1/2 cup chopped fresh mushrooms
1/4 cup chopped green onions (4 medium)
1/4 cup finely chopped red bell pepper (1/4 medium)
2 tablespoons reduced-sodium soy sauce
1 teaspoon chopped garlic in water (from 4.5-oz jar)
1 tablespoon teriyaki baste and glaze (from 12-oz bottle)

Steps:

  • Heat closed contact grill for 5 minutes.
  • Meanwhile, in large bowl, mix all ingredients except teriyaki baste and glaze. Shape mixture into 6 patties, 1/2 inch thick.
  • When grill is heated, place patties on bottom grill surface. Close grill; cook 8 to 10 minutes or until patties are no longer pink in center.
  • Spread 1/2 teaspoon teriyaki baste and glaze on each patty.

1 small carrot
1 small red onion, halved

1/4 cup panko (Japanese breadcrumbs)
1/4 cup hoisin sauce
1 tablespoon grated peeled ginger
4 teaspoons low-sodium soy sauce
3 teaspoons hot Asian chili sauce, such as sambal oelek
8 ounces white mushrooms, thinly sliced
2 teaspoons toasted sesame oil
Juice of 1 lime
4 whole-wheat sesame hamburger buns

Steps:

  • Preheat the oven to 375 degrees F. Mist a baking sheet with cooking spray. Grate the carrot and 1/2 onion into a large bowl. Add the chicken, panko, 2 tablespoons hoisin sauce, the ginger, 3 teaspoons soy sauce and 1 teaspoon sambal oelek and mix until combined. Shape the chicken mixture into 4 patties and place on the prepared baking sheet. Bake until cooked through, about 20 minutes. Meanwhile, thinly slice the remaining 1/2 onion. 1 (3-inch) fresh serrano or jalapeño chile, finely chopped, including seeds
1 teaspoon water
4 teaspoons Asian fish sauce, divided
1 1/2 pounds ground turkey (dark meat only)
1/4 cup fresh lime juice
1/4 cup vegetable oil
1/2 teaspoon sugar
1/2 teaspoon dried hot red-pepper flakes
4 kaiser rolls, split and grilled
2 cups mixed fresh mint, basil, and cilantro leaves

Steps:
