Steps:
- In a large skillet, heat oil over medium-high heat. Add prosciutto; cook and stir until crisp. Remove from pan with a slotted spoon. Add onions to the same pan; cook and stir until tender., In a large bowl, whisk egg substitute, milk, mustard and pepper. Stir in bread and onions. Reserve 2 tablespoons cooked prosciutto for topping; stir remaining prosciutto into bread mixture. , Transfer half of the mixture to a greased 13x9-in. baking dish; sprinkle with half of the cheese. Top with remaining bread mixture. Separately cover and refrigerate strata and reserved prosciutto overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats. Bake, uncovered, 20 minutes. Sprinkle with remaining cheese; top with reserved prosciutto. Bake 15-20 minutes longer or until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.

CHEESE STRATA
This is an easy breakfast dish-great to make ahead for rushed mornings as it can be refrigerated overnight. Almost any chopped vegetable or meat can be added; just add before the cheese layer. If you're feeding a crowd, just double and use a 9x13 pan. This is adapted from a Mennonite cookbook, More-with-Less.

Steps:
- Arrange half the bread in a buttered 2 1/2 quart baking dish or 8x8 pan.
- Drizzle half the melted butter over the bread.
- If adding veggies or meat layer those on next.
- Cover with the shredded cheese.
- Top with remaining bread and drizzle remaining butter over.
- In a small bowl, beat the milk, eggs and seasonings.
- Pour over the bread.
- Bake, covered, at 350 degrees for 40 minutes. Uncover and bake 10 more minutes.
- Can be refrigerated unbaked up to 1 day.

PROSCIUTTO AND GOAT CHEESE STRATA
This is great for brunch. Serve with fresh melon & berries. Recipe courtesy of my GF on the east coast and epicurious.com This will likely serve more than 6-9, depending on how large you cut the servings. Recipe can easily be halved in an 8x8 baking dish. Cooking time = bringing to room temperature before cooking & cooking time. Please note: The first time I made this, I sliced my bread thick and only had room in my baking dish for one layer, then I topped it with the cubed bread. It turned out beautifully. The 2nd time I made this, I had the bakery slice the bread and was able to fit 2 layers in the baking dish. I also topped the strata with Recipe #496356 and I have to say, that put this recipe over the top! Try it, you'll love it too.

- Spray baking dish with nonstick cooking spray.
- Line bottom of 13x9x2-inch glass baking dish completely with 1 layer of bread, cutting some slices to fit.
- Arrange half of prosciutto evenly over bread. *Be sure to cut the prosciutto into strips or diced into squares. This will make it easier at serving time.
- Sprinkle half of goat cheese and half of provolone over bread.
- Sprinkle with half of green onions and half of basil.
- Top with second layer of bread, if using a 2nd layer.
- Layer remaining prosciutto, goat cheese, provolone, green onions, and basil atop bread.
- Cut remaining bread & crusts into 1/4-inch cubes. Sprinkle over top.
- Whisk eggs, milk, mustard, and salt in bowl. Season with pepper.
- Pour egg mixture over strata; press down on bread with spatula.
- Drizzle melted butter over strata.
- Cover and refrigerate overnight.
- NEXT DAY.
- Preheat oven to 350°F.
- Uncover strata and let stand at room temperature 30 -60 minutes.
- Bake uncovered until center is set and top is brown, about 1 hour.

PROSCIUTTO, FETA, AND SPINACH STRATA
Marked vegetarian because it tastes amazing even when you take out the Prosciutto. I LOVE THIS DISH. I have a series of recipes I got out of what I thought would be a useless magazine full of ho-hum recipes that I was given for free at the Check out stand at my local grocery store. The magazine is called "Dan's real food Spring 2008" Turns out, they are some of the best recipes I have ever come upon. This is one of those recipes. By the way, I made this one time on a camping trip inside a dutch oven and it just came out WONDERFULLY. Seriously, one of my favorite recipes ever.

- You can assemble the night before so that the layers of bread, cheese and spinach soak up the egg-and-milk base, but it is not necessary.
- Remove crusts from bread. Spray an 11x7 inch glass baking dish with cooking spray. Cover bottom of dish with layer of bread.
- Use half of the prosciutto to cover bread in an even layer. Sprinkle with half of the feta and half of the provolone. Sprinkle with half of the green onions, half spinach, and half basil.
- Repeat with second layer of bread and the remaining ingredients in the same order.
- Cut remaining bread into 1/4 inch cubes and scatter evenly on top.
- Beat together eggs, half-and-half, and hot sauce until well blended. Pour mixture over layers. Press down firmly with a spatula. Melt butter and drizzle over top.
- Cover and refrigerate overnight or for at least 5 hours (optional).
- Preheat oven to 375 Farenheit. Uncover dish and bake until golden, about 1 hour.
PROSCIUTTO FETA CHEESE STRATA
A lovely Greek-style breakfast, lunch or brunch dish from the Rockledge Inn in Colorado. While it is very easy to prepare, it does need to be assembled the night before, refrigerated overnight and then allowed to sit at room temperature before baking for an hour, so prep time includes 8 hours in the fridge and half an hour sitting time.

- Lightly grease casserole.
- Cut 3 slices of bread into 3 strips each. Fit into casserole. Sprinkle with salt, pepper and 1/3 of the onion.
- Add 1/3 of the cheese. Repeat layers two more times.
- Beat eggs, add milk, Worcestershire sauce and mustard. Pour over bread mixture.
- Allow to set in the refrigerator overnight.
- Take out 2 hours before baking.
- Preheat oven to 325 degrees Fahrenheit, then bake for 50 minutes.
