Of Ingredients 9

1 cup buckwheat flour
1 ½ teaspoons white sugar
1 teaspoon baking powder
¼ teaspoon salt
¼ teaspoon baking soda
1 ¼ cups buttermilk
1 large egg, beaten
¼ teaspoon vanilla extract
1 tablespoon unsalted butter, or as needed

Steps:

  • Whisk buckwheat flour, sugar, baking powder, salt, and baking soda together in a bowl.
  • Beat buttermilk, egg, and vanilla extract together in another bowl. Pour flour mixture into buttermilk mixture; whisk until batter is thick and smooth. Let batter rest for 5 minutes until bubbles form and batter relaxes.
  • Melt butter on a griddle over medium heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

  • To a high-powered blender, add the buckwheat flour and pumpkin puree, then pour the milk over the top so that the flour is moistened. Add the remaining ingredients: eggs, oil, maple syrup, vanilla, apple cider vinegar, baking soda, salt, and spices. Blend until combined, stopping to scrape down the blender once or twice as needed.
  • Heat a large skillet or griddle over medium low heat. Low and slow is key to cooking these pancakes to ensure that they cook through but do not burn. Don't rush it! Lightly coat with cooking spray or a small amount of oil. Once the pan is hot, for each pancake, pour 1/4 cup of the batter onto the pan. Let cook until the pancakes look dry at the ends, about 3 minutes (bubbles will not form on top). Flip and cook on the other side until golden, about 90 additional seconds. Serve immediately with any desired toppings or place in the oven to keep warm until ready to serve.
