ROASTED SAUSAGES, PEPPERS, AND ONIONS AND CHEESY BREAD WITH BLACK PEPPER

- Preheat oven to 425 degrees F.
- Place sausage rings on a baking sheet and liberally drizzle extra-virgin olive oil down over them. Place in hot oven and roast until casings are crisp and juices run clear, somewhere between 15 and 20 minutes. Remove from oven to rest sausages; switch on broiler.
- While sausages roast, heat a skillet over medium heat with 3 tablespoons extra-virgin olive oil and sliced garlic. Simmer garlic in extra-virgin olive oil 2 to 3 minutes then add peppers and onions. Turn the heat up a notch, and cook until the vegetables are tender but the peppers still hold strong color, 5 to 6 minutes. Add thinned tomato sauce, salt, and pepper and reduce. Turn heat back to low and hold the veggies until the sausage comes out of the oven, a couple of minutes.
- Toast the split bread, remove from oven, rub with cracked garlic, liberally drizzle with extra-virgin olive oil, and cover with cheese and lots of black pepper. Return to the broiler to brown cheese, 1 minute. Scatter parsley over the bread.
- Cut bread into chunks and pile with peppers and onions then sausages. The bread will soak in the juices as you work through the sausage, peppers and onions.
CHEESY SAUSAGE LOAF
My bread machine is such a time-saver, particularly where this savory entree is concerned. Stuffed with pork sausage and cheese, it's a favorite with my teenage granddaughters. They even take the left-overs for lunch.

- In bread machine pan, place the first six ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a lightly floured surface. Roll into a 16-in. x 10-in. rectangle. Cover with plastic wrap; let rest 10 minutes., Meanwhile, combine the sausage, cheeses, garlic powder and pepper. Spread evenly over dough to within 1/2 in. of edges. Roll up jelly-roll style; starting with a long side; pinch seam to seal and tuck ends under. Place seam side down on a greased baking sheet. Cover and let rise in a warm place for 30 minutes. , Bake at 350° for 20 minutes. Brush with egg; bake 15-20 minutes longer or until lightly browned. Remove to a wire rack. Serve warm.

- Fill a large pot with lightly salted water, and bring to a rolling boil over high heat. Stir in the shell pasta, and return to a boil. Cook, stirring occasionally, until cooked through but still firm to the bite, about 13 minutes. Drain well.
- While the pasta is cooking, heat the vegetable oil in a large skillet over medium-high heat. Cook onion, orange pepper, and garlic in oil until tender, about 5 minutes. Stir the crumbled Italian sausage into the vegetables in the skillet; cook and stir until meat is browned and cooked through, about 8 minutes. Stir in the undrained tomatoes and the heavy cream. Turn the heat to medium-low, and allow the sauce to cook until thick, about 5 additional minutes.
- Mix pasta with the sausage cream sauce, stir in the Parmesan cheese, and serve. Garnish with chopped fresh parsley.

- In skillet,on medium heat,brown sausage.
- Drain,saving 1 TB of drippings.

- Cook sausages according to package directions. I cooked it over medium heat on each side until a nice golden brown, then I cut the sausages into 1/2 inch slices and then cooked them again over medium heat until cooked all the way through.
- Using the same pan, add peppers and onion and season with salt and pepper, to taste. Cook for just a few minutes, 3-4 minutes. You do not want to over cook these! It will make the bread soggy.
- Cut and remove the center of the loaf of bread. Place loaf of bread on a baking sheet and add 5 slices of provolone cheese to the bottom of the loaf. Top with sausages, onions and peppers. Cover with foil, place in the oven and bake 20 minutes.
