CHICKEN WINGS WITH THAI SWEET & HOT CHILI GLAZE
This came across my email today from a grilling website. Think it sounds delightful and easy too...so I am posting it for the Zaar World Tour to Asia. Give it a try!

Steps:
- Make the glaze, in a small bowl, whisk the sauces, sesame oil and ginger together.
- Trim excess skin from the edges of the wings.
- Lightly brush or spray with the oil, and season with salt and pepper to taste.
- Grill the chicken wings over Direct Medium heat until the skin begins to crisp, about 10 minutes, turning once or twice.
- Brush the wings with the glaze and continue to grill until the meat is no longer pink at the bone, 8 to 10 minutes, turning and brushing with the glaze 2 or 3 times.
- Serve warm.

- Preheat oven to 400°F (200°C). Lightly spray a large baking tray with cooking oil spray; set aside.
- To prepare the glaze, combine all of the glaze ingredients in a small bowl or jug; whisk until combined. Pour half of the sauce into a small saucepan and reserve for later.
- Trim any excess skin off of the wing edges. Season with salt to taste. Place the wings on the prepared baking tray; pour the sauce over the wings and toss to coat evenly. Arrange the wings in a single layer and bake for 10-15 minutes.
- While the wings are in the oven, bring the remaining glaze to a simmer on low-medium heat, until the sauce bubbles up and begins to thicken (it should take about 5 minutes).
- Once the chicken wings are cooked on the one side, rotate each piece and bake again for an extra 10 minutes. Change oven settings to grill (or broil) on a medium-high heat setting; baste wings with half of the ready-made glaze and allow to crisp up for a further 5 minutes. They will look golden and shiny from the glaze.
- Once the wings are golden, remove them from the oven and baste again with glaze. Garnish with the cilantro, onion slices, chilli flakes and sprinkle with salt (if needed). Serve with any remaining glaze for dipping!

- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl combine the broth, sugar, fish sauce, vinegar, cornstarch and paprika. Set aside.
- In a hot wok or skillet add the oil, garlic and chiles. Stir fry over high heat until the garlic turns slightly golden, about 4 minutes. Add the broth mixture and stir until it boils and is reduced to about 1 1/4 cups, about 10 to 15 minutes. Keep warm.
- Place the chicken wings in a 10x15 inch baking dish and bake, uncovered, in the preheated oven for 60 to 70 minutes (until browned and crisp). Turn occasionally. Drain off the fat. With a slotted spoon, transfer the wings to a platter and pour the garlic sauce mixture over them, mixing well. Garnish with red bell pepper strips if desired.

- Cut off the wings tips, reserving them for another use such as stock if desired, and halve the wings at the joint. In a heavy-duty resealable plastic bag toss the wings with the garlic paste and the oil to coat them well and let them marinate, chilled, for at least 6 hours or overnight. Drain the wings and pat them dry. Arrange the wings, skin side up, on the oiled rack of a broiler pan, sprinkle them with salt and pepper to taste, and broil them under a preheated broiler about 4 inches from the heat for 8 to 10 minutes, or until they are golden brown. Turn the wings, sprinkle them with salt and pepper to taste, and broil them for 5 to 8 minutes more, or until they are golden. While the wings are broiling, in a saucepan stir together the red pepper flakes, the corn syrup, and the vinegar, bring the liquid to a boil, stirring, and transfer it to a bowl. Serve the wings with the sauce.

- Add the chicken wings, lemongrass, cilantro, garlic, pepper, soy sauce, fish sauce, low-sodium soy sauce, and palm sugar to a large zip-top bag. Seal the bag and massage the chicken to coat. Marinate in the refrigerator for at least 2 hours, up to overnight.
- Preheat the oven to 350°F (180°C). Place your oven rack on the upper third of the oven and place a metal cooling rack inside a rimmed baking sheet.
- Arrange the marinated chicken wings on the rack. Transfer to the oven and bake for 15 minutes, until browned and the internal temperature reaches 165°F (75°C). Turn the oven to broil and broil the wings until the skin starts to char slightly, about 2 minutes. Transfer to a platter and serve immediately with sticky rice and crunchy vegetables.

A recipe I found on About.com for Thai recipes that I am posting for ZWT. Here is what is stated about the recipe: "This chicken wings recipe is very easy to make, and the taste is superb. Even your kids will go crazy for these chicken wings, which turn out naturally glazed with a garlicky and slightly sweet sauce. Barbecue them outdoors, or bake them in your oven - either way, they turn out fabulous. Chicken wings are always a popular choice for dinner, whether during the week or on long, hot summer weekends. Enjoy!"

- Mix all 'Marinade' ingredients together in a small bowl. Stir well to dissolve sugar.
- Place wings in a large bowl and pour sauce over. Stir well to coat chicken with sauce. Allow wings to marinate 10 minutes or longer while you heat up the grill (up to 24 hours).
- Grill the wings, basting them once each side with some of the leftover marinade from the bottom of the bowl. OR cook them in your oven (see next instructions).
- To Cook Wings Indoors: Place wings in a baking dish and bake in a preheated oven at 350 degrees for 30 minutes. Then turn oven to "Broil" setting. Transfer wings to baking sheet and place wings on one of the higher racks in your oven. Watch the wings carefully, as they can easily burn. Turn them every 5 minutes for 15-20 minutes, or until glossy and browned. Baste them once with leftover marinade from the bottom of the bowl.
- Serve the wings as is, or with rice on the side. ENJOY!

- Preheat oven to 400 degrees F (200 degrees C).
- Place chicken wings on a non-greased cookie sheet. Bake in the preheated oven for 45 minutes to 1 hour, turning once, until golden brown. Move to serving dish/platter.
- In a medium skillet saute garlic and jalapeno peppers in olive oil until soft. Add chicken broth, fish sauce, paprika and sugar. Add cornstarch and let thicken. Stir all together and pour over crispy chicken wings. Enjoy!

GRILLED THAI CHICKEN WINGS RECIPE

- Gather the ingredients.
- Using a sharp chef's knife, cut the chicken wings: Place the wing on a cutting board, so the inside is facing you. Stretch out the wing and make a cut between the wingette and the wingtip, and another cut at the joint between the drumette and the wingette. Discard the wingtips (or reserve them to make stock ).
- In a medium bowl, combine all of the other ingredients. Mix well.
- Place the wings in a plastic zipper bag. Reserve 1/4 cup of the marinade for basting and pour the remainder over the wings. Seal the bag and mix the contents well. Refrigerate for 4 to 6 hours or overnight.
- Preheat the grill for medium heat (about 350 F). Remove the wings from the bag.
- Place the wings on the grill. Baste liberally with the reserved marinade. Cook for 20 minutes, turn and coat with marinade again. Cook for another 20 to 30 minutes, until the juices run clear and the meat reaches an internal temperature of 165 F. Discard any remaining marinade.
- Garnish with chopped scallion greens. Serve and enjoy.
