1 ready to bake pizza crust
1/2 cup McCormick Simply Better Turkey Gravy
1 cup turkey (diced)
2 cups shredded mozzarella cheese
1/3 cup mashed potatoes
1/2 cup stuffing
1/2 cup cranberry sauce
2 tbsp freshly chopped parsley

Steps:

  • Preheat oven to 450 degrees. Spread gravy in an even layer onto the ready to bake pizza crust, leaving a small edge for the crust.
  • Spread diced turkey around the pizza and cover with shredded cheese to keep the turkey from drying out.
  • Spoon small amounts of mashed potatoes and stuffing around the pizza.
  • Drizzle cranberry sauce on top of pizza. Warm sauce in the microwave for 30 seconds at a time if needed in order for the sauce to easily drizzle.
  • Bake in the preheated oven for 12-15 minutes until cheese is bubbly and starting to brown.
  • Remove from oven and garnish with parsley. Slice and serve hot.

2 tablespoons olive oil, divided
1 ½ cups sliced fresh mushrooms
2 teaspoons minced garlic
1 ½ cups turkey gravy
2 cups chopped cooked turkey
1 ½ cups mashed potatoes
2 cups shredded mozzarella cheese
¼ cup chopped fresh parsley
½ teaspoon garlic powder
¼ teaspoon garlic salt

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease or flour a pizza pan.
  • Roll dough onto the prepared pizza pan.
  • Heat 1 1/2 tablespoons olive oil in a skillet over medium-low heat; cook and stir mushrooms and garlic until mushrooms are tender, 5 to 10 minutes.
  • Spread gravy over pizza dough; top with mushroom mixture, turkey, and spoonfuls of mashed potatoes. Sprinkle mozzarella cheese and parsley over pizza.
  • Whisk remaining 1/2 tablespoon olive oil with garlic powder and garlic salt; brush over pizza crust.
  • Bake in the preheated oven until dough is cooked and cheese is melted, 12 to 15 minutes. Cool slightly before serving, 3 to 5 minutes.

A fun recipe for leftover Thanksgiving turkey. Homemade pizza crust topped off with mashed potatoes, turkey, stuffing and much more!

3/4 C water
1 tsp active dry yeast
1 tsp honey
1 3/4 C all purpose flour
1 1/2 tsp salt
2-3 tsp olive oil
2 C mashed potatoes
1 C stuffing
1 1/2 C turkey (shredded)
1 C whole milk mozzarella (shredded)
1 C mild cheddar cheese (shredded)
1/4 C gravy (room temperature)

Steps:

  • Heat water to 115°F. Dissolve yeast and honey in warm water. Let sit for 5-10 minutes to proof.
  • In the bowl of a stand mixer, with dough hook attachment, add flour and salt. Turn mixer on low, slowly add yeast mixture. Increase mixer speed. Add olive oil when dough is just beginning to pull together. Transfer to a large greased bowl. Cover and let rise in a warm location until doubled in size, roughly 60-90 minutes.
  • Preheat oven to 500°F.
  • Grease two 9-inch round cake pans, or a large baking sheet. Stretch and shape dough to the cake pan, rising just slightly up the edge of the pan.
  • Microwave mashed potatoes to soften. Divide potatoes in half. Add by the spoonful to prepared dough. Gently spread out into an even layer, being careful not to rip the dough. Add stuffing crumbles and shredded turkey to the mashed potatoes. Top off with mozzarella and cheddar cheese. Sprinkle with ground black pepper, if desired.
  • Bake for 15-20 minutes or until desired crispness is reached and edges are golden.
  • Slice and serve warm with optional gravy drizzle.
  • Best reheated in the oven at 425°F for 6-8 minutes.

8 ounces prepared pizza dough, room temperature
3 tablespoons olive oil, divided
1 1/2 cups shredded cooked turkey or rotisserie chicken
1/4 cup cranberry sauce, plus more for serving (optional)
1 cup mashed white or sweet potatoes
Kosher salt, freshly ground black pepper
2 cups shredded mozzarella, cheddar, and/or Fontina cheese (about 6 ounces), divided
1 cup cooked vegetables, such as green beans, Brussels sprouts, sautéed greens, carrots, squash, or mushrooms
1/2 cup sliced red onion
Pinch crushed red pepper flakes (optional)
Special Equipment
A 12-inch cast-iron skillet

Steps:

  • Place a rack in upper third of oven; preheat to 500°F. On a lightly floured surface, roll dough to a 12" round (if dough springs back, cover with plastic and let rest 5 minutes, then roll again, resting as needed).
  • Heat 2 Tbsp. oil in a cast-iron skillet over medium-high until very hot. Carefully transfer dough to skillet. Brush top of dough with remaining 1 Tbsp. oil. Cook, shaking pan occasionally and turning pan to avoid hot spots, until bottom of dough is golden brown and crispy, 3-4 minutes.
  • Meanwhile, toss turkey with 1/4 cup cranberry sauce, if using, in a medium bowl.
  • Remove skillet from heat. Using a large flat spatula, flip dough. Spread potatoes over dough, leaving a 3/4" border on all sides; season with salt and pepper. Top with 1 cup cheese, then turkey mixture, vegetables, and onion. Top with remaining 1 cup cheese and red pepper flakes, if using. Bake pizza until dough is golden brown and cheese is melted, 6-8 minutes.
  • Transfer pizza to a cutting board and cut into wedges. Serve with additional cranberry sauce alongside, if using.

2 -4 cups turkey, bite-size chunks

Steps:

  • Preheat oven to 350; grease a 13x9 pan.
  • Peel broccoli stems, cut into bite-size morsels; cut tops into bite-size pieces also.
  • In a medium saucepan with about a half-inch of water, steam-parboil broccoli in boiling water--just until broccoli is barely BRIGHT green; drain well, then pour into prepared pan.
  • Arrange the cut-up turkey (or chicken) over the broccoli.

⅔ cup warm water
¼ cup whole wheat flour
1 tablespoon kosher salt
1 ½ tablespoons olive oil
½ cup warm water
2 ½ cups whole wheat flour, plus more for dusting
olive oil, for greasing
semolina flour, for sprinkling
1 cup gravy
1 cup stuffing
1 ½ cups shredded turkey
1 cup shredded cheese, of your choice
5 sprigs fresh rosemary, optional
1 ½ cups cranberry sauce
water, as needed
1 cup mashed sweet potato
1 cup brussel sprout, cooked
⅓ cup goat cheese

Steps:

  • Make the sponge: Stir together the yeast, honey or maple syrup, water, and flour together in a medium bowl. Some lumps are okay. Cover with a kitchen towel and let sit in a warm place for 20-30 minutes, until foamy and expanded in volume.
  • To finish the dough, add the salt, olive oil, and warm water to the bowl with the sponge. Add the flour in ½-cup (60 g) increments, stirring to incorporate each addition before adding the next, until the dough comes together enough to knead with your hands. Knead in the bowl briefly, until most of the flour in the bowl is incorporated.
  • Turn the dough out onto a floured surface and continue kneading, adding more flour as needed, until it is soft, pliable, and does not stick to your hands, 8-10 minutes.

  • For a cranberry sauce, Brussels sprout, and sweet potato pizza, add the cranberry sauce to a blender with a bit of water and puree until smooth.
  • Spread over the pizza dough and top with dollops of mashed sweet potato, the Brussels sprouts, and spoonfuls of the goat cheese.
  • Bake the pizza for 12-15 minutes, until the dough is crispy and golden brown and the toppings are warmed through.
