1/2 cup butter, melted
2 cans (29 ounces each) sliced peaches
1 package (15.6 ounces) cranberry-orange quick bread mix
1 large egg, room temperature
2 tablespoons grated orange zest, divided
1/3 cup dried cranberries
1/3 cup sugar

Steps:

  • Preheat oven to 375°. Pour butter into a 13x9-in. baking dish. Drain peaches, reserving 1 cup juice. Pat peaches dry and set aside. In a large bowl, combine quick bread mix, egg, 1 tablespoon orange zest and reserved peach juice. , Drop batter by tablespoonfuls over butter, spreading slightly. Arrange peaches over top; sprinkle with cranberries. Combine sugar and remaining orange zest; sprinkle over peaches. Bake until golden brown, 45-50 minutes. Serve warm.

1 can (14 ounces) whole-berry cranberry sauce
1/2 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup crumbled oatmeal or sugar cookies
1/4 cup chopped walnuts
1/4 cup butter, melted

Steps:

  • Arrange peaches in a greased shallow 2-qt. baking dish. Stir cranberry sauce and pour over peaches. In a small bowl, combine the brown sugar, flour, cookie crumbs and nuts; sprinkle over fruit. Drizzle with butter. Bake, uncovered, at 400° for 18-20 minutes or until bubbly.

1 (16 ounce) can whole berry cranberry sauce
1 (18 1/4 ounce) package yellow cake mix, without pudding
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup butter or 1/2 cup margarine
1/2 cup chopped pecans

Steps:

  • In a bowl, combine the pie filling and cranberry sauce; transfer to a lightly greased 13x9 inch baking dish; set aside.
  • In another bowl, combine the cake mix and spices; cut in the butter using a pastry blender until mixture is crumbly; stir in pecans.
  • Sprinkle mixture over fruit.
  • Bake in a 350° oven for 45 minutes.
  • Serve warm with ice cream.

1 (15 5/8 ounce) package cranberry quick bread mix
1 egg
2 tablespoons orange zest, divided in half
1/3 cup dried cranberries (I prefer Craisins)
1/3 cup sugar

Steps:

  • Pour butter into 9X13 pan.
  • Drain peaches, reserving 1 cup juice.
  • Pat peaches dry and set aside.
  • In large bowl, combine quick bread mix, egg, 1 Tbl of orange peel, and reserved peach juice.
  • Drop batter by tablespoons over butter, spreading slightly.
  • Arrange peaches over top.
  • Sprinkle with cranberries.
  • Combine sugar and remaining orange peel and sprinkle over peaches.
  • Bake 375 degrees for 45-50 minutes or until golden brown.
  • Serve warm.

3/4 cup sugar
1 cup fresh or frozen cranberries
1 lemon, cut into wedges
1/2 orange, sliced into thin rounds
1 1/2 cups London dry gin (such as Beefeater or Tanqueray)
1/2 cup plus 1 tablespoon off-dry Sherry (such as Lustau East India Solera)
6 mint sprigs

Steps:

  • Bring sugar and 3/4 cup water to a boil in a medium saucepan; stir until sugar is dissolved. Remove from heat. Pour off all but 1 cup simple syrup; refrigerate remaining syrup for another use.
  • Heat syrup in pan almost to a boil; reduce heat to medium. Add cranberries and simmer until they just begin to burst, 2-3 minutes. Let cool in syrup.
  • Place 2 tablespoons drained cranberries and 6 tablespoons cranberry syrup in a large pitcher. Add lemon wedges and orange slices. Using a muddler or wooden spoon, vigorously mash fruit. Stir in gin and Sherry. Let steep for 5 minutes.
  • Strain into a medium pitcher. Fill 3 glasses with crushed ice. Pour half of mixture into a cocktail shaker. Fill with ice; shake vigorously for 10 seconds. Strain into prepared glasses, then mound with more crushed ice. Garnish each with a mint sprig and 3 cranberries. Repeat to make 3 more cocktails.

3 cups fresh cranberries
1 1/2 cups sugar, divided
1/2 cup chopped walnuts or 1/2 cup pecans
2 eggs
3/4 cup all-purpose flour
1/2 cup butter, softened and cut into pieces

Steps:

  • Preheat oven to 325°F Coat a 9" deep-dish pie plate with nonstick cooking spray then spread cranberries over the bottom. Sprinkle with 3/4 cup sugar and the walnuts; stir with a spoon until evenly combined then flatten mixture with the spoon.
  • In a large bowl, beat eggs until fluffy. Gradually add remaining 3/4 cup sugar then gradually add in the flour, mixing well. Slowly beat in butter until thoroughly combined and smooth then spread batter over cranberries.
  • Bake 55 minutes, or until entire crust is brown. Serve hot or cold.

  • Preheat the oven to 325 degrees F (165 degrees C). Spray an 8-inch baking dish with cooking spray.
  • Spread cranberries in the prepared baking dish and sprinkle with 1/4 cup sugar.
  • Stir together remaining 1 cup sugar, flour, and melted butter in a bowl. Whisk eggs together in a separate bowl and stir into sugar-flour mixture until smooth. Pour over cranberries in the baking dish.
